I have diabetics all throughout my family. It's not as bad as most people think depending on what type of diabetic they are. Some can eat chips and carbs without too much trouble. They just have to check their glucose levels.
Beyond that, we carry an energy drink that is delicious but has no carbs or sugar (Great for diabetics!). It's called XS and comes in 8 flavors - plus a couple more without caffiene. It's distributed through Quixtar powered franchises. If you don't know a Quixtar distributor and want to try some - give me a shout.
I also worked with a diabetic that would go to "Wild Oats" and load up on diabetic friendly snacks. He usually carried his own so as not to put pressure on his friends.... so just enjoy her company -- she might bring her own snack.

is your friend a type one, or type two diabetic? if she is a type one, she can have almost anything, with in reason... my sister is a type one. Veggies are good, and so are starches because they raise the blood sugar over time, not suddenly like some sugars do! If she is a type two, each person has different diet restrictions. for both, diet soda is the greatest thing out there! I realize this is too late for this meeting with your friend, but maybe it will help for next time.
