So mu hubby (who mostly makes dinner) is going back to working nights and with an infant, 4 yr old, and MIL to take care of I need some great crockpot recipes fro dinner, so lay them on me girls. What is your favorite crockpot recipe?

I am a crockpot queen! I use my crockpot or a sun oven that operates similarly almost every day. You can find tons of recipes online. I also like the Crockpot365 site someone recommended. You can learn lots there.

But you can also just use your favorite recipes and adapt them to the crockpot! Casseroles work well. Just put them in the crock and turn on high for just a few hours or low all day. Any whole chicken or roast or pieces of meat can easily be plopped in with some kind of seasoning and come out great.

Baked potatoes: put in potatoes all day on low. Add toppings for a baked potato bar.

Soups and stews, chilis, posole. Use your favorite recipes and put in crock to simmer/warm.

grain cereals: oatmeal, millet, quinoa, any favorite grains can be cooked overnight and then you can wake up to warm cereal and add butter and maple syrup.

Beans: cook huge batches to divide and freeze or single batches.

Chicken breasts (bone in) covered in Cream of celery or chicken soup

Chuck Roast and a small bottle of BBQ sauce makes great BBQ sandwiches

Pork Shoulder or Butt covered in tomatillo salsa makes great tacos

Beef brisket in a little water; then in last half hour coat with red pepper jelly

Chuck roast, potatoes, carrots, lipton onion soup mix, can of chopped tomatoes...makes great pot roast

I also have a great tamale bake recipe that I probably got on allrecipes.com

If you're like me, some days I know I'm not going to have time to worry about making dinner. On those days I grab a McCormicks seasoning pack out of the cupboard and whatever meat I'm making out of the freezer. Checkout the seasoning packs in your grocery store. They have a variety of chicken, roasts, pork, stews, chili, soups, etc. I just pop the veggies, frozen meat and mix the seasoning pack into the required amount of hot water all into the crockpot and let it do all the work. The meats always come out juicy and tender. If I make a pork roast in the crockpot I turn the leftovers into pulled pork sandwiches the next night. Super simple way to use leftovers. If I make a pot roast I chop up the left over roast and make a beef stew out of it. I can usually get at least 2 meals out of 1 days cooking. Any leftover go into freezer for a quick pull out meal another day. 1 crockpot full of chili will feed my family dinner that night, maybe a lunch that week and then the rest is frozen in gallon ziplocks for a quick meal another night during the next month. I usuall get 5 meals out of one crockpot of chili.

2 lb. chuck roast and a quartered onion in the pot. Cook 4 hrs high or 6-8 on low. Drain liquid. Shred meat & onion with 2 forks. add your fave BBQ sauce mixed with 1/2 c. apricot preserves. Mix and warm for about 30 min. Serve on buns. Yum!

Hi K.,

I LOVE, LOVE, LOVE my crockpot! My very favorite things to cook in that bad boy are: Chili (just soak you beans over night - I like to use black & pinto- brown your meat, garlic & red pepper flakes in skillet, to crock, add beans, meat and about 2c. of chicken or beef broth, spice up as necessary). Pot Roast (you really only need the meat, veggies, and a couple cans of which ever "cream of" suits you, and some water). WHOLE CHICKEN!! )Genius .. veggies on the bottom, a cup or so chicken broth, toss your whole chicken on top .. season as desired The chicken comes out so tender and moist .. I may never bake a chicken again!!). Sausage & Pepper plate ( toss sausage, red & green peppers slices and a jar of spaghetti sauce, I like ot use carbonara. You can either spoon this onto a plate of pasta or toss the pasta in the crock after it's al dente )

I've read the recipes for cooking chicken wings in the crock, but haven't tried it yet .. maybe for Super Bowl Sinday .. hmmmmm

We love crockpot chili - I often make it with the veggie crumbles (morning star) so that I don't even have to brown the ground beef. The chili is flavorful enough my kids don't know the difference.

I also make meatloaf and cook it in the pot. It helps if it can sit a bit before you take it out because otherwise, it's as tender as a potroast. But it's just as tasty.

My kids love a lentil soup which can include whatever veggies you like (corn, carrots, etc) with lentils. The lentils will cook easily without soaking if you give it a full day.

Finally, the Bear Creek soup mixes are delicious. Just cook your chicken in the crockpot with the recommended amount of water, then about 1/2 to 2 hours before dinner, shred the chicken (or you can do this whenever the chicken is done cooking, add the soup mix, a can of beans, a can of corn and/or whatever else you like. We like to spread some cheese on top, and occasionally some tortilla chips.

Easiest recipe and oh so good! 3-4 chicken breasts (depending how big your crockpot is) and a bottle of salsa on top. Cook 8 hours on low. Shred. Chicken burritos.
