Fruit is always a good idea.
There are lots of good cereals on the market that are high in fiber and low in sugar, for those mornings when you don't have time to cook.
You mentioned scrambled or fried eggs. What about hard boiled? You can make them ahead of time.
Muffins are also a good choice. Add bran and fruit to make them healthier.
Whole wheat or whole grain toast with peanut butter.
