Consider something bigger. We had a Passat Wagon and it was too small for 3 safely installed.
We are considering purchasing a Jetta wagon. I have done the "fit" and it seems possible, but we are expecting child number 3, and have a 4 yr old and 7 yr old. So the 7yr old will soon be out of her booster seat (about 1 yr) and then just 1 booster seat and an infant seat. Is it possible?

I have a jetta and can fit three carseats in the back. I have booster seats on the outside and a convertible carseat (which is huge) in the middle. It is a squeeze though and with the "baby" in the middle it can be rough on your back leaning in to put her in.. The kids are not uncomfortable though because they are all contained within their seats.
Yes. We had 3 car seats in a 2000 Ford Focus sedan. It was a tight fit, but because we had twins, we put our older daughter in the middle with her smaller booster seat and then had each of the twins on the sides. You may want to do it reversed in your situation--have the baby in the middle and then each of the older ones on the sides.
I did it in an A6 (same as a passat wagon), two britax marathons and a booster. The best thing to do is take all the carseats into the dealership and test it.
BTW I think my next car will be the TDI Jetta Sportwagon, loved it! And 50 MPG, can't beat that :)
