my husband is in BLET school, and they have 6 weeks left. They all have become like a family and i thought that it would be nice to make some stuff for them to snack on. I thought i would make one "snack" a week...... since they are all in there 20s, i want to make some stuff thats easy but more adult than what you would make for a kids class. So i thought about muffins and cookies, but i really would like to impress. so i am looking for any recipes that would be impressive but easy to make and not break the bank.

any suggestions would be appreciated......

What can I do next?

I'm making these for the grownups in the house on Halloween, but they would be good all throughout fall. It makes 12 so you would need to double the recipe ~ Caramel Apple Muffins:

My favorite are Oreo Cookie Balls, easy to make and they are a finger food!

1 Bag regular Oreo Cookies
1 Bar Cream Cheese
1 package chocolate chips (you can get creative and do mint chocolate chips or peanut butter chocolate chips)

Place the Oreo cookies in a plastic, sealable bag and smash them to smithereens. Get out all your aggression! I use a meet tenderizer and I double bag it.

Put the bar of cream cheese in the bag and smoosh it around until the cream cheese is well mixed with the Oreo cookies.

Take out a scoop of Oreo cookie/cream cheese mix and roll it into a ball. I place each ball in the cup of a mini muffin pan. You can make them any size you want, I go for one you can eat in 2 bites.

Freeze the balls.

Melt the chocolate chips in a pan or the microwave. Sometimes I add a little bit of canola oil to smooth the chocolate. Dip the frozen Oreo balls in the chocolate and then place on waxed paper on a cookie sheet or back in the muffin tin.

Keep refrigerated. Enjoy! They go fast!

For more complicated but sure to "impress" here's how to do a fruit bouquet. Serve with a fruit dip on the side:

For easier on the same train of thought, a sliced fruit and fine cheese platter or veggie platter with dip is always easy and classy.

For a gourmet twist, serve a sliced homemade or bakery artisan loaf of sweet bread, bagels or muffins with a home made fruit butter spread or flavored cream cheeses on the side.

Here are some fruit butter recipes:

Here are some flavored cream cheese recipes:

Flavored cocoa (cinnamon or orange zest are good) and an assortment of teas make nice hot beverages to go along with any snack during cool weather. If you have a thermal decanter, cute marshmallows, flavored honey, and some paper cups, you're set.

I made rice crispy treats for a group of adults and they loved them. Took them right back to their childhood.

I find that most adults really love the snacks of their youth! Don't worry about being all sophisticated. Rice krispie treats are always a hit with the adults at my family reunions. Brownies, cookies - I think you're on the right track.

Sausage and Cheese balls are a nice (non-sweet) snack.

Mix together 3 cups of Bisquik, 4 cups grated cheese, 1 lb. cooked ground sausage, plus 2 TBSP. water. Roll (squish, really) into balls and place on a cookie sheet. Bake in the oven on 350 for about 15 minutes (or till golden brown). They are delicious!

My husband loves bacon wrapped smokies,I cut the bacon pieces in half, wrap the piece of bacon around a smokie, secure it with a toothpick, put them in a foil lined baking pan, sprinkle a bit of brown sugar over them and bake them at 350 till the bacon is done.
Another one we like is bacon wrapped jalapeno peppers
Cut the jalapeno peppers in half, discard all the seeds and membrane, fill the peppers with garden vegetable cream cheese, wrap them with bacon, secure the bacon with a toothpick and bake them at 350 till the bacon is done.

spinach dip in a hollowed-out sourdough bread - get the recipe from the Knorr Vegetable Soup Mix package (it's something like 1 box frozen spinach, thawed, chopped green onions, some mayonnaise, and the soup mix), with sliced baguettes on the side.
