C.~ Sorry I didn't get back with you right away but I just remembered that I have a great pancake recipe that is from the "Eating for Life" cook book by Bill Phillips. It is called Golden Pancakes. My family loves this!!

1 cup uncooked whole-grain oats (non-instant)
6 eggs whites
1 cup fat-free cottage cheese
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
2 packets sugar substitute

In blender combine ingredients. Blend until smooth. Cook on griddle. We used sugar free syrup and they are great. You can also put berries on them.

My husband and 2 1/2 year old son love to put syrup on cottage cheese and just eat it out of a bowl like that. We also cut up a bananna and put it in with the cottage cheese and syrup.
I have heard that putting it on a baked potato is really good too. Good luck with everything!! And I hope that you like the recipe!

As a great desert, try fruit and cottage on a bed of lettuce, like peaches, pineapple, pears, or bananas.

Here's a recipe I found.

Noodles and Cottage Cheese
It's a side dish at dinner, a main dish at lunch, and if you drop the chives and add cinnamon-sugar instead, it's a homely dessert.
INGREDIENTS:
3/4 lb. wide egg noodles
1-1/2 cups cottage cheese
1 cup regular or low-fat sour cream
Salt and pepper
Chives, optional
1. Cook the noodles in boiling salted water. Drain, put in a bowl, and add the cottage cheese, sour cream, salt, pepper and optional chives. Makes 4 servings.

My mom used to make cottage cheese pancakes. REALLY GOOD!
1 small tub cottage cheese, 2 eggs and 1 egg white, 1/4 cup flour or so to thicken it up, and a little melted butter if you want for taste. Use butter in the pan, not Pam, and make them small since they tend to be a bit messy to turn. Excellent spead with fruit jam. They are pretty mild too for sensitive new-mommy tummies!

Hi C.,

My doctor gave me this recipe for cottage cheese muffins when I was pregnant with twins and had to eat 175 grams of protein every day (yikes!). Good luck!

-M.

Heidi’s Fabulous Muffins

Grind and add to the mix:
1 cup flax seeds, ground
1/2 cup walnuts or hazel nuts
3/4 cup protein powder (Heidi uses BioPure Whey Protein powder – metagenics)
2/3 cup brown sugar – more or less depending on how sweet you like it. None if you want a sugar free treat.
2 tsp baking powder
1 tsp baking soda
1tsp ground cinnamon
1/2 tsp salt
Zest of one orange

Mix the drys together, then add
2 TBSP butter
2/3 cup (mounded) cottage cheese (or ricotta – Heidi always uses cottage cheese)
2 eggs
2 tsp vanilla
2/3 cup currants
2/3 cup grated zucchini

Mix well.

Bake at 350 degrees for 25 minutes.

Variations:
Use pumpkin instead of zucchini and add 1 tsp ginger, 1/2 tsp cloves, 1/2 tsp nutmeg

Add 2 ounces of melted unsweetened chocolate and use chocolate chips instead of currants.

I am the same way with meat. I do each chicken but only sometimes. I eat allot of cottage cheese but also can not stand to eat it alone. I have to have some kind of carb with it. Most fruits are good with it. I will even grab a hand full of frosted shredded wheat and eat that with it. I also love to chop up a tomato and mix it in.

I'm not sure of the exact recipe but you bake a potatoe, I used the microwave it takes a lot less time and then you take out the insides of the potatoe and mix cottage cheese with it then fill the potatoe back up and sprink cheese over the top and put it in the oven for like five minutes, it's not as healthy as some of the other responses but it is very filling and it tastes good.

Cottage cheese is actually not the best dairy for high protein. According to a quick web search at http://www.nutritiondata.com, you'd be a lot better eating gruyere or almost any more solid cheese. 132 grams of gruyere has 39 grams of protein, as compared to 113 grams (4 oz) of cottage cheese only having 14 grams of protein. I see a lot of fondue in your future. 132 grams of cheddar has 33 grams of protein.

I also recommend smoothies, made with milk, and add a scoop of protein powder.

Hello C., Well this has always been a family fav. and it always seems to show up at family get togethers. Try taking your cottage cheese and Jello we normaly use strabarry bannana but you can use any flaver that you want put the cottage cheese in a bolw dump the jello powder in on top of it and get some pinapple drain it and dump it in as well then get some suger free cool whip and put it in as well mix it all to gether and enjoy. This is a very good treat and belive it or not my mother and my daughter hate cottage cheese but both will eat this like there is no tomorrow. To change it up some of the family will cut up nuts of some kind and throw them in as well or some times use friut cocktail as a sub for the pinapple. You can use most any kind of friut in this recipe just depends on witch flaver of Jello that you like best. I have eaten this way with strawberrys, manderins, peaches and well lots of others one of my aunts even uses seasonl friut from time to time like kewi. Well I hope this helps you some and that you find a way to enjoy cottage cheese.
Good luck and have fun with new recipes, J.

You can also heat cottage cheese, add a little sugar, vanilla and even maple syrup for a hot breakfast. It sounds gross, but it's pretty good!

I'm not a huge meat eater either and getting my protein is a challenge sometimes.

When I was 4-5 months pregnant, I couldn't go a day without cottage cheese! I do like it with just some salt and pepper (I go overboard with salt sometimes). I would dish it in a bowl and have a couple of pickle spears in the same bowl. I'd alternate between a bit of a spear and some cottage cheese and it didn't seem plain to me. I don't normally like Club crackers, but I would dip them in cottage cheese and liked it. I don't really like sweet fruit mixed with cottage cheese, but everybody else seems to. =) I also like chopped roma tomatoes and avocado mixed with it.

(I also used peanut butter and soy protein shakes on days I didn't seem to get enough protein. My favorite was dipping some braeburn apple spears in peanut butter.)

don't know if you like tomatoes but this one is fun for you to make and my kids love it too. its really simple. All you do is buy some cherry tomatoes, wash them, cut them in half, scoop out the insides(you can either throw these away or i usually mix them in with a salsa i have in the fridge), then you just fill them with cottage cheese(small curd works best), add a lil salt n you're good to go. you can spice it up any way you need to but its just kinda a fun lil treat n you don't have to sit down to a whole meal for it. another idea is to just put some cottage cheese in the center of your favorite salad with your dressing you hardly even taste it.

HI C.,

I never thought I would find another vegetarian like myself. I am a local doula, and I can tell you that protine IS very important and you are right cottage cheese is a great way to get it. Protine will help you keep any edema at bay. So, if you can stomach Jell-o then it is great mixed with Jell-o,
walnuts, and cottage cheese. If you don't stomach the thought of gelatin, there are a few easy to make, and great recipies on the internet for vegetarian gelatin.

Best of luck!

I know I'm very late for this response, but I wanted to tell you that I use cottage cheese in my lasagne instead of fattening feta cheeses. I layer the ready to bake noodles (you don't have to boil them first) with sauce and veggies (since you are a vegitarian)then cottage cheese and shredded cheese then noodles and repeat and last layer is topped with noodles and only shredded cheese. I recommend that you precook the veggies to a point where they are almost done, still a little crunchy and then make the lasagne. By now you have probably had your precious baby and this is great to make a large amount and freeze sections for later. good luck and I hope all is well with the new baby!!!

Fresh or frozen berries
1 T. Flaxseed Meal

Is there a reason you are trying to eat cottage cheese? I am also a veggie, but don't eat milk products like milk or cottage cheese. I do eat cheese though. If you are trying to get some extra protien from dairy, I would suggest yogurt. It actually doesn't count as a dairy because the enzymes in it eat the lactose. I would also recomend protien shakes, I have a great recipe for them. I feed my kids one every day and put extra fat and protien in it for them. I hope this helps!!!

#1.- prepare jello as directed on pkg. fold in SMALL curd cottage cheese... drained fruit cocktail...nuts (if desired... chopped almonds are a good protein source)... mini marshmellows and let set. Many people think this jello has whipped cream in it and LOVE it...but it is the cottage cheese!

#2.- MY personal favorite! Place a canned pear 1/2 into a bowl...add a scoop of cottage cheese on top of pear and pour some pear juice over. Yum!

#3.- I use small curd cottage cheese instead of ricotta (expensive) or feta (yukky) cheese in my lasagna. Even people who say they hate cottage cheese love my lasagna.

#4.- Quick Cottage dip: small carton of small curd cottage cheese... TBSP.dried parsley... TBSP. minced/chopped (dried)onions... salt and pepper (or seasoned salt)... whip it all up with a mixer... Great onion dip with potato chips or on veggie stix!

Now that I have Erika, she just loves to eat it straight!
