I have been learning a lot more about nutrition lately, and what I'm finding out is that anything with chocolate (it's the sugar) is NOT going to be healthy, so you might as well make something that is really delicious!! :)
Chocolate chip cookies may not be "fancy" enough for what you have in mind, but I promise these are the best cookies you have ever tasted and super easy to make; almost everyone who ever eats these asks me for the recipe. Even if this is not what you want for your event, you may want to keep this recipe for another time (and they are NOT healthy!:)
1 c. (2 cubes) butter, softened
1/4 c. sugar
3/4 c. brown sugar
1 pkg. (4 serv) instant vanilla pudding
1 tsp. vanilla extract
2 eggs
3 c. flour
1 tsp. baking soda
2 c. chocolate chips (or any chips of your choice)
Combine butter, sugars, pudding and vanilla, beat well. Beat in eggs. Combine flour and baking soda in separate bowl, then combine with butter mixture. Stir in chocolate chips. Spoon onto baking sheets (I prefer air bake sheets) and cook at 350 degrees for 10 minutes (a little longer if you prefer them to be more firm/crispy than soft/chewy).
