I hope you guys can help me. My husband will be going back to work soon (thank goodness!) but will be working nights. I have 2 under 2 and the only way we are going to have a hot dinner that I cook will be by crocking. I have a few staple recipes but need to add to my arsenal. Any suggestions/family faves? Thanks!!!

My family's favorite crock pot recipe is Steakhouse Chili.

I use beef stew meat, and then slice each piece into about fourths depending on the size. I put this in the crock pot with diced can tomatoes, or you can use a can of whole tomatoes and food process into smaller pieces, and then chili seasoning packet. I use low sodium on everything I can find, but you don't have to. I let this cook on low for about 8 hours.

Then about 6-7 hours into it I throw in a mixture of beans. You can change the amount of meat, beans, etc... depending on how much you want, the size of your crock, etc... The only thing I try to keep consistent is that 1 can of tomatoes = 1 pack of seasoning. You can make extra though. It is great for leftovers. I am not a big fan of leftovers, but I love this reheated.

I use kidney and black beans, but I know my mom has used white beans, and I am sure you could use chili beans. I find that if I put the beans in at the beginning they get over done and mushy, but the meat loves the long cook time. It gets so tender. This is a great fall time food. I can't wait to use it again this fall.

I also have tried some of the McCormick crock pot seasoning like the pulled pork, and beef stew. They were both great and take a lot of the thinking out of it.

Good Luck with your endeavor. I am going to try a new crock pot recipe called Salsa Chicken that I found at Sparkpeople.com. It is a diet website, but they have a recipe page that has a lot of healthy recipes. You could also search them for crock pot, and I found a bunch. I will let you know if the Salsa Chicken goes well or not.

Every recipe I have tried in "Fresh from the Vegetarian Slow Cooker" recipe book (which has only slow cooker recipes) has been AMAZING! My favorite is Cornbread topped Southwestern Potpie! They also have great Lentil recipes. Check it out!

Okay I have 2 super easy ones, stock up on roasts when they are on sale, beef or pork. I then thaw the roast (the hardest part). In the morning or night before if your whole crockpot will fit in the frig, slice a whole onion pretty thin, season your meat, put roast on onion add a bottle of beer (all alcohol cooks off, if this still bothers you, use a can of pop) that's it. Put it on low for all day, If I had it in the frig sometimes I put it on high while I get ready but make sure you don't forget to turn it down before you leave. Then when I get home, whatever fat is usually near the top so I take those pieces off and skim it and then shred the meat with 2 forks, now you can add anything you want, BBQ sauce for sandwiches, enchilada sauce for burritos or enchiladas, green chile verde sauce for pork chile verde, (we eat that in a bowl with tortillas).
If it looks like too much liquid turn it up to high when you get home and take the lid off and some will cook out. I find that by the time I shred it the meat has soaked up all the liquid. If you wanted to make more of a gravy you could add some flour at the beginning and a little coffee(1 mug) then use your liquid too make gravy when you get home and have shredded beef over potatoes or make a beef veggie soup. See the possibilities are really endless with this. I supposse you could do chicken the same way but I never have. Good luck!

Hi B.,

If you're even more pressed for time. Walmart sells marie calendars crock pot meals (found in the frozen food section). We enjoyed the chicken and dumplings & some of the others... sorry i spaced out the other types.

You can search for slow-cooker recipes. I love going online for new recipes, it is cheaper than buying a cookbook! Others are Taste of Home, Cooking Light, but my favorite is www.allrecipes.com

Hi B., I was there too! Dinner time is the hardest time, so even if you don't do crock pot one day, I would do dinner in the morning during nap time, and do a double batch and freeze one for a quick dinner one night.

4 chicken breasts in crock pot with 1 bottle of Italian dressing. When chicken is cooked all the way, add 1 pkg of cream cheese and a can of cream of chicken. stir every 5 minutes until it is gravy consitancy. Pour over gravy. Kids and husband LOVE this one, and my dd is very picky!

another good one, put in chicken, pork roast, or beef roast, put in a pkg of lipton soup mix and cream of mushroom. cook til done, pour over mashed potatoes.

Chicken and can of green enchilada sauce, and maybe green chilies. cook, then put over nachos with cheese, or tortilla and usual taco toppers.

Another tip: I put the baby in the bouncy seat (or bumbo) or napping then the older child put a couple of inches of water in a big tupperware storage container, towel underneath in kitchen with a few cups and spoons while I did dishes, AND cleaned the kitchen. He loved it. A.

Here is a hearty meal that will feed your entire family and it is so easy to make. Beef stew cooked in a crockpot with Pillsbury french loaf as a side dish (found in the cold section at your grocery store) or any type of bread you like.

My favorite is chicken parisiene. You put boneless chix breast (2-4) and add cream of mush soup, 1/4 cup chicken broth, 1 small can of mushrooms, salt and pepper and cook 4 hrs on high or 8 low. When done you remove the chix and tear it into small pieces (easy since it falls apart). In a bowl mix 1 cup of sour cream with 1/4 cup flour and add to the crock pot. Cook on low 30 minutes (sometimes I only do this for 15 min) add chix to the sauce and serve over rice. Yummy!

One of my family favorites is pulled pork and it's super easy! I just throw some pork shoulder or a pork roast of some sort in the crock pot raw. I pour my favorite BBQ sauce over it. If I have extra time, I throw in some sliced onion too. I turn it on low and by the end of the day I have pulled pork. You can serve it as is or on buns.

Here's one that doesn't even need to go in the crockpot. It's Southwestern Stew and literally takes less than 15 mins:

1 can black beans, drained and rinsed; 1 can stewed tomatoes with Mexican seasoning; one can Mexicorn, 1 small can green chopped green chiles. You literally open all the cans and dump them into a saucepan. Simmer for about 10 mins. If you want to add some cooked chicken (I use the "grilled chicken strips" from Costco) or sausage pieces to add meat, feel free. But it's really totally yummy just like this. Serve with a spoonful of sour cream or a sprinkle of shredded cheese, and some crumbled tortilla chips on top. Open a bag of salad, and add some chips and salsa and you're good to go. All my kids like it too. It's not at all spicy, if you use the mild green chiles.

Soup is realy easy, and it doesn't need a recipe. Just have a handful of good spice mixtures on hand (Old Bay is one of my favorites), throw some meat in the water, an hour later throw canned vegetables and spices in the water, and let it cook until you're ready to eat.
