Our favorite of favorites is Cream Cheese Cookies. I used to make several Christmas cookies. After years of my husband saying, "This one is the only one you need to make as far as I'm concerned! I LOVE this one!" Sure enough, we're down to just this one. Our son helps me with the cookie press, and my husband and son help me with the dipping in chocolate. YUM!
CREAM CHEESE COOKIES
CREAM TOGETHER:
2 c. butter
8 oz. pkg. cream cheese
2 c. sugar
MIX IN:
2 egg yolks, one at a time
1 t. vanilla
4-1/2 to 5 c. flour
BAKE AT 375º, 7-10 minutes.
Melt 12 oz. bag chocolate chips in double boiler. Dip one end of cookie in chocolate. Place on waxed paper till chocolate cools/hardens.
NOTE:
FOR BEST RESULTS—hand roll & flatten each cookie (less edge browning)
FOR STIFFER DOUGH—add more flour (maintains shape more)
DON’T LET CREAM CHEESE GET TOO WARM—will cause flat cookies
Works well with cookies presses, too.
We use whole wheat in a lot of recipes but not this one. It cuts into the cream cheese flavor too much.
You can also put food dye in portions of batches to end up with green, red (looks pink), and white (looks creamy yellow). I used to love that as a kid! Now we just do the plain un-dyed color.
