We are stuck in a breakfast rut.......kiddos are tired of frozen waffles, cereal and instant oatmeal on school mornings. Does anyone have any ideas for quick, easy breakfasts? Or something that could be prepped the night before? Like most people, we are pressed for time on school mornings. (BTW we have a peanut allergy in the family.)

I buy whole wheat bagel thins, toast them and then melt a slice of cheese on top, I cut them into long strips and my kids love them. I'll also make a few dozen pancakes from scratch and throw in diced apples or blueberries and maybe some choc. chips, they'll eat the leftovers either heated up or cold & like to dip them in maple syrup.

You can make pancakes the night before then just pop them in the microwave. We do pancakes with (i know) peanut butter and bananas, fried apples, fresh blueberries and then a little wip cream. MMM we also do add in's to the batter like blueberries, choc. chips, bacon, strawberries.

We do french toast a lot. Just mix 2 eggs, 1/4 cup milk, a tablespoon of sugar and 1/2 teaspoon of salt, I also add just a sprinkle of cinnamon. While you are mixing, heat up a griddle. I always put a pat of butter down on the griddle to help the toast not stick and to add a little flavor. It sounds like it would take forever but if you get the griddle good and hot you can be in and out in 15 min.

My kids LOVE these breakfast cookies. They freeze well.

Breakfast Cookies
3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups uncooked quick-cooking oats, 1/4 cup skim milk, 1/2 cup raisins (or any other dried fruit you want to add), 1 tsp vanilla, 1 tsp cinnamon and 1 tbsp Splenda, sugar or other sweetener.
Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes and let cool.
Variations: If you add some chopped nuts, you have a grab and go breakfast that includes protein as well as fruits and grains. Dried cranberries are also a great addition if you don't care for raisins. Cardamom fans may want to substitute that spice for the cinnamon.

How about eggs? Takes just as long to scramble eggs as making oatmeal. Scram egg sandwiches (on toast), eggs w/ oatmeal, put on cheese if you want to spice it up;) you could also boil them-put them on when u wake and they will be done and cooled by the time you're dressed and out. Good luck!

You can make breakfast burritos the night before and then microwave for a quick meal in the morning. We usually wrap scrambled egg and cheese in a tortilla, sometimes bacon or sausage and top with tomatoes the morning of. If you wrap the bottoms in foil they are even good for on the go. Fruit and yogurt is a fave in our house and it takes no time at all. My kids also enjoy rice and grits in the morning. Instant grits take 30 seconds in the microwave. Whenever I cook rice for dinner I make extra and the kids warm the left overs for breakfast. Check out allrecipes.com they have a ton of yummy breakfast casserole recipes to try out. MOst of them you make the night before and then throw into the oven the morning of.

smoothies! when your fruit starts to soften, cut off any yucky bits, cut up the rest and freeze on a flat tray, then bag. pop several pieces (i love half a banana with a handful of berries) into the blender, add some yogurt, milk or coconut water, some protein powder and/or chocolate and shazzam! amazing easy healthy breakfast!

bagels and cream cheese, nutella and toast, paired with fresh cut fruit of course. I always make my daughters plates the night before, then heat up (if i need to) whatever it is in the toaster oven. I make batches of french toast, pancakes(blueberry, mango, banana,strawberry or plain) i freeze them in containers separated by wax paper. The night before while i am also packing her lunch for the next day i put one of these on a plate slice a little butter on it and put fruit next to it. I keep powdered sugar and agave nectar on the table so that she can add it herself. The menu can be any fruit imagineable, it all goes well with a whole grain bread product as a power breakfast.

My kids love, love, love egg & cheese burritos. I made scrambled eggs and place eggs & cheese inside a taco size flour tortilla and roll it up. The kids each eat two at least. It doesn't take as long as you would think...

My son loves yogurt with granola sprinkled on top. You can experiment with different flavors of yogurt. You can also put some frozen berries under the yogurt layer.

Smoothies are good (though they are really best made fresh)--1 cup yogurt or milk (you can do soy milk, etc) + 1 cup of frozen fruit (we like berries, mango, peach, or banana or a combo) + (optional) 2 heaping T instant pudding powder (we like vanilla, lemon or chocolate, depending on the fruit & yogurt varieties used).

Breakfast burritos are good. Or how about toasted cheese sandwiches or toast with jam or honey or cinnamon? Whole grain english muffins or bagels with cream cheese or peanut butter/almond butter/nutella?

Honestly, I'm all about a breakfast my kids can make for themselves (7 and 3), so we do breakfast bars. My son (7) likes peanut butter on a tortilla - which you could probably use nutella instead? It's a nut product too though, so I am not sure if you can. My son likes the granola type breakfast bars and my duaghter likes the fruit in the middle ones.

I make triple batches of pancakes and french toast. Let them cool completely and then stick in the large freezer bags. They freeze great and 2-3 pieces takes about 1-2 minutes to heat up in the microwave. You can also put the frozen french toast in the toaster (I like it that way but husband prefers microwave). You can make oatmeal overnight in the crockpot, make steel cut oats with apple juice instead of water it's really good. Mine are huge fruit eaters to they eat any kind of fruit in the morning. They also love yogurt. Raison toast is great too. Eggs are easy, the microwave okay too if you make a batch the night before but they don't take that long so just depends on your time. The other thing that freezes well is muffins so I make batches of those and/or breakfast "cookies" (basically cereal bars without all the bad stuff added!). Just take them out the night before and they are ready by morning. I just put them on a plate and let them defrost in the microwave overnight. Egg casseroles are super yummy and easy to heat up. Good luck and have fun mixing it up! Sunbutter (since you have a nut allergy) on toast is good too...

Homemade whole wheat pancakes - make a double or triple batch on Sunday. They keep well in the fridge for days (and they also freeze well) warm up in the oven - 350 until warm.
I make scrambled eggs and toast in 15min.
Regular oatmeal is better for you and only take 10min. Then add cinnamon, chopped banana, walnuts and a drizzle of honey/real maple syrup.
Yogurt parfaits - yogurt with fruit and granola.
Breakfast is important. If you need more time to feed the kids healthy, then wake up 15 min earlier.

My kids like bagels with cream cheese (strawberry or honey nut flavored). Fried eggs on top of a buttered piece of toast, like a sandwich is also a hit. Other than that, we are frozen waffles and cereal, too :)

We sometimes make egg mcmuffins (english muffin, poached egg, cheese, canadian bacon). I have one of those microwavable egg poachers that makes a little egg disk in like a minute.

I know for camping trips my parents have pre-made and frozen egg and potato, etc. breakfast burritos. they wrap them in foil. Can be popped in microwave.

You can always make muffins ahead of time and freeze them as well. Can also be popped in microwave.

I'm eating what I also made for my kids right now!!

We call them egg roll-ups. Very simple. I make scrambled eggs, warm up a tortilla, sprinkle some shredded cheese onto the inside of the tortilla and top with the eggs, then just roll up! My kids enjoy them and they are quick to make.

I don't know how old your kids are. But Jimmy Dean had all kinds of breakfast sandwiches that are fast that my 12 year old has been making for himself and his younger brother for years. They only take Mins to cook in the morning. They also have hot pockets that have have eggs and sausage or ham and stuff like that. that give a variaty of this. Trust me. The last thing I want to do in the morning is cook breakfast. I know some would say I am a terrible mother but I don't have the time or energy. And my family understands that.

Hash browns that can go in the toaster. While they toast, make an egg. Scrambled, over easy, over hard, doesn't matter. Hash brown comes out, sprinkle cheese on it, egg on top. Yum!

The night before, you can cut up some fruit, including apples. I peel and slice them, then dip them in salt water. Somehow the salt keeps them from going brown.

We'll also make homemade granola bars (www.allrecipes.com), prep pancake batter (all the dry ingredients in one bowl, the wet ingredients in another), make muffins or bread (like pumpkin or banana), or make cinnamon rolls from scratch. They rise in the refrigerator over night.

My son loves deviled eggs! I make them the night before. Also, the Oscar Mayer pre-cooked bacon has changed my life. Just pop it in the microwave for 30 seconds and it is done. My kids love bacon but I hated the mess (and smell) of making it, even in the microwave. The pre-cooked bacon is so quick and easy and not as greasy. I used to think it was too expensive, but then realized it is just as much bacon as the uncooked packages.

I like breakfast burritos. You can buy a 'breakfast skillet' (I think it's Jimmy Deans that makes the brand I like). They come in sausage or bacon flavors. All you do is add 6 eggs to it and fry it up. Add cheese and a bit of salsa, and yummmm. :P It makes enough for about 6 burritos. It has the sausage, potato, peppers, etc. in it. They re-heat really well too!

Oooor... my personal FAVORITE is cold pizza. Just order in the night before! Lol. I bet the kids would love that... even if it's not so healthy...

Scrambled eggs and some fresh fruit is a fantastic and fast breakfast! My kiddos love it! It's a great source of protein and gives them that little bit of "sweet" they are looking for in the morning without having too much sugar.

FRUIT. Nature's answer to the AM. MAJOR vitamin boost and 1 apple wakes a person up more than a cup of coffee with no 'crash' later. So it will be excellent for before school.
Also, fruit is best digested on an empty stomach so it is ideal in the morning. You can make a fruit salad the night before with a little bit of natural yogurt (NO colorings which are linked to hyperactivity and cancer) that is low in sugar, ideally no sugar as the fruit will have plenty. Good luck!

I also poach eggs in the microwave at very low temps until firm, and put in a ziplock with a little sea salt, an easy travel protein.

My kids love a toasted english muffin with scrambled egg, ham and cheese. It's really quick to make, and filling, and they usually take it with them wrapped in a piece of foil. They also like smoothies, which I keep very simple: frozen strawberries, equal parts apple and orange juice, that's it!

I make muffins and freeze them. Then you can pull out the amount you need each morning and warm them in the microwave. Since I make them ahead of time, I make them more healthy using applesauce, raisins, or whatever else my kiddos will eat. That way it's a little sweet for them, but healthy, and very quick. I hear ya on needing to be quick and easy.

My 16 yr old makes her own breakfast and varies it sometimes. Here are some of her favorites.. 99% of the time, a bowl of cereal is daily along with one of these.

Loves nutella on toast with cereal, milk and juice.
Sometimes I have sausage and she'll have sausage/biscuit
Toast with the Cinnamon Swirl bread
Cheese toast
Granola with yogurt and fresh fruit
cream of wheat
scrambled eggs

We like to shake it up and sometimes serve a "treat" for breakfast. Why not try something like Pear-Pumpkin Crisp for breakfast? You can bake it up the night before and serve it either cold or warmed up the next morning. They'll think they're getting a treat, and you'll know it's got pears, pumpkins and oats. We try to have a protein-rich breakfast, as it keeps you full longer. So it is usually some sort of egg, alternating with some sort of meat or cheese.

It is very easy and quick to cook eggs (omelet, soft boil, hard boil, scrambled, sunny side up etc...)
On alternating days, we have meat like sausages, breakfast links, turkey bacon, or even lunch meat or smoked salmon. We choose natural meat products with no additives (like nitrites) and really like the veggie breakfast links with lots of soy protein.

We pair the egg or meat with bread (toasted or not) and a few different spreads to choose from (cream cheese, hummus, guacamole etc).

We also do grilled cheese sandwich and leftover pancakes (I make a bunch on Sunday and they are good for a few days).

I have a co-worker who buys a big bag of croissants and freezes them. She sets one out each night before school to thaw. She feeds her daughter the croissant with some fresh strawberries.
