I'm with you...it's tough to find casserole and crock pot recipes that are HEALTHY!
I've pulled some of my faves that are healthy, and here they are. If you don't already have someone to provide you with the healthy ingredients/seasonings from Tastefully Simple, I can hook you up! Just email me! The jars of seasonings are very economical - they go a long way.
Corn, Black Bean Salsa Chicken
Take 3 lbs of frozen Chicken breasts and put in a slow cooker. Pour a jar of Corn, Black Bean Salsa on it. Add extra seasonings if you like. I like the Fiesta Party Dip Mix™
Pour 1/2 cup of water and cover. cook for 8-10 hours on low-med.
When ready to serve shred with 2 forks and stir. The chicken is flavorful and moist.
You can use it for sandwiches, burritos, tacos, top a big bowl of lettuce and tomatoes, and so much more
I have done mine overnight and let the children stuff pitas with the meat for school in the morning.
If there is extra freeze and use for another meal.

Slow Cooked Chicken Cacciatore
1 1/2 lbs. cubed, boneless, skinless chicken breast
1 sliced red bell pepper
2 sliced zucchini
1 cup sliced mushrooms
2 (28 oz.) cans tomato sauce
2 Tbsp. Dried Tomato & Garlic Pesto Mix
1 1/2 Tbsp. Garlic Garlic™
Prepared pasta or rice (optional)
Place chicken in slow cooker. Top with peppers, zucchini and mushrooms. Combine tomato sauce, Dried Tomato & Garlic Pesto Mix and Garlic Garlic™; pour over vegetables. Cover, cook on low for 7-9 hours. Serve over pasta or rice. Makes 4-5 servings. This is a low-carb meal when served without rice or pasta.

Slow Cooked Italian Chicken
2 1/2 Tbsp. Dried Tomato & Garlic Pesto Mix
6 - 8 boneless, skinless chicken breasts or thighs
15 oz. can chicken broth
14.5 oz. can diced tomatoes, undrained
Combine ingredients in slow cooker at medium-high heat for 5-8 hours. Makes 6-8 servings.

Vidalia® Pork Barbeque
3 lbs. boneless pork loin roast
2-3 Tbsp. Garlic Garlic™
1-2 tsp. Seasoned Salt
1 cup water
1 1/2 cups Vidalia® Onion Dressing
Place pork roast in slow cooker. Sprinkle with Garlic Garlic™ and Seasoned Salt; add water. Cover; cook on low 7-8 hours or until tender. Remove roast from slow cooker and discard water. Shred pork and return to slow cooker. Add Vidalia® Onion Dressing; heat on low for 1 hour. Serve on buns or rolls
