I've honestly had the best luck with allrecipes.com, they have tons of really good, healthy and easy to make recipes!
I am looking for some easy dinner recipes to make for the summer.
Things like hearty type salads. Any meals that I could make ahead of time and then have ready to go at dinner. I do this with chicken salad frequently. I can make it during the day and my kids help me cut up the different ingredients and then at dinner time it's in the refrigerator and dinner is served within a short time. I usually have a vegetable type salad with it too. And sometimes I do the chicken salad sandwiches.
We like most vegetables, especially this time of year when they're all very fresh and tasty.
So I"m looking for similiar type recipes that I can prepare ahead of time and then dinner is simple.
Any tasty salad recipes would be great too. At least if I had the side dish (salad) ready to go, I would just have to prepare the meat and hubby could grill it.

We live in AZ so its HELL hot here and I don't cook at all in the summers. This is one of my families favorites and we each eat about 5 bowls every time I make it! Its also a potluck favorite and everyone always wants the recipe:
chicken oriental salad
dressing:
5 tablespoons apple cider vinegar
3/4 cup vegetable oil
3 table spoons sugar
2 Flavor packets form ramen noodles ( I use chicken flavored)
Mix in small bowl and refrigerate at least 4 hours ( Ive cheated on this time frame also..gone with as little as 2 hours)
salad:
1 package broccoli slaw (in bags in veg. section)
3 green onions chopped
noodles from 2 ramen noodle packages (uncooked and broken up in small pieces)
2 cans chicken
5 tablespoons sesame seeds
3/4 silvered almonds
Add dressing just before serving.
We also love tostadas. I get the bag of premade shells, refried beans heated in micro, shredded lettuce and cheese on top. If we have sour cream and guac we put that on there too with some hot sauce or salsa.
I make large batches of potato salad with everything thing in it under the sun, it's a meal in itself.
We love, Love, LOVE recipes that we find at both www.vegetariantimes.com and at www.eatingwell.com.
During these summer months we like to grill lots of different veggies to have on salads. You can also cook a big pot of brown rice, quinoa, bulgar or barley and have that be part of those salads. You can also use both of those ingredients in wraps along with hummus, avocado and sprouts. There is no end to the combinations that can be put together depending on how imaginative you are. (pre-cook ground beef, chopped ice berg lettuce, tomatoes, shredded cheese, kidney beans, can of corn drained, crushed tortilla chips, thousand island dressing. mix 2gthr when u get home..voila)
-Salad w/Louis Rich pre-made chicken strips (sold in lunchmeat area)
-BBQ pre-made burgers (quick), nuked canned corn
-Grilled fish (10 mins on bbq), nuked green beans, salad
-Albacore tuna on top of salad w/chopped red peppers, corn
-Tacos (cook grnd beef night before)
-Bean burritos
-Nachos (make huge platter w/all the fixings
-Sandwich night (all kinds of lunchmeat, hoagie buns, all the fixings)
