I was as bored with my son's lunches and snacks as he was (14months old) so I went to our school district's website and printed out the school lunch menu.

It takes a lot of the guess work out of the question "What should we make today?!?"- there are 20+ ideas for each month! I dont follow it exactly (some of the stuff seems a little lacking in nutrients!) but it gave me some good ideas to work from and now my son seems to like lunch/snack times a little more with the added variety.

He should be able to eat everything you cook for dinner for the rest of your family just in smaller toddler size bites. This is also a great way to avoid having a picky eater or becoming a short order cook.
Here's a few ideas though for lunches and such..

eggs
lunch meat
grilled cheese
crackers,meat,cheese
pasta
mac/cheese
spaghetti
toast
waffles
pancakes
chicken nuggets
pizza
(these are all things my daughter could eat around age1 and what was offered at the daycare I use to work at after they were off babyfood in a jar)

I have a one year old who eats almost everything we eat for dinner. As long as the food is cut small enough they eat just about anything. My son has about 9 going on 12 teeth right now.
Here are some of the many foods my one year old eats:hamburger rice hot dish, burritos, hamburgers, hot dogs, chicken, beef roast, spaghetti, meatballs, fresh -grapes, strawberries, oranges (he loves these beyond belief), raisins, canned fruits my son loves too, pudding, veggies (my son eats almost any steamed vegetable -corn, carrots, green beans, peas, mixed - have not done broccoli or cauliflower),lasagna, mashed potatoes, hash browns, mac and cheese, chicken Alfredo & other pasta dishes, pasta salads, pizza. You name it he will try it. I had him to the pediatrician yesterday and was told what I am doing is perfect no changes need to be made. I was worried he was eating too much of the whole foods. the doctor said no way "you are just very blessed to have such a easy going kiddo. He is doing GREAT". Just avoid nuts, eggs, peanut butter and honey until he older.

I should mention that my son has never really eaten regular baby food. His foster family fed him regular food pureed and in small bites since he was months old. So when the international adoption was completed and we brought him home it was much different from my first biological son 8 years ago. My 8 year old back then had food texture aversions and was finally ready for baby cereal at 1 years of age. So my 1 year old seems like my older son at the age of two.

I hope this is helpful. I cut the food very small. My son does not like to be fed by us. He loves to feed himself so finger foods are his favorites. He even loves to try to drink from a regular cup. It usually gets him wet but we still let him try. He will even try to take silverware from us to feed himself. Only thing is he tends to miss the mark 90% of the time. It is a riot to watch though.

Good luck experimenting. They let you know if they like it and/or are ready for certain foods.

I feed my son (2 yrs old now) almost everything I make for the family. I did notice though if I put more than one or two foods on his plate, he gets overwhelmed and won't eat anything. if he's really distracted, I have to hand him one thing at a time, one bite at a time or he forgets to eat. (My sister uses that 2nd technique with her son too.)

Check out Super Baby Food by Ruth Yaron. LOTS of healthy ideas in there.

Have you tried foods such as lentils or navy beans? My daughter loved them cooked with rice. You could add cooked, finely diced carrots also. I seasoned with a tiny bit of sea salt, garlic powder and basil.
My daughter used to love avocados too but began to tire of them. I started mashing them and putting them on top of toast and cutting into bite sized pieces- she loved that!
It's hard to come up with new ideas. Good luck!

He can eat whatever you make for dinner, as long as its not super spicy or too hard for him. Just make sure its cut up into little bites and let him eat what you make! He'll love it.
