Here is my favoriet Brisket recipe. My kids gobble up!!!

Buy a trimmed brisket about the size of a 9X13 pan.

Marinate overnight (turning) in a 9X13 pan with the following seasonings on both sides of the meat:
Onion Salt
Garlic Salt
Celery Salt
Bottle of Liquid Smoke

The next day add pepper and a bottle of Worcestershire Sauce. Cook 5 hours at 275 degrees covered with foil. (Cook with the fatty side up.)

B., you know Brisket is a rather tough cut of meat. But that's ok. You can work with it. You have the option of slow cooking it which will really tenderize the meat and can turn the brisket into a find brisket sandwich or what we call here in the south, chopped beef. Add your favorite bbq sauce to the chopped beef and it is yummy. You other options are to smoke or grill the brisket. You can even oven bake it. If smoked or grilled, use mesquite chips that have been soaked, will give the brisket a great flavor.

A good blend of spice and herbs will be brown sugar, salt, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and cumin if you like. Make a rub of this to put on the brisket. If you use the rub, wrap the brisket and let it sit in the refrigerator for several hours or overnight so the rub can really marry the meat.

If you slow cook, add in a wee bit of water and let the meat slow cook on high temp for at least 4 to 5 hours. Test for tenderness. If needing more cooking, let it go for another hour or so.

If grilling or smoking you are looking at approximately 6 hours of cooking time. You will position your chips in the smoker so they sit around the brisket, not exactly under them. Also put in a small throw away container that has water, you want that moisture for the smokey effect. Cover the smoker or grill and let the meat slowly smoke or grill.

Check the internal temperature of the meat. You want the internal temp to reach at least 140 to 145 degrees. Once you have removed the meat from the grill or smoker, let it sit for at least 20 minutes before slicing into it.

Don't be afraid to experiment with herbs and spices, those you like and try others. Another chip that can be used to grill with or smoke with is Apple Wood Chips. This gives the meats a wonderful smoked apple taste that is heavenly. Always soak any chips before placing in the grill or smoker.

J. P.S. I would love to know how your brisket turns out.

I can tell you how to make a brisket that make your mouth water.
The key is the more you cook it the better. I put my in the oven over night. Give it a good rub down with garlic, onion and what ever else seasons you like and pure a coke over it. It can be a reg or diet coke fill the pan 1/2 full and then put alum. foil over it and put it on about 200 and let it cook for 12 to 14 hours. And it is wonderful. Then you can add your bbq sauce if you want to.

Hey girl. I cook my brisket on low (250 degrees) covered for about 8+ hours - depends on how big it is. There is no need to flip it or anything. I just put a little bit of water in the bottom of the pan (maybe 1-2 cup or so), slice onions, and rub it with my seasoning and cook it that way. You can try "Carl's Sauce" it is just for briskets and etc. Everyone around here loves that sauce - the directions are on the bottle. Just give it a go - you cannot "mess" it up. Good luck!! Oh, my seasoning is a mixture of pepper, seasoned salt, garlic powder, lemon pepper, and chili powder. (Sorry for the long explination - I didn't know how much you cook and there is nothing worse than asking how to do something and people rattling off stuff like you're a pro when you don't have a clue!!) Good luck and let us know how it turns out!!

Hi B.,
I put lipton onion soup over the top just a little water to get it started and cover with a lid or foil. I cook mine over night starting at 300 for 1 hour then I turn it down to 250, its done when it falls apart which just depends on how big it is 10-12 hours. Next I take it out and let it cool enought to refrigerate until its cold. When it is I slice it and put it in a pan, throw barbeque sauce on and put it back in the oven for an hour. It sounds like a lot of work but its not bad you just have to plan ahead. It is something I cook for all of our big family events, I have even done it for a couple of church dinners they love it~!
Good luck, K. H

Can't help you with a diver, but I can with a brisket: Use 1 tsp onion salt, 1 tsp garlic salt, 1 tsp celery salt, 1/2 bottle of liquid smoke. Trim all fat from brisket and place in pan deep enough so foil placed over top of pan will not touch top of meat. Sprinkle with seasonings and pour liquid smoke all over brisket. Cover pan with foil, marinate overnight. Before roasting, sprinkle with salt, pepper, and 3 tablespoons Worcestershire. Cover tightly with foil and bake at 275 degrees for 5 hours. One half hour before end of baking time, remove foil and pour 1 cup barbecue sauce over meat. Makes 10-12 servings (using a 4-5 lb brisket). My family likes Head Country barbecue sauce - they also like for me to add McCormick Grill Mate Montreal Steak seasoning (add with the seasonings to marinate). After you make one brisket -you can tweak the receipe with a little more of 'this' or a little more of 'that' - depending on the tastes your famliy likes. ENJOY!!
