Here's a recipe for baked beans that have sausage in them. You can serve it as a side dish, which I've done at work functions & there's never any left. At home I usually serve it over rice for a main dish once or twice a month & my kids love it. Here's the recipe:

I also make a Mexican Chicken Soup that I created the recipe for a year or so ago & everyone loves it. You can definitely play with it to make it your own. Here's how I do it:
2 (26oz) containers chicken stock
2 (10 3/4oz) condensed cream of chicken soup
2 (10oz) Diced tomatoes with green chilies (Ro-Tel, mild)
1 (15.5 oz) can kidney beans, drained and rinsed
1 (15.5 oz) can black beans, drained and rinsed
1 (11 oz) can whole kernel sweet corn, drained
1 large sweet onion, chopped
1 rotisserie style chicken, meat removed
juice of 2 limes
Tortilla chips
Shredded taco cheese
Sour cream
1 lime, sectioned
Directions
Pour broth and condensed soup in large stock pot. Add tomatoes through lime juice and bring to a boil. Reduce heat to medium low setting and simmer 30 minutes. Crunch chips into bottom of a bowl and ladle soup over. Sprinkle with cheese and add sour cream and fresh lime wedge if desired.
