I have a very easy taco soup recipe that we have enjoyed... very quick and easy!
1 lb ground beef
1 can pinto beans (15.5 oz)
1 can whole kernel corn (15.25 oz)
1 can green beans (14.5 oz)
1 can ranch beans, undrained (15 oz)
1 can stewed tomatoes (14.5 oz)
1 can beer (I rarely used beer... just added 1 1/2 C water instead)
1 10 can tomatoes and diced green chiles (like rotel)
1 envelope taco seasoning mix
1 envelope ranch style dressing mix.
Cook ground beef and drain it. Rinse and drain pinto beans, green beans, and corn. Stir pinto beans and the rest of the ingredients into the pot, bring to a boil. Reduce heat, simmer 30 minutes.
I used to double this recipe... so yummy and easy! If you want, you can add chopped onion, garlic, whatever.
I serve with tortilla chips and shredded cheese if anyone wants to put cheese on their soup.
This basic recipe was in the Southern Living magazine way back in the late 90's.... a friend photocopied the recipe and gave it to me... it has held a place of honor in my kitchen since then.
