My daughter's first birthday is coming up in a week (wow!), and I was hoping to get some suggestions about low-cost activities, food, etc. I am especially looking for ideas on cakes or cupcakes that the kiddos would enjoy that aren't loaded with sugar. Has anyone gotten a cake or cupcakes from somewhere they would recommend? Thanks!!

I haven't tried both ideas together, but usually you can cut the sugar in a recipe in half without really noticing. I do it in cookies all the time. Also, you can use applesauce instead of oil in a cake. It's really yummy, too. I don't see why you couldn't do both together since the applesauce would add some sweetness. The other option is Splenda. I personally don't care for anything artificial. I just do without the sugar. Congratulations! Have fun!

I have the cutest cake that looks like a bathtub (blue jello in the middle) and is super easy (and looks like a lot of work)! I will be doing that again for my daugther's 1 yr bday this year. If you are interested, I can scan in and send to you... Just got it out of a magazine...

Have you thought about doing carrot cake or zucchini cake? My kids love both and it at least has some vegtables in it. I did cupcakes for my sons first birthday, it worked great since they were already small portions. I know someone mentioned to avoid dark frosting colors - I like the frosting color spray - you can use dark colors and it does not stain or have a weird taste like some dark colors. If you are looking for cake or cupcake ideas I would reccomend looking at www.wilton.com. They have some great ideas. Good Luck!

Hi,

I'm not sure about cutting all the sugers but my recommedation is don't do dark colored icing, it stains everything.

Hi Jackie,

What fun! I am mostly just repeating here. For my daughter's 1st I made banana bread "cupcakes" (really just banana bread made into muffins, but called them cupcakes.

Lately, I've been making carrot cake from scratch and reducing the sugar by a few tablespoons (hey, I have to eat them too and I want them to taste good!) and using applesauce instead of oil. I serve these even to adults, and get requests for them constantly. I do make homemade cream cheese frosting with reduced fat cream cheese and powdered sugar (I leave out butter altogether). Instead of spreading it on I use a pastry bag and just make little designs so there is hardly any frosting on each.
