My husband is the meat eater of the family also. Here's my super simple roasted chicken recipe that also gets raves from my family:
Preheat oven to 450-degrees
Place chicken piece on a foil-lined baking sheet
Drizzle with olive oil
Season with crushed garlic, tarragon, salt & pepper*
Put in oven and reduce heat to 350-degrees
Cook chicken until done
* This is where you can get wild and crazy with it. Sometimes I squeeze fresh lemon juice on the chicken. Othertimes, I subsitute the tarragon with basil, oregano or whatever spices fit my fancy at that time.
