Beef Stroganoff, Serves 4
Salt and pepper
2 tsp. paprika
1 ½ lb. beef stew meat, cut into cubes
1 Tbs. vegetable oil
2 c. sliced shitake mushrooms (6 oz.) or white mushrooms
3 shallots, thinly sliced
1 ½ c. low-sodium beef broth
½ c. sour cream
1.Sprinkle ¾ tsp. salt, pepper and 1 tsp. paprika all over beef. Warm oil in a large skillet over medium heat. Cook beef, stirring occasionally, until browned on all sides, about 8 minutes. Transfer meat to a slow cooker.
2.Add mushrooms, shallots, and remaining 1 tsp. paprika to skillet; season with salt and cook for 3 minutes, stirring often. Combine beef broth and sour cream, pour into pan with mushrooms and shallots, and cook for 2 minutes, scraping up any browned bits from bottom of pan. Pour mixture over beef in slow cooker, cover and cook on low until beef is tender, 6 hours. If desired, sprinkle with chopped fresh dill or parsley before serving.
Traditionally served with egg noodles, but also good over rice or with a crusty bread.
*Can be made with chicken or lamb. Use boneless, skinless chicken thighs, cut into chunks or splurge on cubed lamb stew meat.
No Peek Beef Casserole (I peeked.)(I got 4 servings.)
2 lb. stew beef (1 inch pieces)
½-1 envelope onion soup mix
10.5 oz. cream of mushroom soup
4 oz. canned mushrooms
½ c red wine
Combine all. Stir. Cover. Cook on low 8-12 hours or high 4-5 hours. Serve over noodles or rice.
Tender Pork Roast, 8 servings
1 boneless pork roast (~ 3 lb.)
8 oz. tomato sauce
¾ c. soy sauce
½ c. sugar
2 tsp. ground mustard
Cut roast in half; place in 5 qt. slow cooker. Combine remaining ingredients; pour over roast. Cover and cook on low 8-9 hours or until 160-170 degrees. Remove roast to platter. If desired, skim fat from pan juices and thicken for gravy.

We do pulled pork in our crockpot all the time. At the grocery store, in the section where they sell seasoning packets (gravy, etc.) McCormick makes a couple slow cooker packets- we use the pulled pork one- you mix the seasoning w/ ketchup, cider vinegar and maybe brown sugar- dump over a pork shoulder and let it cook- cut it up (some of them just fall apart) and let cook for another hour or so...serve on rolls w/ french fries- yummy! I often buy a bag of shredded cabbage/slaw mix and make cole slaw w/ it as well.
I know what you mean about being tired of the same old stuff!!

I've tried a few off of http://www.crockpot.com/recipescat.aspx?catid=6 - and though the cooking times seem a tad off (need to be longer) - they are quick & easy. Meatball stew (w/Turkey) and chicken sweet potato are pretty good (added 2 hrs on high to recipe instructions). I also plan to try the chicken dumpling one.

I am not a big meat person, but I made this a few weeks ago and the whole family loved it.
I used:
2-3 lb pot roast
flour for dusting, oil for searing
1 can cream mushroom soup
1/2 can beef broth (or just use water)
1/2 envelope of dry onion soup mix
Lightly dust the pot roast (I used eye of the round and cut off the slab of fat on it). Pan sear it in a little oil. Mix the other 3 ingredients for the sauce. I layed a little sauce in the crockpot, then put the seared meat in it, and then covered with remaining sauce. Cook on high 4hrs, low 4hrs. So 8 hours total. It was soooooooooo good. I know of people that throw in mushrooms, onions or carrots towards the end, but I just did the meat w/ the sauce and served whole wheat egg noodles w/ it and a veggie on the side. Of course double the recipe if you have a bigger family. This fed 2 adults, one boy and a 2yr old, we did have left overs too.
Go to allrecipes.com. I actually used one of the crock pot recipes last night and my 14 year old who is VERY picky - loved it! So did my husband! I was a chicken recipe called "slow cooker dump and go chicken". Most recipes come with reviews other people that have tried it and usually there are a few changes in the review. I followed the suggestion of another reviewer and changed the two cans of soup to one chedder and one condensed cream of chicken soup. The chicken just fell apart when I tried to pick it up (which was great as I have a 6 year old who complains about the "toughness" of any meat except hotdogs!!) I am dying to try the turkey breast slow cooker recipe!

2 lbs Beef stew beef chunks
Potatoes
carrots
1 large can baked beans
put it all in pot, 8-10 hours, easiest crock pot recipe I've done and tasted great.

These were given to me when I had my daughter.
Honey Mustard Chicken
4-6 boneless skinless chicken breast (or any kind of chicken)
3/4 cup dijon mustard
1/4 cup honey
Put chicken in pot. Mix mustard and honey and pour over chicken. Cook on high for 3 hours or on low for 6-8 hours. Adjust time for bone-in chicken.
Turkey in the Slow Cooker
3 or 4 boneless turkey breast tenders (or chicken tenders)
4 medium potatoes, sliced
4 carrots, sliced
1 can french onion soup, undiluted
Put vegetables in bottom of slow cooker/Crook pot. Add turkey breast. Pour in onion soup. Cook on low for 6-8 hours.
Crock Pot Beef
2 pounds stewing beef cubes
1 box (2 envelopes) Lipton Onion Soup
1 Stick (1/2 c.) Margarine
6 carrots cut in chunks
Place all ingredients in the slow cooker/Crock pot - cook on LOW all day long or on HIGH for 4-5 hours. There are NO other ingredients. You don't need to stir it at all, it will melt in your mouth!! serve over noodles.
Vegetarian Stew
1/2 cup lentils, rinsed
1/2 cup navy beans, rinsed
2 cups onions, chopped
2 cups celery, sliced
5 carrots, scrubbed, sliced
1/4 cup brown sugar
1 cup barley
1/2 tsp thyme
1/2 tsp garlic powder
2 bay leaves
1 tsp black pepper
1/2 cup red wine
1 quart V-8 vegetable juice
2 cups water
Combine all ingredients in slow cooker. Cook for 4 to 6 hours on high heat or for 8 to 10 hours on low heat. Remove bay leaves before serving.
Fish Stew
3 Large red snapper or flounder (1 1/4 to 1 1/2 lbs.) cut into 2 inch pieces
2 tbsp live oil or melted butter
1 clove garlic, sliced
1 green pepper, seeded and cut in 1 inch pieces
1 to 2 zucchini squash (unpeeled), sliced
1 can (15 oz.) whole tomatoes
1/2 tsp leaf basil
1/2 tsp leaf oregano
1 tsp salt
1/8 tsp pepper
1/4 cup dry white wine
1/2 cup fresh mushrooms
combine all ingredients in crockpot. Stir gently, but thooughly. Cover and cook on HIGH setting for 4 to 6 hours.

This tastes great and is easy...
3 lb. Pot roast - any cut that you like
1 packet of brown gravy mix
1 packet of onion soup mix
1/2 c. flour
2 cups ginger ale (Not diet)
Place meat in crock pot. Mix together all other ingred. and pour over meat. Cook on low for 8 hours. Best gravy!!
I serve with mashed pot.
