I Need Recipes to Get My Toddler to Eat More Veggies

Hi Moms,

I am looking for recipes that can help my toddler eat more veggies. I am wondering if anyone has some favorite recipes they could share? They could be as simple as mixing two things like carrots and apple juice.
My son is 15 months old and all he eats now are carrots and the occasional spinach in scrambled eggs which I am very happy about. I know he is going to be picky for a hile but I would like to have different things I can offer him to see if he'll like them.
It would be great if you also have recipes that are good for my husband and me too. Like a veggie loaf, a healthy version of corn bread, or any other recipes that are mainly made with veggies.

So What Happened?

Thank you everyone for the feedback and the recipes. My son has started to accept more veggies on his own. I have keept offering veggies to him and his skepticism is weaning.
I did get Jessica Seinfeld's book "Deceptively Delicious" and am waiting for the "Sneaky Chef" from my bookstore. I like cooking and baking and feel better now that I have more recipes.
I was also recommended the book "Child of Mine" by Ellyn Satter by my pediatrician and another friend. It has made everything around mealtime much happier.

I always used whole wheat pastry flour or oat flour when a recipe calls for all purpose. That is entirely up to you. I hope you have some winners here!

Sweet potato muffins

* 6 tablespoons butter, softened
* 2/3 cup sugar
* 1 egg
* 1 teaspoon vanilla extract
* 1 3/4 cup sifted all-purpose flour
* 1 1/2 teaspoons baking powder
* 1 teaspoon cinnamon
* 1/2 teaspoon nutmeg
* 1/2 teaspoon salt
* 2/3 cup evaporated or regular milk
* 1 1/2 cups peeled finely shredded sweet potato
* 2/3 cup chopped walnuts or pecans

PREPARATION:
In a large mixing bowl with hand-held electric mixer on medium speed, beat butter and sugar until light and fluffy. Beat in egg and vanilla until well blended.

In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened. Stir in sweet potato and chopped nuts. Spoon batter into greased muffin cups, filling about 2/3 full. Bake at 375° for 25 to 30 minutes, or until centers spring back when pressed with fingertip. Cool in pan on rack for 5 minutes. Remove from pan and serve muffins warm. Makes about 1 dozen sweet potato muffins.

ZUCCHINI BREAD

3 eggs
2 cups sugar
1 cup vegetable oil
1 teaspooon vanilla
2 cups coarsely grated zucchini (loosely packed)
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)

In the bowl of an electric mixer, beat 3 eggs until frothy. Gradually add 2 cups sugar. Stir in 1 cup vegetable oil and 1 tablespoon of vanilla. Beat until thick and lemon colored. Stir in zucchini.

In a medium bowl, whisk together to combine 2 cups flour, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1/4 teaspoon baking powder and 1 teaspoon salt. Stir dry mixture into wet mixture, stirring to combine. Add chopped walnuts or pecans, if desired.

Spray two bread loaf pans (approximately 8"x4"x3") with Baker's Joy, or grease and flour to prevent sticking. Pour batter into pans and level off with the back of a spoon.

Bake for approximately 1 hour or until done.

Allow loaves to cool in pan for 10 minutes, then run a knife along the sides to loosen bread and remove from pans. Cool on wire rack. Brush tops of loaf with melted butter while still warm.

Curried Nut Roast
What you need:

* 8 oz mixed nuts
* 1 tin tomatoes
* 1 green pepper
* 2 onions
* 3 oz breadcrumbs
* 1 clove garlic
* 1 teaspoon mixed herbs
* 1 tablespoon mild curry powder
* 1 egg
* Oil
* Salt & pepper

What you do:

Preheat the oven to 220oC, gas mark 7. Grease a large loaf tin.

Whiz the nuts in a food processor or blender for a few seconds. If you don’t have either, buy nuts already chopped or chop them finely yourself.

Remove the core and seeds from the pepper and chop it into small pieces. Peel and finely chop the onion. Fry the pepper and onion in some oil for about 10 minutes until softened. Mix the nuts, breadcrumbs, crushed garlic, herbs and curry powder together. Drain the tin of tomatoes and add them to the mix along with the onion and pepper. Season well and mix thoroughly.

Add the beaten egg to the mix to help bind it.

Pack into the tin and bake for 30-40 minutes until golden brown.

Serve it with salad or stir-fried or other vegetables, with a tomato sauce

Anna Burgers
What you need:

* 1 pepper
* 1 carrot
* 1 teaspoon olive oil
* ¾ cup red lentils
* 1 cup vegetable stock
* 1 cup tinned kidney beans
* 1slice bread, chopped finely into breadcrumbs
* 1 beaten egg
* 1 teaspoon paprika
* 1 teaspoon chilli powder
* 1-2 teaspoon soy sauce
* 2 heaped teaspoons tomato puree

What you do:

Remove the core and seeds from the pepper and chop it into small pieces. Peel and finely chop the carrot. Fry the pepper and carrot in some oil for about 10 minutes until softened. Add the lentils and stock, and simmer, with the lid on, for 10 minutes.

In a bowl combine the kidney beans, breadcrumbs, beaten egg, paprika, chilli powder and tomato puree.

Add the mushy lentil mixture and then put into the fridge for at least 30 minutes.

Flour your hands generously and shape into burgers (it will be sticky but firm). Fry in a little oil, or bake in a medium oven, 180oC, gas mark 4, for 25 minutes.

Serve with different toppings – try ketchup, onion rings, rocket, and beansprouts

This cornbread recipe calls for brown rice syrup, but you could use honey instead.

1 1/2 c whole-wheat pastry four 1/2 c milk of choice
1 c cornmeal 1/2 to 1 c water
2 to 3 teaspoons baking powder 1/2 c fresh corn kernels
1/2 teas salt 2 Tbs of brown rice syrup
1/4 c corn oil

Preheat oven to 350. lightly oil 9 inch square baking dish. Sift together flour, cornmeal, baking powder and salt into a bowl. In another bowl, whisk together oil, rice syrup, milk and 1/2 c of water. Stir into dry ingredients. Add more water if needed to create a velvety, spoonable batter. Gently fold in corn kernels. Spoon batter into prepared pan and bake 35 to 40 minutes.

I dont have any good veggie recipies, but here is a trick I would do with my little ones. Take about a tablespoon or two of frozen chopped spinach, from the bag, put it in the grilled cheese before you cook it. So it is a grilled spinach and cheese, my kids gobbled it right up.

Look online for a macaroni and cheeses recipe that uses 1 lb of butternut squash. There aqre lots of them. I used one out of a Rachel ray cook book and my kids gobble it up.

i had the same problem with my son when he was a toddler. I found if i cut the vegetables up small and put them in stews and soups this worked.

One thing that I did that worked for a little while was I bought the chunky vegetable Ragu pasta sauces. My girls ate those for a while until they got picky. Now I don't buy the chunky sauces, but I do grate carrots and other veggies into it. It's not much, but it helps.
Both of my girls will eat a salad with dressing. My 4 year old likes ranch and my 2 year old likes Ken's rasberry walnut. Neither eats every veggie in the salad, but they do eat some of them.
I can get them to eat the veggies off a supreme pizza, sometimes. If you make it homemade you might be able to hide more veggies by grating them into the sauces or hiding small pieces under cheese.

My grand daughter loves frozen veggies to munch on. If he eats mashed potatoes, I mash up any type of veggie and she eats that as well. Don't worry about it too much at this age.

Flip through the cook book Jessica Seinfeld just published called Deceptively Delicious. She is basically hiding all the good foods in her recipes so her children will eat them and not know they are. Easy, quick recipes. I think it is great. Good luck to you.

I've never made this, but I kept it because it sounded good. I'm just cutting and pasting here:

Recipe: Broccoli Balls
Ingredients:
1 C Cooked Broccoli (steamed until tender)
1 C Cooked Brown Rice
1/4 C Shredded Cheddar Cheese
Salt & Pepper to taste
1 C Whole Wheat Bread Crumbs
Canola oil in a spray or pump bottle.
Directions:
Heat broccoli, rice and cheese in microwave then place into food processor and process until mixture is thoroughly pureed and bound together. Season to taste. You may now shape the mixture into various shapes (see ideas below). Roll shapes in bread crumbs (or hold the items and sprinkle the bread crumbs all over the shapes with your hand) to lightly coat the outside. Place on a baking sheet lined with non-stick foil or a silicone baking sheet. Lightly Spray the shapes with Canola Oil. Bake at 350 degrees for 15 minutes --longer if shapes are larger.
Directions for Animal Shapes:
Mice shape - Make a triangle, but round out the edges. Roll in bread crumbs, then place flat on the baking sheet. Make eyes near the top third (of the front side) of the triangle by inserting a black bean (lengthwise) into each eye "socket". Spray with canola oil, then bake. After the mouse is finished baking, insert one sliced almond into each side of the top of the triangle head for the ears (pointy side into the head, fuller end out).
Use red bell pepper cut into a long skinny strip for the tail. Stick a little piece of red bell pepper into the pointy end of the face for the nose.
Caterpillar shape - make about 4 small balls (1 tbsp each). Make a 5th ball that's larger for the head. Roll the balls in bread crumbs, then place on the pan in the shape of the caterpillar. Insert a black bean (lengthwise) into each eye "socket", spray with canola oil, then bake. After the caterpillar is finished baking, insert two long skinny strips or red bell pepper for the antennas. You can also cut small "L" shapes out of the bell peppers to make pairs of legs on both sides. Insert an almond (on its' side) to make a mouth.
Koala bear shape - make a little, round mound (like a muffin top). Roll in bread crumbs, spray with canola oil, then place on the pan and bake. Once it's finished baking, insert the end of a walnut into each ear area (the 10 and 2 position of a clock). Place a kalamata olive in the middle of the face with the skinnier end pointing up. Use cream cheese to make two small circles (about the size of a blueberry) on each side of the kalamata olive nose--right next to the pointy top of the nose. Insert a black bean (lengthwise) into the center of each cream cheese eye.

Baked Sweet Potato Fries
Ingredients

* Non stick cooking spray
* 1 lb medium sweet potatoes
* 1 Tbsp butter, melted
* 1/4 tsp seasoned salt
* Dash ground nutmeg

Directions

1. Lightly coat 15 x 10 x 1 inch baking pan with cooking spray. Scrub potatoes; cut lengthwise into quarters. Cut each quarter into two wedges. Arrange potatoes in a single layer in pan. Combine margarine or butter, salt, and nutmeg. Brush onto potatoes. Bake at 425 degrees for 20-30 minutes or until brown and tender.

Here's an easy "muffin" recipe that my whole family enjoys and it couldn't be easier - just mix one boxed cake mix (vanilla, spice or carrot cake flavor - I use Betty Crocker or Pillsbury... whatever brand happens to be on sale) with one can of pureed pumpkin. Bake in muffin cups that have been coated in Pam at 350 for 20 min. As a treat I let my 3 year old sprinkle a few white chocolate chips on top, but you could also use walnuts or raisins. My son loves to help mix up the muffins and is more likely to eat them if he participates in the process. Good luck!

Hi,

I can't help so much with specific recipes, but some tricks that i have with my toddler are these:

I have started making all of my own vegetable broth and using it to replace water in all my cooking. this is very simple to do: when you cut up vegetables, simple save the ends of carrots, celery, outsides of onions, wilty spinach, etc etc and when you have a small container full (i use a two-quart container), put it in a metal pot on the stove and cover the vegetables in water. boil for about an hour. this makes a lovely broth and is a great way of both making your vegetables go farther, and adding vegetable nutrition into everyday things, i.e. rice, soups, bread... anything.
you can freeze and store broth for months. also, if you don't like the idea of using the leftovers to make the broth, you can make your broth from new vegetables and use whatever combo suits you. the only thing to know is that peppers leave a strong flavor, and rinds are not good to use.
also, i try to always mill up just a little bit of veggies and add it to whatever my son will eat. it usually looks like adding a small bit of milled spinach into soup or eggs, and even though its not much, it is more than nothing.

I have this book called deceptively delicious-it has recipes that you sneak fruit and veggy purees into.I'm sure you've heard this numerous times but it's true-continue to offer a wide variety of fruits,veggies,whole grains,beans and overall healthy fare.The more you offer it the more likely your son is to eventually take to it.Let him dip them into something-my son loves to dip broccoli into ketchup!hope this was helpful!~S.

Try pureeing veggies and mixing them into his dinner. This works really well in casseroles.
Also check out deceitfully delicious, she goes by that concept.
