Great and Easy Fish Recipes

I'm on a diet that I make fish and a side of veggies for dinner each night. I'm trying to mix it up so I don't get tired of it. Wanted to see if anyone has a great fish recipe to share! I like to cook, but with 2 little ones, I have to be a little conscious of time. And I don't grill out...that is my husband's duty and he hates fish.

I don't eat fish, but my Hubby and kids do. One of his favorites is sooooo simple - I rub a bit of olive oil, salt and pepper on a piece of salmon, and bake it in the oven. I then heat up some jarred black bean and corn salsa (he likes the Paul Newman the best) and spoon it over it. I serve it with some brown rice. (I do the same for me with chicken breast - yummo!) The salsa has no fat and really low sugar, so it is super for a diet.

I found a great one on Allrecipes that I loved. MY FIRST TIME TO COOK FISH!

Ingredients
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
Directions
1.Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
2.In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
3.Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

I eat this about 3-4 times a week and I love it! I grab fresh herbs from Central Market or sometimes Walmart will have some good fresh ones. Keep them in a plastic bag covered with damp papertowel to keep them vibrant. Different herbs will change up the taste of the meal as well...so I keep a variety.

Take a piece of tinfoil big enough to make a pocket.
Put in a filet of any fish (I use haddock because I'm from Boston and to me it's worth the price! but I've been able to use Cod too) any fish will work
Cover with fresh herbs
Fresh Lemon Juice
Fresh Garlic
Salt/Pepper to taste
Scallion
Cover up tightly and put on a cookie sheet.

Now take tinfoil and make another pocket and half red bliss potatoes/diced onion/squash/zuccinni/peppers or any veggie, fresh garlic, herbs, olive oil and wrap tightly and put on the cookie sheet. I make one pocket of each per person and bake on 350 for 25 minutes. Potatoes or hard veggies like carrots may take a few moments longer.

#1 you've steamed your meal locking in natural flavor and nutrients
#2 no additional fat except olive oil/Feta
#3 All fresh ingredients and takes NO Effort! Just dice and throw in foil

When fish is done I top with a tsp of fat free sour cream spread over top, fresh diced tomatoes and a few crumbles of reduced fat feta cheese or grated parmesan. (for feta I pop back i the oven uncovered for 2-3 min until melted!)

We have Lemon Pepper seasoning and just spray olive oil (from a mister) on the Tilliapa and then shake the seasoning on it. Bake for about 14 minutes and your all set. Also, the Olive oil helps you get in the "healthy" fats you need.

Here is a tilapia recipe, easy and yummy.

4-6 tilapia filets, thawed (I buy mine frozen)
1 cup panko bread crumbs
1/2 cup butter, melted
lemon pepper

Preheat oven to 375. Spray a baking pan lightly with cooking spray (or use non stick foil)

I melted the butter in a glass pie dish, and in on a plate mixed the panko bread crumbs with lemon pepper. I didnt measure, just put in until it seemed good, probably around a teaspoon or more. Then I dipped the fish in the butter on both sides, then the bread crumbs, then put in the pan. When I had all the fish done, I patted more breadcrumbs on the top of the fish, then put in the oven for 12-14 minutes. Flaky and yummy!

kraftfoods.com has alot of fish recipes. I know I have a great one for herbed fish with veggies (wrapped up in a foil packet and baked) it is great- even kids liked that one, but can't find it right now. I know you use lemon juice and italian herbs (or just italian seasoning) frozen veggies, talipa or orange roughy wrap in foil packet and back. It is yummy... may have butter in it though???

A couple of not too expensive ideas.

Tilapia Filets covered in salsa and poached (cooked in oven). Either in a casserole covered or wrapped in foil . It's yummy, fast and easy. Takes about 5-7 minutes in 400 degree oven. It's done when fish is white and flaky.

My whole family raved about this parmesan crusted fish (I used Tilapia, because it is easy and cheap to come by.) You can also try panko crumbs for extra crispy fish. If you use the seasoned bread crumbs make sure you don't add any more salt.

We also eat fish tacos. Pam to keep the fish from sticking. Brown in pan with seasoning. I like to use Mexican (Lawrys, I think). Cut into small pieces. put on soft corn tortilla (heated in micro for a few seconds), top with cabbbage, onions and cilantro. We add tomatos too.

I've had pretty good luck with Epicurious.com and Foodnetwork.com. If you are looking for simple, with limited ingredients, try Kraftkitchens.com. My advice when you are checking on-line recipes is to read the reviews - people can offer some good advice on tweaking things.
