My mom does this, but she changes the water a few times. She said that it helps who eats the beans not have so much flatulence if you change the water a few times, LOL!

First can you over soak beans? I put my small red beans to soak about 10 last night. Well my husband got up with the kiddos this morning and let me sleep, which was so awesome, but I didn't drain my beans until about 10, so they soaked about 12hrs. I am wondering if this will affect their flavor and how they cook? I went ahead and started cooking them, so I hope the are still good? Also, since I got up later than I planned, I didn't get them on early, so you know how you can cook food in the crock pot usually like 8 hrs low or 4hrs on high? Does that hold true with beans? I was actually thinking to let them cook a couple hrs on high, the switch thm to low for a few hrs, just haven't ever done that wit beans before. I'm not sure about the over soaking part, I really don't even soak my beans (sometimes I'll do the quick method). However, I do cook pinto beans in the crock pot regularly and I always cook on high. They're usually done in 4 or 5 hours. Good luck!
You can soak them a long long time without any problems.
If you soaked them long enough for them to sprout or ferment (this might take several days), then yeah - too long.
But 12 hrs is fine.
Remember to drain and rinse them, then use them in your recipe.
They'll be fine. Don't add salt, it prevents them from softening. Actually they are pretty forgiving, and switching from low to high heat won't affect the quality :)
The beans are fine having soaked that long. I usually soak mine abourt 12 hours.
I cook them in the crock pot all the time. High long enough to come to a boil, then low for several hours.
Add spices close to the end of the cooking time to keep them from breaking down and losing flavor.
