Looking for Some Yummy Recipes

Hi mamas,
I'm looking for some new recipes to try for dinner & hoping to get some tried & true suggestions? I've tried different recipes off google but it's always better IMO to get them from someone who's made & perfected the recipe. :) Not looking for anything fancy, soups/stews, casseroles, crock pot recipes, etc.. are great, they tend to be the easiest/quickest. I'm also looking for out of the norm ones too, I thought it would be fun to try recipes from different ethnic backgrounds.. My friend is Puerto Rican & her husband is Jamaican, they always make THE BEST food from which they both grew up with, but they don't have receipes, they just do it by looks/taiste & everytime I ask them to try to write some down for me they insist I just come over & cook with them & learn by heart, but with 6 kids I just don't have that time! I'm just getting bored of the same recipes, so ANYTHING you've personally tried & love & that doesn't take more than an hour to prepare would be great! Thank you for any help! :)

Thank you thank you everyone!!!! I've already tried a few of these recipies & they've been great!! I fully intend on making every single one of these over the next couple of months.. :) I always say the more the merrior so if you can think of anymore or if you just happened to come across this post, feel free to add to the list! :) Thank you again everyone, you've been a savior! ;)

I get a lot of my recipes from http://thepioneerwoman.com/cooking/ Everything I have made from this site has been excellent and a demand repeat from my family. She walks you through step by step. Her pot roast is especially yummy.

Super easy chicken dinner is Pan roasted chicken.
You brown chicken in your frying pan with olive oil, and your favorite spices, and then add a little bit of water and a chicken flavoring, I use a buyon cube, and then add cut up potatos, and carrots, and cook until tender.
It simmers in the flavorings and makes it so tasty my husbands favorite.

Or how about sweedish meatballs, super easy.
Pork chops, in the crock pot. Chicken noodle soup in the pot.

So many things you can make in a crock pot.

Puerto Rican Soup

Whole Chicken
Onion- to taste
Garlic- to taste
Black Pepper- to taste
Can Stewed tomatoes
One Cup Cal Rose Rice
Potatoes
Bell pepper

Boil a Whole Chicken with Bullion for about an hour. Remove and cool so you can pull it apart. Continue boiling the Remaining Stock with Onion, bell pepper, Potatoes, rice and seasonings for about 20-25 minutes- add shredded chicken back in

Add cheese, hot sauce, tortilla strips/chips, or nothing at all and Enjoy

Creamy Chicken Tortilla Soup
From: Campbell's Kitchen
Prep: 15 minutes
Cook: 4 hours 15 minutes
Serves: 6

Ingredients:
1 cup Pace® Chunky Salsa
2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup
1 pound skinless, boneless chicken breast, cut into 1/2-inch pieces
2 cups frozen whole kernel corn
1 can (about 15 ounces) black beans, rinsed and drained
1 soup can water
1 teaspoon ground cumin
4 corn tortillas (6-inch), cut into strips
1 cup shredded Cheddar cheese (about 4 ounces)
1/3 cup chopped fresh cilantro leaves

Directions:
Stir the salsa, soup, chicken, corn, beans, water and cumin in a 4-quart slow cooker.

Cover and cook on LOW for 4 to 5 hours* or until the chicken is cooked through.

Stir the tortillas, cheese and cilantro into the cooker. Cover and cook for 15 minutes. Serve with additional cheese, if desired.

*Or on HIGH for 2 to 2 1/2 hours.

Creamy Chicken (or Turkey), wild rice and mushroom soup
I do not have measurements for this one...

Chicken, cooked (I use 3-4 breasts)
Chicken Broth (I use about 4 cans)
Celery (4ish stalks)
Carrots (1 small bag, sometimes two)
Onion (1/2, I like purple onion the best)
Heavy Whipping Cream (1 container, not super large, it's like a pint)
Mushrooms
Wild Rice (2 boxes of Uncle Bens Wild Rice w/ Seasonings

Cook carrots, celery and onion with some fresh garlic and olive oil. Cook until it's sauteed. Add 2 cans of broth and chicken. Simmer for about an hour-keep checking the liquid make sure it covers everything. Add rest of liquid, rice and seasoning and mushrooms. Cook for a bit then add the whipping cream. Simmer about an hour (or more).

I make both of these recipes just like it says to make it and they're always a big hit.

I trade the swiss cheese for mozzarella b/c I don't like swiss, but that's just personal preference. I also double the ingredients for the sauce b/c I like a lot of sauce! Also, if you don't have tarragon, marjoram is a good substitute.

I thought I'd give you the links instead of copying and pasting so you can have the pictures, plus they'll be easier to print.

Country Fried Steak
Ingredients
• 1 cup vegetable oil
• 1 pound round steak, cut into 4 (4-ounce) pieces
• Salt
• Freshly ground black pepper
• 1 egg, beaten
• 3 cups plus 3 tablespoons milk
• 1 1/2 cups plus 3 tablespoons all-purpose flour
Directions
Heat the oil in a heavy 9-inch cast iron skillet, to 360 degrees F. Using a meat mallet, pound out the meat. Season the steak with salt and pepper. Combine the egg with 3 tablespoons of the milk. Put 1 1/2 cups of the flour in a shallow pan and season with salt and pepper. Dredge the steaks in the flour, coating each piece evenly and tapping off any excess. Drip the steak in the egg wash, coating it completely and letting the excess drip off. Dredge again in the flour, shaking off any excess. Fry the steaks in the hot oil, until golden brown on each side, about 3 minutes. Remove and drain on paper towels. Season with salt and pepper. Carefully pour off the oil, leaving behind about 1/4 cup of the oil along with the brown bits. Over medium heat, add the remaining 3 tablespoons flour and cook for 3 to 4 minutes, whisking constantly. Add the remaining 3 cups milk, 1/2 cup at a time, whisking constantly. Bring to a boil, then reduce the heat to medium-low. Season with salt and plenty of pepper. Cook for 8 to 10 minutes, whisking constantly. The gravy should be thick enough to coat the back of a spoon. If it is too thick, add a little water to thin it. Serve the fried steak and gravy with mashed potatoes and green beans.

Creamy Cheesy Polenta
Ingredients ~
2-1/2 cups milk
1-1/2 cups chicken broth
2 tablespoons butter
4-5 cloves of garlic, pressed or minced
1 tsp salt
1/4 tsp pepper
1 cup plain yellow corn meal
1/2 cup shredded asiago cheese
1/4 cup grated parmesan cheese
Preparation ~
Combine the milk, chicken broth, butter, garlic, salt and pepper in a large saucepan. Bring to a boil over a high heat. Add the corn meal, whisking constantly until well blended.
Reduce the heat to low and cook 8 to 10 minutes, continuing to whisk frequently until thickened. Stir in the cheeses, mixing well. Serve immediately.
Makes 8 servings
Recipe Notes ~
Refrigerate any leftover polenta. To retain the creamy consistency, reheat on a slightly reduced power (about 80%) in the microwave.

A friend of mine made it for us right after I had my 2nd child and its so easy. I love the cocoa powder (makes it kind of like a mole) and its really easy to add some other hidden veggies and up the nutrition value- a grated sweet potato, frozen corn, frozen chopped spinach. We can always get at least two nights out of it too.

Hello, My family always enjoyed the usual meals, lasagna, spaghetti, pizza, stroganoff, etc. One that they really enjoyed was Shephard's Pie. I cook baby carrots, and make mashed potatoes. In the bottom of a 9 by 12 baking dish, I line the bottom with the cooked carrots. I cover the carrot with the mashed potatoes. On top of the potatoes I put shredded beef (I buy the canned beef and drain most of the gravy off), then I cover the beef with cream of mushroom soup (straight fromt the can) and top it with shredded cheese. I put it in the oven for about 20 minutes at 375 to 400 degrees. It is delicious!! You have all of your food groups in this and my family enjoyed it.

Ok, you will really like this one and it takes about 20 min. to prepare and about an hour to cook. It's a Rachael Ray recipe, she is my fave and I love that she is a no nonsense cook.
TURKEY STUFFING MEATLOAF
2 lbs. ground turkey
1 stuffing mix (like stovetop turkey flavored)
2 cups chicken stock
1 cup onion, chopped
1 cup celery, chopped
1 McIntosh apple, cored and peeled, chopped
1 egg
1 Tbsp. poultry seasoning
Salt and Pepper
Combine stuffing and chicken stock, set aside. Combine all other ingredients, then add stuffing mixture. Put in 9X13 pan, drizzle with a little olive oil. Bake at 400 degrees for 1 hr to 1 hr 10 min.
Your family will love it! You will be surprised at how good it is! It's a family favorite here! Have fun!

One fun thing that makes it easy to experiment is the "soup diet". Basically you make a huge pot of veggie soup and add different things to it every night. I think it is on Good Housekeeping. Here are some examples:
Minestrone
Mexican chicken soup
Greek fish stew
Southwest chili
Thai shrimp soup
Goulash
Red beans and rice

Both websites have great and easy recipes and they have ratings by each recipe for taste. I love B.C.'s spicy pot roast dinner. you do this in a crockpot and it's wonderful!!

2 lbs lean pork roast
2 cups of beef broth
8 small red potatoes, quartered
1 small onion, diced
2-3 cups small carrots
3 tsps. spicy brown mustard (mix into broth)

Put roast in bottom of crock pot. layer onions, potatoes, and carrots over the meat. Pour broth over everything and add a little salt and pepper. Slow cook for 8 hours. The meat is so tender that you don't need a knife and the broth tastes wonderful. If you take everything but the broth out of the crock pot before dinner then add a little cornstarch to the remaining broth to thicken it into a gravy.

next time you see one in the grocery store line you have to pick up a taste of home magazine! Tons of recipes, and I have never had one I didn't like! Also, good housekeeping recipes are usually winners. They often have healthy meals in minutes. You don't have to buy the magazine, just print recipes from website!!

I use allrecipes.com a lot...you can look recipes up by how much time it takes (less than 45 minutes, 30 minutes, etc.) I do the ones that have a 4-5 star rating and look at some of the reviews to get some ideas of perfecting it even more. They almost ALWAYS come out great...I figure if a bunch of other people can successfully make it...i should be able to too :). I also really like fortheloveofcooking-recipes.blogspot.com. All of the recipes I've tried there have also been very successfull :). As far as ethnic - I grew up in Hawaii and we made Kalua pork this past weekend...very easy...take a 5 pound shoulder/butt pork roast...1 tablespoon liquid smoke...and a couple tablespoons of sea salt...rub the roast down w/ the liquid smoke and sea salt and bake it at 325-350-ish for...5-6 hours...or just pop it in a crock pot....i've left it in on high for the whole day...it doesn't burn or anything...just gets to where it falls apart even more :)
