Deep Dish Chicken Pot Pie -

2 Large boneless skinless chicken breasts, cut into 1” pieces.
1/4 cup Zesty Italian Reduced Fat Dressing
4 oz. (1/2 of an 8 oz. pack) Neufchatel/cream cheese, cubed.
2 Tbsp. flour
1/2 cup fat free reduced sodium chicen broth.
1 pkg. (10-12 oz.) frozen mixed veggies
1 refridgerated pie crust

1. PREHEAT oven to 375 degrees. Cook chicken in dressing in large skillet on medium heat 2 min. Add Neufchatel cheese, cook and stir until melted. Add flour, mix well. Add broth and vegetables; simmer 5 minutes.

2. POUR mixture into deep dish 10-inch pie plate. Arrange pie crust over filling; flute edges. Cut four slits in crust to allow steam to escape.

3. BAKE 30-minutes or until crust is golden brown.

This is my FAVORITE to make for families that I bring meals to and I make 2 at a time!

Here is what's for dinner tonight.

Pork chops and Cream of Mushroom sauce.( On a bed of rice)
P.Chops:
Brown a package of Chops (bone in preferred) in 1-2 tbs of butter. You want to get them just browned on both sides. Take out of pan and set aside for now.
Sauce:
Take a can of Cream of Mushroom sauce and add it to the pan. It will pick up all the flavor from the bits left over at the bottom of the pan...
Add a little water or milk to thin out but not to much. You don't want to make the sauce too thin or watery maybe 1/4 to 1/2 a cup (eyeball it) after it starts to pick up a simmer add the Pork Chops back in the pan with the sauce and finish cooking them off. 5-8 minutes or so.
Rice:
Just make your basic white or Brown rice and when it's ready add the rice to the plate and flatten a little and add a pork Chop and a little sauce.
My family loves this!!!!
( You can also use Cream of Chicken if you prefer)
Serve with a side of any veggies of your choice.

Good Luck!

Elaine

I love to cook & I also get lots of ideas from Rachael Ray, I know this sounds cheesey because she is the rage right now but she has lots of easy recipes that are pratical & things everyone likes. Here is my family's current favorite:
Cornbread Pizza:
mix up a package of cornbread just like directions & pour into a greased pie pan (Rachael used a couple of handfuls of corn in her mix but i skip this)
start baking like directions
while cornbread is baking brown up some ground beef (add onions or other pizza like toppings)
grate up a few handfuls of cheese
pull cornbread out of oven (it should only be about halfway done now) put toppings right on top of cornbread (i put a little spicy tomato sauce down before the toppings but it is not neccessary)
top with cheese
pop back into the oven for the rest of cooking time
my fam loves this!!

OK, I lived on this growing up because my mom said that me and both of my brothers LOVED it. It is easy to make.

1. Prepare a box of chicken rice a roni (she used the family size) and put it at the bottom of a baking pan.
2. Top with shreaded up chucks of cooked chicken (I have actually bought a rotisirie chicken at the grocery store and just pulled the meat right off).

3. Top that with a can of cream of mushroom soup.

4. Top that with shreaded cheese...don't use the fat free cheese...it has to be the regular cheese.

Put in the oven at 350 for about 20-30 minutes or until warmed and cheese is melted on top!

I go to Dream Dinners and LOVE it. It is very reasonable in cost and they have a different menu every month. You make an appointment and go in to the store. There are mutiple stations. You put everything you need for a main dish in the bag with a label and freeze until ready to use. I pull it out of the freezer in the morning and cook it when I get home.
