Dinner time around my house is hectic. That's why I love the cockpot. It's ready when you need to eat.
I really could use some new good and easy crockpot recipes. Tried and try. What's your favorite?

I like to make a big ole potroast. I put cajun seasoning salt pepper and garlic on the meat. Pile potatoes and carrots in with it. Maybe just a little worcteshire and some kind of liquid - not much - just like a cup of beer or coke or just water. That night I drain and thicken the liquid with cornstarch tp spoon over it. = Old fashioned, Sunday dinner, potroast like mom used to make.
Then I take the left over pot roast and veggies and shred it with 2 forks. Add bbq sauce and put up for the next nights dinner - schredded beef brisket sandwhiches.
I love 2 for one cooking. And when it's done in the crockpot, that's really cheating.

Just looked up Crockpot recipes today on Food network and made Paula Deens Mac and Cheese - everyone loved it. Thave a real nice collection on that web-site! Good Luck!

See if your grocer has Dorothy Lynch salad dressing. If so, pour if over frozen chicken in the crockpot and cook on low all day. Shred the chicken and serve over rice. SO GOOD, we eat this almost every week!

Another one we do almost weekly is:
Frozen chicken
Frozen corn
1 can black beans, rinsed
1 can petite diced tomatoes, with juice
1 packet taco seasoning

Cook on low all day. Serve over rice with cheddar on top.

I have my crockpot going right now with my Asian BBQ Pork wraps--
I LOVE THEM!!!

1/3 cup Hoisin sauce
1/4 Cup stir fry sauce
1 tsp sesame oil
1/2 tsp chopped garlic

1 pork roast

Put in crock pot on low for 6-8 hours or high for 4-5. shred and serve on tortilla. I add sour cream and cheese. Roll up and eat! Enjoy...

My easiest is pulled pork (or chicken). Put pork loin (or skinless boneless chicken) in the crock pot, pour barbecue sauce over, turn on low for 8 hours or high for 4-5 hours. Shred with a fork and serve on buns.

My favorite and the easiest one I have ever made...Crock pot chicken and dumplings! Make as little or as much as you want, just by adjusting the amount of your ingredients. Here's what I start with for my family of 6...

4 boneless/skinless chicken breasts
**you can cut them up or leave them whole, or even toss them in frozen, it all turns out the same :)

2 cans of cream of chicken soup
1 can of chicken broth
1-2 cans (or one bag of frozen) of whatever veggie you like
**we usually use a "regular" size bag of frozen peas/carrots mixture
1 tube of Pillsbury biscuits (the original small ones, not the big and flaky)

Toss everything in and cook on high for 4 hours. Quarter each uncooked biscuit and tos on top of the mixture, then cook for another 1-2 hours. The longer you cook after putting the biscuits in, the less "dough-y" they will be, but they'll also get a bit tougher the longer you cook them. You can add more biscuits to soak up more of the liquid to have a thicker mixture too.

Another Mom posted a little while back about easy dinners and another Mom, SammyJo, posted a crockpot recipe that I made for my family and they LOVED it. Here is her post:
If you like shredded beef sandwiches (like roast beef on a bun)...this recipe sounds gross...but is amazing...and great for potlucks and relatives coming over.
Take a chuck roast (any size), put it in the crockpot in the morning on low. Put a can of Coke and a package of Lipton Onion Soup Mix (or generic brand dry soup mix package)...if it is a big roast you may need two cans and two packets to cover it almost completely in liquid. The Coke tenderizes the meat, and mixes with the soup mix to make a CRAZY tasty meat (I know how gross it sounds). Leave it on low all day in the crock pot, and that night you will have shredded beef for sandwiches (we add cheese and a bun) and serve it with a veggie and fries.
I make a seasoned fry with frozen crinkle cut fries where I sprinkle them with dry Ranch dressing powder and bake in the over (then I use less salt, too)...They go great together.
You can then use the beef leftovers for vegetable soups and stuff.

Another idea is chicken salsa burritos It's super easy, fairly healthy, and really yummy. Here is the recipe:
Chicken Salsa Crockpot

3-4 boneless, skinless chicken breasts
1 jar chunky salsa
1/2 envelope of taco seasonings

Put all items in the crockpot and let go for a few hours. Shred chicken with a fork and stir back into salsa. Serve on tortillas (corn tortillas are my favorite) with sour cream, avocado, and shredded cheese.

Also another easy dinner is to throw some seasoned ribs and some BBQ sauce in the crockpot and let it go for a few hours. Steam some veggies and done! Sometimes I'll toss some cabbage mix and coleslaw dressing (I usually have some on hand as it's my favorite thing)- YUM!
I also will throw a rolled pork roast with some water and bullion cubes and some cut up veggies (carrots, celery, red potatoes) and when it's done I cut the string on the roast and break it up into big chunks and we have stew. A big loaf of italian bread is awesome with it.
I love my crockpot. I make almost everything in the crockpot! It's so easy throw some things in there and come back in a few hours and dinner's ready!

My mom makes a super easy chicken dish in the crockpot...

Frozen chicken breasts or tenders (no need to thaw, how great is that!)
Condensed Broccoli and Cheese soup

Place chicken in crockpot, pour condensed soup over chicken.
Cook on high for 4 to 5 hours, or on low for 8 hours.
The soup is like a sauce. I like to serve it over rice, but it would be great with noodles or a potato too. I'm sure you could substitute other flavors of soup as well. The amount of soup you use depends on how much chicken. For 4 people I would use 2 cans, for 6 or 8 people I'd use 3 cans.

Also, I just made the yummiest Italian Beef sandwiches the other day. Get some good sub buns from your bakery for this one.

Ingredients:
3 cups low sodium beef broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
2 (.7 ounce) package dry Italian-style
salad dressing mix (I used Zesty Italian and it was great)
1 (5 pound) rump roast (or chuck roast)

Directions:
1. Combine broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
2. Place roast in slow cooker, and pour salad dressing mixture over the meat.
3. Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork
4. After shredding the beef, put it back in the crockpot to cook an additional half hour to soak in the juices.

Since it was just me and my hubby, I only used a 2 lb roast, and I halved the spices and used just one packet of italian dressing mix and it was so yummy. Make sure you drizzle a little (or a lot) of the "gravy" on the bread, and you can add cheese if you like, mozzarella or provolone.

Chicken and mushrooms over angel hair pasta

1/4 cup white wine
1/2 package dried italian salad dressing seasoning packet
8 oz. fresh sliced mushrooms
1 can golden mushroom soup
2 tablespoons margarine or butter
4 oz. onion and chive cream cheese spread (1/2 a container)
2-4 thawed raw chicken breasts

Mix all ingredients except chicken and mushrooms in the crockpot. It's okay if it is lumpy. Add mushrooms, then chicken to the mixture. Cook on high for at least 4 hours. Serve over angel hair pasta.

Tips: you can modify this recipe easily. The mushrooms cook down a lot and add moisture to the sauce, so you can add more if you want. You can easily double the recipe or already have the ingredients on hand to cook it again in a week or so (because you 1/2 a lot of the ingredients). Add more wine, makes it more tangy. Add the cream cheese a hour before you serve will make the sauce more creamy. This is a yummy recipe, I've made it lots!

Crockpot cheeseburgers

1lb lean ground beef
1/4 c ketchup
1-2 Tbsp yellow mustard
1 tsp dried basil leaves
2 c cubed Velvetta (or any like it)
hamburger buns

Cook ground beef in a skillet until browned. Stir frequently to break meat up into small pieces. Drain.
Combine in crockpot with ketchup, mustard, & basil..mix well.
Top with cubed cheese. Cover and cook on low for 3-4 hrs.
Stir mixture gently. Serve on buns.

( I usually add some chopped onion in with the beef)
You can do many creative things with this...adding anything you like on a burger! Also tastes great using ground turkey too.
My kids love it :)

How Funny...The Chicken Salsa Crockpot that Amanda W recommended is awesome! We have had it three times since she posted it. THANK YOU FOR IT - New family favorite!

I took the shredded chicken out of the crockpot, added a couple scoops of the salsa it cooked in, a few generous spoonfuls of sourcream...we made this into tacos, burritos, walking tacos with fritos in a bowl, and the most amazing quesadillas (my 6 year old asked if he could take our leftovers to school to give to his best friend Brody because he "knew Brody and his family would love it"). I can't even imagine what Brody's mom would have thought when Brody came from school with a big tupperware container full of chicken meat and quesadillas :)...but it was a huge hit!!

The even better thing is if you make a huge bag of the chicken, you can store this stuff in the fridge, and put it into another dish every couple days.

package of stew meat
3-4 potatoes cut up in chunks
half an onion cut up
package of carrots cut up

boil stew meat for about an hr and then dump meat (and water from the pot you boiled the meat in) and everything else into crock pot. season well with garlic salt, pepper and while stirring - put half a small can of tomato sauce in the pot too and then set on high for 8 hrs....very good stew!

make sure you are stirring the pot really well when you put the tomato sauce in or your meat will have a red tinge to it when your done. its ok if that happens - still tastes the same!

One of my favorites:
Apricot Chicken
4-5 chicken breasts (I even put them in frozen!)
1/2 c Apricot Jam
1/2 8 oz bottle of Russian Dressing
1/2 envelope of onion soup mix
1 tsp curry

Cook for 4 hours on high or 6 hours on low. Serve with rice.
YUMMY!

My favorties are:

Apple Pork Roast

1 pork roast (2-3 lbs)
3 apples
3/4 cup sugar
2 Tblsp flour
1/2 tsp cinnamon

Cut aples into pieces and place in slow cooker
Mix sugar flour and cinnamon and cover pork with mixture
Place in slow cooker and sprinkle rest of mixture on top.
Cook on low 6-8 hours
Great with mashed potatoes

Slow cooker beef roast

1 beef roast
2 cans cream of mushroom soup
1 pkg dry onion soup mix
1 1/4 cups water

Mix cream of mushroom soup, dry onion mix and water
Place pot roast in slow cooker and coat with soup mixture
(You can add potatoes and carrots or other vegetable)
Cook on high for 3-4 hours or low for 6-8 hours
This makes its own gravy so it is great with potatoes

Chicken Tortilla MIx

1 lb boneless chicken thighs
1 can green chiles
1 can pinto beans
1 pkg taco seasoning

Cook in slow cooker on low 6-8 hours meat will shread with a fork
wrap in tortillas to eat
top with sour cream, cheese, and salsa
