Way over budget last month and this month, need some ideas for cheap meals. We tend to eat very well, steak once a week for hubby (I'm a vegetarian), fish twice a week, etc. so we don't do many casseroles and other things like that. We do have pasta at least once a week, however, and I usually make it from scratch. So, ladies, I need cheap but fresh and seasonal dinner ideas.

What have you cooked lately that you loved and was cheap to prepare?

Added: I do the coupon game half of the time, so I only buy things when they are on sale! Hubby will also only eat fresh seafood, unless it's shrimp or scallops.

So What Happened?

Thanks everyone! I had totally forgotten about eggplant! I so need to stock up my freezer. And for some reason, I have stopped doing stir fries. I was doing one a week, but since summer hit, and we use the grill almost every day, I've stopped using rice and beans as much as I should be.

Beans! Dried beans are very cheap, and filling. I use pinto beans, sort them and take out all the rocks, and rinse. In a large pot or bowl, cover with water and soak them in water over night. Rinse. In the morning, put in the crock pot, cover with water and season to taste. I use bacon dripings, just a tablespoon, garlic, and salt, but you can use what works for your family. Cook all day (if you don't have a crock pot, you can use the stove, but will need to keep very close watch becasue they burn easily, and you will need to add more water often, I also use my pressure cooker when I need them quickly.) I can get two dinners and a lunch out of one large pot of beans. Serve over rice with grated cheese, chopped green chillis, chopped green onion (or what ever you like!) as a topping. Roll them up in tortillas with cheese for buritos, add a salad and fruit, dinner #2. Top tortilla chips with beans and cheese for nachos as a lunch, or do burritos again. My husband is mexican, so we eat at least one pot a week. You can change it up by making spanish rice too.

Stacked Enchalada's: Make an easy enchalada sauce by browning a table spoon of flour in a table spoon of vegitable oil in a large skillet. Add two large cans of plain tomoato sauce, chilli powder, garlic and salt to taste. On a large piece of aluminum foil, place a dozen corn tortillas and drizle with enough vegitable oil to lightly coat one side of each, wrap, place in the oven until warm- alternatively, steam them lightly without oil, but I don't care for them this way and be careful that they do not fall apart.) Place on a dinner plate (make each serving this way) cover with sauce, place a handfull of shredded lettuce, sprinkle with shredded cheese, place another tortilla and sauce on top, sprinkle with cheese, repeat for as many times as you like. You can add taco meat, and when you do it this way, you can make a pound or less of taco meat go a very long way.

Chilli relleno caserole: I don't know if you would like this one, but it is inexpensive. 10-12 eggs, can of evaporated milk (can use no fat) two cups shredded yellow cheese (cheddar, colby, jack, what every you like-sometimes I add more than two cups, it is a preference thing) two small cans of chopped green chillis, salt and pepper to taste. Beat eggs, add all other ingredients, put in a greased casserole dish, bake 50 mininutes at 350 or until a knife in the center comes out clean. Serve with tortillas and a salad. We even use leftover beans as a side dish.

Basically, you need to shop the sales.
If it's on sale, get a chicken and roast it. Use the left overs to make chicken salad sandwiches for his lunch or a chicken stir fry.
If pork is on sale, do a pulled pork - it goes a long way and you can make it in the crock pot.
How about fried rice - it's cheap and easy?

Buy any meat on sale at the store and grill. I am getting lots of fresh corn and sweet potatoes and eggplant from the produce stand down the road(I'm in SC) right now and marinade with whatever your fav is and grill everything. Oh and I just bought 2 lbs of frozen tilapia (I know you said fresh but you also said cheap) on sale and I will grill it in a basket with sliced peppers & onions.

Eggs are another cheap dinner idea. My husband is willing to eat a strata or quiche for dinner with no meat. I load it with whatever veggies are handy and lots of cheese (to satisfy hubby). And my super cheap, I don't want to go back to the store trick is to layer the pan with toasted sliced sandwhich bread instead of a pie or potato crust. Of course if you make your own pasta then a homemade pie crust is right up your alley!

Eggplants are very cheap right now. How about Eggplant Parmesan? There is a great recipe for non-fry eggplant parmesan on allrecipes.com. Risotto with mushrooms or veggies is also an inexpensive meal if you substitute the Arborio rice with pearl rice, which has a very similar consistency. But for me, the favorite cheap food is pasta. I serve it with red sauce, white sauce, mushrooms sauce, shrimps, pesto (I saw some inexpensive basil in my store the other day), veggies, etc.

I like to visit Kraft.com for their food and family section which has easy recipes for all meals and snacks. They use regular ingredients that you can find anywhere so when you do get a coupon you can hop on the site and find a recipe. It also has an option to put what ingredients you do have around and it will give you a recipe that matches, a great way to clean out the cupboard. You can sign up for a weekly email for recipes and they let you save recipes on a free account so you can refer back to them. It may not be haute cuisine, but every once in a while you can make a fast meal.
