Skinless chicken breasts, on top of black beans, diced tomatoes, and diced onion. Seasoned with salt pepper and garlic pepper. Bake about 45 mins. Serve with brown rice and fresh vegies. Cant get any easier than that!! My picky family loves it. Hope it works for you too!!

hey N.!

A few of my families favorites are
1. Homeade pizza: Boboli pizza crust, spagetti sauce (get the kind with mushrooms in it if they like that), sprinkle shredded mozarella, and add pepperoni. Bake for 8-9 minutes, and there you go. The kids like it, they can help make it, and you can use whatever toppings you like. Boboli even has small individual size pizzas for everyone to make their own.
2. Shake and Bake has a Chicken Parmesean mix. Use Chicken tenders, shake and bake, add mozerella cheese when baking, make whatever pasta and sauce, and there you go. It takes about 20 minutes, and my family loves it.
3. My kids love baked salmon, with coconut rice and steamed brocolli. It is a 20 minute meal that is very healthy. Use the Thai rice with 1 part water 1 part cocunut milk. It makes the rice a bit creamier. Bake the fish 10 minutes (1lb usually is enough) on parchment paper, sprinkle a bit of herbed bread crumbs, lemon slices, and fresh rosemary. This is one I tried, and suprisingly, everyone eats everything.

My favorite (and my kids') is just broun some ground beef or turkey and add some brown gravy. I just buy the gravy in the jar, I like the Pepperidge Farm brand. You can add some canned new potatoes or other veggies. My kids like to put a little ketchup in it. Also I bake some chicken breasts with fresh lemon juice and seasoned salt or Mrs. Dash wrapped in foil with potatoes, carrots, and snow peas or green beans. Finally, the mexican favorite : arroz con pollo (rice with chicken). Just brown some chicken; either thighs or legs or both; and then add the rice and some ground cumin, minced garlic and black pepper. Then add the water; just enough to cover the chicken and rice and then add some chicken bouillon to taste. Boil then let it simmer for about 10 minutes. You can do this one on weekends as a real treat for the kids, and the 3-yr-old can help by pouring the water or adding measured rice with your supervision, of course!

This is GREAT! I've always thought we could use a recipe exchange here. I'll give 3 of my 30-min meals here and then I think I'll snitch a couple (or more) from the previous posts!

1) Easy Salisbury: 1 lb lean hamburger, 1 Tbs dried onions, 3 Tbs Worsteshire sauce, 1 large egg, cracked black pepper to taste. You'll also need one package brown gravy mix and one small can of mushroom pieces. Mix meat and seasonings together, then add egg - incorporate well. Form 4 patties and brown in a medium skillet turning once. Once the patties are 90% done, mix the gravy according to package and add to skillet. 3-5 mins on simmer and you have it! I add the mushrooms right before serving so they don't get overly tender.

2) Steamed Talapia and Hazelnut rice: I LOVE to cook and I LOVE to eat, so I was skeptical of this "healthy and organic" meal when it was presented to me, but it has become a favorite in our house. You'll need a glass dish and a food processor (makes chopping hazelnuts much easier). 1 lb Talapia filets, 1/4 cup honey teriyaki marinade, 1 box Rice Roni "Nature's Way" Long grain and wild rice, 1/3 cup chopped hazelnuts, handful unsalted toasted sunflower seeds. Lay out the fish in a shallow glass dish and cover lightly with marinade. Make rice according to package directions, but add the chopped hazelnuts in with the uncooked rice. The fish cooks very quickly, so it's a timing talent! Warm a large skillet on medium, add just enough oil to coat the bottom. Carefully lay the filets in the skillet, to cover the bottom of the skillet. Reduce to simmer/low temp and cover. 5-7 mins the fish is done (check for any opaque) Dish up fish and rice and sprinkle with sunflower seeds. You're an instant gourmet in less than 30 mins!

3) Chicken fingers: Sometimes kids will eat the same ol' same if it's just in a different shape. I take chicken tenderloins and cut them down the middle before cooking - making chicken fingers. Then I use the single serving tupperware cups to put different dipping sauces in. Marinara, honey mustard blended with plain yogurt, salsa, guacamole... the possibilities are endless. Sometimes we have an entire "dipping meal". My kids love dipping nights because they get to pick their own combinations of veggies and sauces: Carrot sticks, whole wheat bread sticks, chicken fingers, celery, chinese cabbage, cucumber, etc.

1: Snickers salad - can of mixed fruit (drained) or you can use fresh fruit chopped into bite size pieces. King size snickers bar (2) split down the middle then cut into bite size pieces - mix into fruit. Add 1/2 tub fat free cool whipped or other whipped topping - mix together.
2: Boneless, skinless chicken breasts split open - 1 deli thin slice of ham and provolone cheese. Fold chicken like a sandwich then fry til done in olive oil or on grill. Serve with a salad, potatoes, rice or your favorite side dish.
3: Tuna shells: buy the big shells and cook as directed. Mix tuna with finely chopped celery, shredded cheese and mayo. Stuff into shells - place in shallow baking pan. Pour jar of alfredo sauce over the shells sprinkle with more cheese. Bake 350 for about 10-20 minutes.
4: Leftover turkey: put turkey and stuffing in a food processor for a few minutes. Shape into patties and coat with bread crumbs (the finely crushed variety) then pan fry in olive oil just a few minutes. This can be done with leftover salmon as well.
5: Tuna cheese dreams: mix tuna as you would for cold sandwiches spread on one piece of bread top with slice of cheese. Place on cookie sheet bake until cheese melts.
6: Fried chicken: use chicken strips - coat with flour mixture (flour and seasoned salt - usually enough to see in the flour) I fry in olive oil.
My family enjoys all of the above and most don't take long to do. Even the stuffed chicken will cook in 20 minutes. I'm sure I have more but these are off the top of my head. I hope you try and enjoy!!

one of my familys favorits is made with cambell soup i take one can on cream of chicken the low fat kind four chicken breasts a bag of mixed veggies and rice. here is the recipe: one can cream of chicken 98% fat free 1 1/3 cup water 3/4 cup uncooked rice 2 cups mixed vegeies 1/2 tsp onion powder 4 boneless and skinless chicken breasts and 1/2 cup of cheese. mix all of the rice veggies water soup and onion powder in a 13 x 9 baking dish then top with chicken bake at 375 for 45min till done then top with cheese its really good my daughter loves it and she is a picky eater. good luck.

I buy the bulk bag of chicken tenders and grill them or slice them in 1/2 and make fried chicken tenders with brussle sprouts or baked french fries. My daughter is three and loves fresh fruits and summer sausage with some cubed cheese and crackers.

We also make a casserole with mild rotel tomatoes, rice and grounded beef.... I cook it all on the stove the combine it in the pot where I browned the beef at (drain the beef of course) add 1 can of tomatoes and top with cheese, melt and mix well - my daughter and my nieces love this. normally we make some sort of bread to go with it... my daughter prefers the cresents.

I have a cook book called the four ingredient recipe book, it is actually 3 cookbooks put together into one and each recipe really does only call for 4 ingredients, most of what you already have at home. I love this cookbook and every recipe I've made is delicious! My kids also love cooking out of it. You can buy them online. I got this at the gym today and I have six kids and they all loved it.. talk about quick and easy.. YEAH... chicken breast dip in egg... crunch up onion crunch things.... oh what are they called??? there in a can..... cook it for 30 minutes, it has NO oil in it and it taste kind of like fried ____@____.com

I love to try new recipes. What I do, is if I think of a certain dish or dessert that I want to make, I go to google.com and type the name of it in the search box. For example, if I wanted to browse new recipes for beef stew, I would put "free recipes for beef stew" in the search box, or "free Mexican recipes"....etc. I have found many, many recipes that way. I also check out cookbooks at the library, and copy down the recipes in the books that I like, before I turn them in.

Try Taste of Home magazine. You can find it at any bookstore or even HEB. Right now they have a kids edition on the stands. I like this magazine because all the recipes are submitted by readers, no articles or book authors trying to sell their over priced items. It is real food and most of them are from moms who definitely understand what it feels like to fall into a cooking rut and also be short on time or ingredients. Also, all of the recipes can be torn out to save in a recipe box. Good luck.

HI this one is very fast... get ground meat and shape them into small balls, sautee them in butter or oil then add one-two frozen spinach bags(break them with a back of a spoon before opening the bag to break big lumps) as is without defrosting add salt and one cinnamon stick(remove it when done). Leave them on medium heat without covering stirring them from time to time until you feel that they are cooked. Seve them with rice and yogurt on the side. It's so good and nutritionous.

i am a mom of 6.when my children were still in high school,they were very active and it kept me running after them a great deal of the time. i would highly recommend using a crock pot. i used mine to make pot roast or brisket or chicken as well as stews,chili,or things like the sauce for stroganoff,and then you just need to cook up the pasta and add a salad

When our children were small, they loved salmon croquettes made with canned salmon. I just drained it, took of the skin and took out the bones (though you can crush them for added calcium), mixed in a little minced onion, and egg and some cracker crumbs. Roll them into balls and flatten them. Put them on a grill or in a skillet and brown them in a small amount of oil or cooking spray. Any kind of vegetable or salad is good with them. Leftovers can be used for sandwiches the next day. My elderly mother loved this, too.

More recently, I have cooked a piece of marinated salmon that I get at Costco. Take the skin off AFTER it is cooked and cooking only takes about ten minutes. I will have already cooked a cup of brown rice in a large pan the exact same size as a large skillet. And, just before the rice is completely done, I add a package of frozen green peas with pearl onions. I used the pan rather than the skillet because it makes a nice serving piece at the table. With my spatula, I gently break up the salmon and lift it onto the rice and green peas. It looks nice and is very tasty. I do lightly salt or use a bit of Tony Chachere's seasoning in the rice but mostly the salmon gives enough flavor. This one dish meal is easy to prepare and clean up is easy. You may need to double the recipe for a larger family. B. K.
