Don't bother! Trader Joes has sweet potato french fries that come frozen. Just pop them into the toaster oven.
Every time I try to cut a sweet potato to make fries, I feel like I'm going to chop my hand off b/c they're so hard to cut through!! I was looking into getting a french fry cutter but even the higher-end ones (close to $100) seem to get mixed reviews when it comes to cutting sweet potatoes. How do you cut through your sweet potatos to make fries?? Any tips would be great as my son loves fries and I'd prefer to make the homemade, baked healthy variety without losing a finger! Thanks!!

I had the same problem! Then I found my old Pampered Chef crinkle cutter. I use that thing. It makes neat crinkle cuts and certainly saves my hand! I don't know if Pampered Chef still makes it. Just be careful of your fingers, you don't want to cut them off!
You could always par-boil them so they become a bit softer and then cut them up and fry them!
Holy cow! No advice...Just be über careful--I watched my stepfather slice through his hand cutting sweet potatoes Christmas Eve O. year!
I use a good chef's knife. I cut them in half length wise and then do strips.
I start at the tip of the potato and rock the knife back. I place by hand above the sweet potato holding it on the outer edge. Hope that helps. It's hard to describe.
you just need a long sharp knife. (i use a steak knife) cut in half and then cut half again (down the middle then down the length of the potatoe) this will give the potatoe a flat surface and keeps it from sliding
Yeah we do it the old fashioned way, but it's a pain every time. I cut slides width-wise (i find it's easier than length-wise) and then cut those slides length-wise. Takes a while and it's still hard, but I still have all my fingers!
When is the last time you had your knives sharpened? I have found it makes all the difference with the sort of problem you are having.
I also use my Pampered Chef crinkly cutter. Works good on regular potatoes and sweet potatoes!
You can use a mandolin with the julienne attachment. We have an old one from Pampered Chef, which they've since updated and somehow made better, but ours works great. So much easier and quicker.

Not sure if you have a Trader Joe's anywhere near you, but if you do, you can get the sweet potato sticks pre-cut and they turn out great. My liitle boy just loves them.
What about cooking them for a few minutes in the microwave so they are slightly softer?
I use a mandolin slicer and cut them more like potato chips. We usually eat sweet potatoes instead of regular fries.
