Meal Ideas to Accomodate Allergies

Hi there ladies,

I was wondering if you could help me with some food/meal/snack ideas. I, myself, have a bunch of food allergies, many just recently found. I have run out of meal and snack ideas, and am getting tired of the same things. Please Help!

I am allergic to turkey, chicken, seafood, pineapple, corn and its by products. I also can't have foods with alot of acidity like pasta sauces and citrus. I can be a pretty picky eater too. Such a combination LOL.

Any ideas would be much appreciated! Thanks! :)

Hi T.,
Here are some idea based on what I like. For snacks I do the trail mixes (nuts, granola, dried fruits. To change things up for breakfast, I do the Dole Natural Fruit cups (find them in the produce section) and a single serve container of cottage cheese. If you are ok with yogfurt, I just tried the Greek yogurt with honey, Oika I think it is called (or something like that), Peanut butter & banana is another fav of mine. For meals I like stir frys. You can do any protein (meat or pork in your case) and just buy the bag of frozen veggies with any kind of stir fry sauce you like and mix it with brown rice. It is yummy. I know food can get very boring and added to that your restrictions I would imagine it is ten times as hard for you. Good luck.

You might find it helpful to check out some Gluten and Casein Free cookbooks, either online or on amazon.com. Two that we have that I think have some good recipes are The Kid-Friendly ADHD & Autism Cookbook and Special Diets for Special Kids. While you're not a kids and you don't have ADHD or autism, these cookbooks are designed to help people who have multiple food allergies find delicious and nutritious things to eat. You might also want to check out or talk to some of the people who work at Natural Options, the health food store on Broad Street here in Grove City.

Quiche is an option. You can make it with ingredients that you prefer, eat it warm or cold, and for any meal of the day.

Use a deep dish pie crust (frozen or homemade) or philo dough
Fill with a mix of your favorite ingredients, add cheese(s) of choice, and beated eggs.
Bake on 350 until fork comes clean.

Suggestions:
bacon, ham, chicken, turkey, spinach, mushrooms, tomatoes, broccoli, asparagus, pine nuts

My favorite is spinach, bacon, mushrooms with
feta and shredded jack cheeses.

snack ideas ////// some old stand bys come to mind.
Ants on a log (celrey with peanut butter and rasins or even cream cheese.
Cream cheese and bologna swirls- spread it out on a piece of bologna lunch meat and rool up. slice and pop in your mouth.
I am not sure about the corn by products and what that entails, but can you have jello? Finger jello is a great snack and you can do sugar free.
I also love to wash grapes and pick them off the vine. before they dry, put them in a ziplock. Pour in a box of grape jello (the kind with the sugar) and freeze the grapes. eat them frozen. Talk about yummy! and fat free.
smoothies made with frozen / non citrus berries with apple juice are also a favorite at my house.

do you like kelbassa? that can be yummy on the grill

Pork chop recipie I like- pork chop with bone in, top with lemon, onion, ketchup. and brown sugar cook till pork is done about 45 min. Scrape the lemon, onion ketchup mixture off and eat. It will leave the pork with a refreshing sweet flavor, and the acid from the lemon should not be an issue since you are not eating it.

I could probably come up with a few more if given time....I am not sure what you are eating everyday now? If you still need Ideas when this is all through let me know and I will try to come up with some. :-)
It took me a year to fugure out I had a peanut allergy....A year of throwing up till I would have to be admitted with dehydration. I know how serious and frustrating these allergies can be. I fell for you having so many!

I would look for blogs online. With Celiacs, I've found several that have recipes and/or meal plan each week. A friend is allergic to eggs and found the same thing. Another friend's child is allergic to several things and also has luck.
