For a change a Mexican Lasagna is easy if you use the lasagna noodles that cook in the oven...Just layer them with salsa, cheese, and taco meat. The final layer should be cheese. Cook just like you would any other lasagna.
I have a couple of friends that just had babies. I'd like to make casseroles for them. Does anyone have any easy, quick favorite receipes?

1 lb ground beef or ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2-3 cups shredded taco cheese or cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up
1. Brown ground meat/turkey and onion; drain.
2. Add taco seasoning and stir in refried beans.
3. Mix soup and sour cream in a separate bowl.
4. Spread 1/2 sour cream mixture in the bottom of a casserole dish.
5. Tear up 3 tortillas and spread over sour cream mixture.
6. Put 1/2 the meat bean mixture over that.
7. Add a layer of cheese.
8. You could put some hot sauce on this now.
9. Repeat the layers.
10. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

I made this last year for my son's teacher's B-day at school (all the teachers attend) and every teacher wanted a copy of the recipe. It is enchiladas baked like a casserole---SO EASY!!
Green Chili Enchiladas
1 can cream of chicken soup
1 can chopped green chilis
8 oz. sour cream
Shredded cheese
1 lb. cooked chicken (boneless)
6 flour tortillas
Roll desired amount of cooked chicken and shredded cheese into the tortillas. Lay side by side in 13x9 inch baking dish. Combine soup, sour cream and green chilis. Pour mixture evenly over the top of the tortillas and sprinkle desired amount of shredded cheese. Bake for about 30 minutes on 350 degrees. This will heat the enchiladas throughout and melt the cheese on top. The chicken must be fully cooked prior to being rolled into the tortillas. Canned chicken works well. You can also substitute chopped jalapenos for the green chilis if you want the enchiladas spicy. (no jalapenos for nursing moms!) :)
I have a really simple one that my family loves. It's 3 cups of diced ham, 8 oz. of macaroni (cooked), 1-8 oz. container of sour cream, and 12 oz. of swiss cheese.
Mix all ingredients together (keep a little of the cheese to put on top if you want) and bake for 30 minutes @ 350 degrees.
I have found that getting those ham steaks and chopping it in the food processor works wonderfully.

There are so many good ones out there...but here are a few easy yummy recipes:
Chicken and Rice Casserole
4 boneless chicken breasts
1 Tbsp. olive oil
2 packets 5 minute rice- cooked according to directions
1 packet Lipton dried onion soup
1 can cream of mushroom soup
1 pint mushrooms- sliced
salt
pepper
Preheat oven to 350.
Heat oil in skillet.
Season uncooked chicken breasts with salt and pepper.
Sear chicken over medium high heat for about 2 minutes on each side, or until becoming golden brown.
In bowl mix cooked rice, both soups, and mushrooms.
Pour rice into bottom of 9x9 or 9x12 casserole dish.
Lay seared chicken over top and bake for 30-40 minutes or until chicken is cooked through.
Serve with steamed brocolli or other veggies.
Serves 4.
Chinese Chicken Casserole
1 rotissery chicken, breasts removed and cubed
1 Tbsp. olive oil
1/2 small onion
1 pint mushrooms-sliced
1 can sliced water chestnuts
1 can cream of mushroom soup
1 can cream of celery soup
1-2 cups dried chow mein noodles
1 cup parmesan cheese
Preheat oven to 350.
Sautee onion and mushroom in olive oil until tender.
In large bowl mix together sauteed veggies, chicken, water chestnuts, both soups and chow mein noodles.
Pour into 9x12 casserole dish, cover top with parmesan cheese.
Bake at 350 for 35 minutes (or until edges are bubbly).
Change oven to broil and broil cheese for 1 minute or until golden brown. Serve with bread.
Crock Pot Taco Soup
1 lb. ground turkey (or beef) browned and drained
2 cans stewed tomatoes
1 can corn- drained
1 can black beans- drained
1 can ranch style beans
1 can red kidney beans- drained
1 can original rotel with diced green chiles
1.5 packets of taco seasoning (heat level to your liking)
Tortilla chips or fritos
sour cream and grated cheddar for garnish
Combine first 8 ingredients in crock pot, simmer on low for 2-3 hours.
Top with sour cream and cheese and serve with chips.
I hope these help.
Lasagna is another good thing to make too.

Italian Crescent Casserole
1 lb ground beef
1/4 c chopped onion
1 c spaghetti sauce
1 1/2 c shredded mozzarella or monterey jack cheese
1/2 c sour cream
1 8oz crescent dinner rolls
1/3 c pamesan cheese
2 Tbls butter melted
Brown beef and onion. Drain, stir in spaghetti sauce, heat thoroughly and put in 9X13 pan.
Stir together mozzarella cheese and sour cream and dot on top of meat mixture.
Unroll dough over cheese mixture. Spread melted marg. over dough.
Bake at 375 for 18 to 25 min or until deep golden brown.
You can mix 1/3 c parmesan cheese and marg. and spread on top but we like it better with just butter.
Here is my favorite!
2 filets of any white fish (tilipia, grouper, I have even used Salmon and it works great too)
1 lb salad shrimp (you can find this frozen)
1 lb of scallops
1 can of progresso clam soup
Italian bread crumbs
spray bottom of baking dish with olive oil
place the two fillets on the bottom
spread the shrimp and scallops on top
pour the progresso soup over everything
sprinkle the top with bread crumbs
bake at 350 for about 45 minutes.
This dish needs to be eaten immediately.
One of my family favorites is Tater Tot casserole. Very easy to make.
1lb of ground beef
1 can of cream of chicken
1 can of cream of mushroom
1 bag of tater tots
salt and pepper
shredded cheese
pre heat oven to 350
I use a square 8 X 8 glass pan
brown the meat
combine the creams and get them warm in a pot
when the meat is brown, combine the meat with the creams add salt and pepper
In the baking dish line the tater tots in a row on the bottom of the dish,
pour the meat and creams ontop of the tater tots and do the same with the tater tots again, line them up on top of the creams and meat. Put in oven for 25mins pull out and sprinkle with the cheese and let cook for another 5mins.
My family loves this when I cook it and my 5yr actually will eat it all. If you make this hope it will work out for you.

2 lbs hamburger
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup celery chopped
1 cup oinion chopped
1 cup minute rice uncooked
1 1/2 cup water
1/4 cup soysauce
add pepper to taste
1 can fried french onions
cook and drain meat mix next 8 ingredients together place in casserole dish at 350 degrees for 30 minutes covered, uncover and cook 20 minutes. Add french onions and cook 10 minutes.
It is so easy and wonderful tasting. Hope you enjoy.

Green Bean & Tater Tot Casserole
1 lb of ground Turkey or beef
2 cans of green beans
2 cans of Cream of Mushroom soup
1 bag frozen tater tots
brown meat, put in oven proof casserole dish, add strained green beans, add soup w/a little bit of milk, put tater tots on top, put in oven on 350 for 30 minutes.
Wild rice & sausage casserole
2 boxes of instant wild rice
1 lb of breakfast sausage
2 cans of cream of mushroom soup
small package of almonds (optional)
1 small can of mushrooms (optional)
brown sausage. in separate bowl mix all other ingrediants - (I like to sautee the mushrooms in olive oil first, but not necessary) add sausage, cook in oven on 350 for 45 minutes
I have several easy things to do..
One is to get Barbeque Pork Loin at the store and cook it in a crock pot on Low all day with a jar of BBQ sauce. Pull it apart after several hours of cooking and you eat it on hamburger buns for Pulled Pork Sandwiches. You can serve with Mac N Cheese which all kids like, Salad, Corn on the Cob or any other veggie.
Another yummy recipe is Dorito Enchilada Casserole
Brown 1 lb hamburger meat and drain. Add 1 can of Mild Enchilada Sauce and 1 can of Cream of Chicken and Mushroom soup and mix together in pan. Then crunch of Doritos and layer them in the bottom of your dish and then add sauce,grated cheese, doritos, Sauce, grated cheese and top with doritos Cook at 350 degrees for 30 minutes.
here's a good one that you can make ahead of time and freeze.
Pizza Pasta Casserole
1 lb hamburger meat
bag of noodles (i like the spiral kind)
1 large jar of spaghetti sauce
bag of shredded mozerella cheese
package of pepperoni
in a 9x13 pan (glass, disposable or whatever) add hamburger meat, noodle, spaghetti sauce. I usually mix it up in the pan just to get all the 'stuff' spread out equally. top with mozerella cheese and then cover in pepperoni. pop in the oven at 350 and cook until the cheese is melted. sometimes i'll also add some cheese to the meat/noodle/sauce mix just to have some extra cheese in there. if you want to freeze this ahead of time, do everything but pop it in the oven.

I have a really easy casserole called Chicken Poppyseed Casserole that I make for all of friends who are new moms. It is always a big hit. Preheat the oven to 350. In a casserole dish, combine 1 can cream of celery, 1 can cream of mushroom, 8 oz. sour cream, and 3 cubed pre-cooked chicken breasts(I usually boil them just before preparing the casserole). Then in a seperate bowl, combine 2 sleeves of crumbled ritz crackers, 1 stick melted butter, and 2 tablespoons of poppyseeds. Pour on top of chicken mixture and bake for 30 minutes. It is so easy and very tasty!! Hope that helps.
Hi M.. When a few of my friends had babies, I went about as easy as possible. I have kids of my own, and really didn't have a lot of time. I highly recommend the Lemon Chicken "Supper Bakes" from Campbells. All you do is add the rice, raw boneless chicken breast tenders, water, and butter in a 13x9 oven dish. You use their seasoning packages and a sauce that comes with it, and in 30 minutes, you have one of the best chicken and rice casseroles that I have ever tasted. They have even asked for the recipe. I told the Supper Bakes in the boxed dinner isle. No kidding, super fast and super yummy!
This is my favorite right nwo! Leftovers microwave really well.
Poppy Seed Chicken
4 Chicken breasts, cooked and shredded (I do mine from frozen in the
crockpot on low about 4-6 hours)
1/4 cup water
2 cans cream of chicken soup (also good with cheddar cheese type soups)
8 ounces shredded Monterey Jack Cheese
1 cup sour cream (low fat or fat free works fine)
3 Tablespoons Poppy Seeds (I use more-probably 4-5 tbsps)
1 stick of butter (I only use 1/2 stick)
2 rolls of Ritz crackers, crushed (I only use 1 stick of crackers)
1 package spaghetti fully cooked and drained
Grease 9 by 13 pan. In a pot combine chicken, soup, and water over medium
heat and stir to remove lumps. Remove from heat and add sour cream.
Stir in cheese and 1/2 the poppy seeds. Pour over pasta in large bowl and
combine. Pour into prepared pan. Mix the rest of the poppy seeds, butter
and
crushed Ritz crackers. Sprinkle over chicken mixture. Bake
at 350 degrees for about 30 minutes.

I really like Tator Tot Casserole. It is super easy and quick to make. Brown 1 lb. of ground beef, drain, and put in a casserole dish. Pour a can of green beans, drained, over the meat. In a separate bowl, combine 1 can of cream of celery or mushroom and 1/2 of can of milk; mix well, and then pour over green beans. Top it off with frozen tator tots, enough to cover the top. Pop it in the 350 degree oven for around 30 minutes, take it out and cover the top with grated cheese, then put it back in until cheese is melted. I have doubled this recipe when feeding a family of 11, and everyone loved it!! Hope that helps!
24 hour omelette
8 slices white bread [sour dough is good]
1 lb chedder cheese [or your favorite]
8 eggs
3/4 t. salt
3 c. milk [if you want it richer use half and half]
3/4 t. dry mustard [or dill weed]
dash of cayenne pepper
green onions
fresh mushrooms
2 c. chopped cooked ham [or sausage links chopped]
Butter bread and cut into 1' cubes ..place in buttered 9x13
unch pan. sprinkle grated cheese over cubes along with meat.
top with layer of green onions and fresh mushrooms
Beat eggs with milk and spices and pojur over.
Refrigerate over night [minimum 6 hours]
Bake covered at 350 degrees for 1 hour. Uncover to brown about 5 minutes. Serves about 8...great for a brunch

This isn't really a casserole, but easy and fun. I've made it for many of our new parents in our church group. It's been a hit. Plus, my kids love it, too.
Chicken Pot Pie - frozen deep dish pie shell (comes with 2), can of mixed veggies, can of cooked chicken (found near the tuna), pick 1 can of soup (your choice depending on how spicy you like) (cr. of chicken, cr. of celery, sw pepper jack, ranchero tomato, etc), 1/2 pkg. of cream cheese (can do a whole, but very creamy pie), and if you want to be a sneaky chef, add small can of baby food mixed veggies to get more veggies in your family.
Mix all ingredients, except shell. Add to first pie shell. Re-shape second pie shell, and place on top. Vent to top, and cook at 350 for about 45-60 minutes, until top is golden.
This one's really easy bc it uses all cooked ingredients. One comment I just wanted to throw out, is that when people cooked for me after the birth of my child, since I was breastfeeding, the tomato-based foods seemed to really upset my little one, so if your friend is breastfeeding, you might want to steer clear of those.
Base - stuffing, bread crumbs or whatever other bread-type food you have (I recently used mashed-up Triscuits)
Chicken (cooked – I used canned chicken)
Cream of Chicken (or Cream of Mushroom or Celery)
Rice (cooked – I used instant rice)
Whatever vegetables you want (I used a can of mixed vegetables)
Garlic to taste
Pepper to taste
Spread the base ingredient in the bottom of a 9x13 metal or glass baking pan. Add the chicken, vegetables and rice. Sprinkle the pepper and garlic as much or little as you would like and then pour the cream of chicken (mushroom/celery) over it all.
Bake at 350 for 45 minutes and enjoy!
Poppyseed Chicken Casserole is always a winner. Just google it to find the recipe.
Chicken spaghetti is one most people love.
A green salad and loaf of French bread make either one a good meal!

I make a casserole for mommies called "Chicken Cracker Casserole". It is one can of cream of chicken soup, one can of mushroom soup, one small sour cream, salt and pepper to taste, and either 2 cans of chicken breaast meat or cooked chicken breasts you saute on the stove. You mix all that together and then crush up a package of Ritz crackers and mix it in. Spread it in a throw-away casserole pan that you have sprayed with Pam. Crush up one more pack of Ritz and sprinkle on the top and then dot with butter. They can freeze it or bake it at 350 degrees until bubbly. It is easy, and it is easy to digest for nursing mommies and babies.
