I'm responding to you at the Orlando Airport. My family just finished up our vacation at Disney. We had the plan that included 1 table 1 quick service and 1 snack a day and it was soooo much food. I'm not complaining but I will be at the gym for the next month making up for it. There are so many choices at Disney you probably won't get tired of it. There are many, many more choices then just burger and fries. 1st check what resort you are staying at. We stayed at Coronado Springs. Our quick service restaurant was Pepper Grill and it was great. We had breakfast once, and dinner several times. There are lots of tricks that you can use with Quick Service also. We learned (at the end of the trip) that you can get the food togo and order 1 meal adult meal for kids to split. The quick service meals do not state adult or child. It says that you have to order a child where available but we had not problem. Also at Pepper Grill we could get a 14 inch pizza, drink, and 1 dessert. That would only count as 1 meal and 3 of us would eat it (and be full!!!) As far as snacks visit the candy shops. Cookies, Rolls (great breakfast ideas) and rice crispy treats are all snacks. Don't use your snacks for drinks if you can help it, its just not worth it. When you go to Magic Kingdom there is a QS in Tomorrow land and that you can get a 1/2 slab of ribs, 1/4 rotisserie, mashed potatoes, and green beans (plus drink and dessert) for 1 credit. My husband and I split it and still could not finish it!!!
If you are traveling with small children it would be nice to have the full service meals to go to character meals. These are nice because they come to you. The lines were really long to get autographs at the parks so if your little ones are into that it can be worth it!!!
Someone said that Wolfgang Puck express it a great use for your quick service and I would totally agree. I had a bacon wrapped meatloaf last night that I will be thinking about for a long time!!! Be careful though there are 2 Wolfgang puck expresses at Downtown Disney. One is attached to the Wolfgang restaurant and the other is on the Market end. The one on the Market end it much better!!!
To sum it up and end this long response I would say that the 2 quick service meal plan would be a great choice. Disney gives you lots of options to choose from so you should not get tired of the food.

ps Epcot's The land has a great Quick service option. My hubby had a tuna noodle salad that he would love to have again anytime!!!
