Yes, you can use LATCH with some boosters because yes, while there are weight limits to using LATCH with a CARSEAT (your car manual will tell you LATCH weight limits; for example a Toyato Sienna is 48lbs I do believe), it is different for a BOOSTER.
Why? Because the carseat is designed to hold the weight of the child and the actual carseat. When you use the BOOSTER w/ LATCH, you're 'just' LATCHing in the booster itself, which doesn't weigh all that much. The car's SEATBELT is what is holding in the child when you use a booster.
Next:a HIGH BACK BOOSTER is the way to go!

The Safeguard Go hybrid booster: requires a top tether, so you can NOT use it in a car older than about model year 2000, so you'll need be sure you have that in the car. It installs easiest with LATCH (cars newer than 2002), and it does have different rules, you CAN use LATCH the entire time, up to 60 pounds. This is because the seat weighs does not weigh very much and also because you have to use the top tether.
The Sunshine Kids Monterey: also uses LATCH & you can use it 'backless' later.It's on the bigger side so that makes it hard to move from car to car.
I think the The Britax Parkway SG also uses LATCH?
This one is easy to move from car to car. It also has a special clip that helps position the seatbelt so that the lapbelt won't ride up. It also can be used backless later.
The Clek Oobr uses LATCH & can be used backless later, too. It's very expensive.
For all mamas looking to use a BOOSTER:
PLEASE keep them in 5-pt harness CARSEATS for as long as possible!!!! This is the safest!
(T.'s kids are older, especially the 7 yr old, but her 5 yr olds might actually still fit in a carseat like the Britax Frontier. My SIX yr old is in a Britax Regent)
