Hi D.,
I developed lactose intolerance when I was 28 years old. I can honestly say that it was difficult especially if I went out to dinner or in a social gathering. I was always afraid to eat anything and if I by accident ate something with dairy well you know what happens.
After years of suffering and eventually the lactose pills no longer worked (your body builds an immunity to them after time). I decided to go completely off dairy. I started drinking soy or rice milk (best milk is Soy Dream or Rice Dream). I purchase it from Trader Joe's who has the best prices. As for cheese, I purchase Veggie Slices (which is also made of our soy). The best lactose free pizza is Soy Cheese Pizza by Amy's. Check your local grocery store or Trader Joe's if they carry it.
Last year my chiropractor introduced me to some digestive enzymes and pills to help build back the bacteria and enzymes I have lost which was the cause of me being lactose intolerant in the first place. Before trying any enzymes I would consult with your doctor and see if they can refer you to a gastrointestinal doctor to check to see if there's a reason for your intolerance.
Now after a year of doing the enzymes I have been able to eat cheese pizza and other dairy dishes from time to time. I don't eat real cheese stuff everyday just once in a while and I have been fine.
If you would like some yummy non-dairy dishes please feel free to contact me and I would be more than happy to send you my favorite recipes.
