Happy Mother's Day!!!!

My boys bought my a crock pot for Mother's Day. I was just wondering if any Mom's out there had any recipes to share. How do you like using the crock pots?

I like the Fix It And Forget It ones, there are a few now. Love my crock pot.

One thing I like to do is make steel cut oatmeal the night before. It takes 25 minutes on the stove, and I am not together enough in the morning to make that happen. :-) So I put the oatmeal and water in the night before, just on warm or the lowest possible setting. (I add a little extra water just to compensate for evaporation over the night). It's ready in the morning, I just add whatever I want to it!

I use my crock pot a lot, but my 2 favorite (delicious) and easiest recipes are:
POT ROAST
Thin slice an onion and add it to the bottom of the crock pot, add a Beef chuck roast (3-5 lbs), mix a packet of dry ranch dressing, a packet of dry Italian dressing and a packet beef gravy or brown gravy, cover beef with mix and add a cup of water (or beef broth OR half water half red wine). Cook on low for 8 hrs and serve with white rice, mashed potatoes or noodles.
CILANTRO LIME CHICKEN
Chicken breasts (about 2-3 lbs), 1 package dry taco seasoning mix (I make my own to reduce sodium), a jar of salsa (I use a 16 oz of Herdez mild salsa casera), 3 tbs of chopped cilantro (or whole if you want to take it out after cooking), the juice of one lime and 1 can of whole black beans, rinsed and drained (I use 2 cans). Cook on low for about 6-8 hrs and use a couple of forks to shred the chicken when cooked. You can eat this in tacos, burritos, tostadas, nachos or just serve with rice.

we use ours for stews, soups, pasta sauce, apple sauce, and chili. Can't offer you any recipes as such because we kind of do kitchen sink type of cooking.

most of the time the crockpot will get you "almost there" for a meal. You still have to have some veg, a starch, a salad, etc. Crockpot is really useful though for anything you would simmer.

Enjoy. Ours is used 2-3 times a week.

leftover Chicken soup
I buy a rotisserie chicken for dinner one night, and the next morning I take the chicken carcass with all the remaining meat and throw it in the crockpot, chop up and throw in some celery, onions, carrots, garlic or whatever veggies, cover it with chicken broth or chicken stock and cook on low for 6-8 hours, or high for 4 hours. If I have any leftover rice or pasta I throw it in there too!

I love mine. I have too many to list both meat and vegetarian based. I usually just toss meat and seasonings in, veggies later. The house always smells good. Go online as well.

I love my crock pots! One thing I make is spinach artichoke dip. Something I would never otherwise do but it's great for Thanksgivings/get togethers when you can put it out first while you're cooking other things:

Directions:
Mix 1 cup grated smoked mozzarella, 1/2 cup grated parmesan, 8 ounces cream cheese, 1 minced garlic clove, 1 box thawed frozen spinach, 1 jar artichoke hearts, and salt and pepper in a slow cooker. Cover and cook on high, 2 hours.

Another good tip I've learned is using frozen meat adds a couple hours to the cook time. It's very helpful if you work 8 hours :)

I love the crock pot, it is just a matter of having the time to do it in the morning! Here is a chili recipe that I love and we use the leftovers for burritos/tacos/ etc.

1lb ground beef, browned and drained
1 pkt ranch dressing
1pkt taco seasoning
4 cans of beans (I use 2 black, 1 kidney, 1 garbanzo) rinsed & drained
2 cans diced tomatoes
1 can rotel (mild or spicy depending on what you like)
2 cans corn

Put the beef in the bottom and sprinkle the packets on top, then add beans, tomatoes and corn (not drained). Cook on low about 8-10hrs. Very good and we put a little sour cream on top of our chili (or cheese). If you freeze leftovers, the rotel can make the chili more spicy. Even the mild gets spicier when frozen.

I'm not a huge crock pot food person - I wish I was. I'm going to look on this post to see if anyone has a good pot roast recipe to try that I like - I haven't found one so far. Anyway I do have one GREAT chicken recipe for the crock pot.

Cilantro Lime Chicken

1 16 oz. jar salsa
1 (1.25 oz) pkg dry taco seasoning
1 lime, juiced
3 Tbsp chopped fresh cilantro (for my tastes I use 1/4 c.!)
3 lbs. boneless, skinnless chicken breast

Place salsa, taco seasoning, lime juice, and cilantro into slow cooker and stir to combine. Add chicken breasts and stir to coat with salsa mixture. Cover cooker and set to high and cook about 4 hrs, until tender. Or set cooker to low and cook 6-8 hrs. Shred with 2 forks to serve. Can use for tacos or serve over rice. Adjust to your tastes with how spicy your salsa is and how much lime and cilantro you use. Voila!
