Hi. When I was pregnant with my son...almost 6 months now I had gestational diabetes. I totally changed my eating habits and lost 40 lbs during my pregnancy...I have since lost 20 more but gained 10 of it back. I am just looking for some low carb recipies that are easy to make that I can enjoy because the low carb thing is what did wonders for me, but I just get tired of the same old and need some variety. Any recipies would be helpful.

Hi E.,

The low carb diet worked wonders for my husband and I too. He had lost 60 pounds and I lost 40. However, between moving to a new state, remodeling the kitchen, eating at the in-laws more often, and then having a baby, I have gained back much of that 40. And I have tried getting back on the low-carb diet a few times and I'm struggling with it because I need variety too. I do have some great recipes that I'd be glad to share with you and perhaps you have some for me too. I'd love to talk to you and we could help each other out. Hi there- I have also been doing low carbs for a while now and it really works good for me. Are you vegetarian or do you eat meat? I don't really have any specific recipes but could tell you about what kinds of things I make for myself.

I would recommend Suzanne Sommers diet books. They are all based on the low carb concept, and have plenty of recipes. I believe she also has a separate cook book. Good luck to you!

I know you said low carb, but I just wanted to share what worked for me. I am 5ft7in Before I became pregnant I weighed about 180 pounds, after the pregnancy I weighed 196. When my daughter turned 1 in september, I decided it was time for me to loose the weight. I joined weight watchers. Since september I have lost over 44 pounds and am still loosing! 140lbs is my goal (I haven't weighed 140 since junior high school) and I am 12 pounds away! Its soooo easy and fun! You just keep track of the points system and weigh in every week...I didn't even attend their meetings, because my little girl would run wild. I know if it worked for me, it can work for anyone! Anyway, I just wanted to share with you. Good luck!

My husband and I are on this diet too. We eat a lot of chicken, pork and occasionally red meat. Last night for dinner we had chicken with a vegetable mixture of cabbage, zucchini, summer squash and broccoli covered with pepper jack cheese sauce. For desert we had some frozen strawberries. I try to add tons of flavor to our meals so that we don’t feel like we are missing something. I make omelets with diced tomato, cilantro, green onion and garlic similar to a Pico de guiro mixture.
Another problem for me is sweets, I need them. One of the things I do quite often is take heavy whipping cream and add splenda and Hershey’s baking powder to taste and blend it until its almost butter. Then when I need a sweet fix I have a couple spoonfuls. It’s very satisfying. Also any desert that does not call for flour or too much fruit can be made low carb; chocolate mouse, chocolate soufflé and some cookies that use egg whites and almond paste. If you are a desert person I would suggest going and picking up a French cookbook they have the best deserts and they seem to be the easiest to convert.
When you need a filler for meat such as meat loaf use ground flax seed. It is super good for you and tastes good too.
