This is GREAT! I've always thought we could use a recipe exchange here. I'll give 3 of my 30-min meals here and then I think I'll snitch a couple (or more) from the previous posts!
1) Easy Salisbury: 1 lb lean hamburger, 1 Tbs dried onions, 3 Tbs Worsteshire sauce, 1 large egg, cracked black pepper to taste. You'll also need one package brown gravy mix and one small can of mushroom pieces. Mix meat and seasonings together, then add egg - incorporate well. Form 4 patties and brown in a medium skillet turning once. Once the patties are 90% done, mix the gravy according to package and add to skillet. 3-5 mins on simmer and you have it! I add the mushrooms right before serving so they don't get overly tender.
2) Steamed Talapia and Hazelnut rice: I LOVE to cook and I LOVE to eat, so I was skeptical of this "healthy and organic" meal when it was presented to me, but it has become a favorite in our house. You'll need a glass dish and a food processor (makes chopping hazelnuts much easier). 1 lb Talapia filets, 1/4 cup honey teriyaki marinade, 1 box Rice Roni "Nature's Way" Long grain and wild rice, 1/3 cup chopped hazelnuts, handful unsalted toasted sunflower seeds. Lay out the fish in a shallow glass dish and cover lightly with marinade. Make rice according to package directions, but add the chopped hazelnuts in with the uncooked rice. The fish cooks very quickly, so it's a timing talent! Warm a large skillet on medium, add just enough oil to coat the bottom. Carefully lay the filets in the skillet, to cover the bottom of the skillet. Reduce to simmer/low temp and cover. 5-7 mins the fish is done (check for any opaque) Dish up fish and rice and sprinkle with sunflower seeds. You're an instant gourmet in less than 30 mins!
3) Chicken fingers: Sometimes kids will eat the same ol' same if it's just in a different shape. I take chicken tenderloins and cut them down the middle before cooking - making chicken fingers. Then I use the single serving tupperware cups to put different dipping sauces in. Marinara, honey mustard blended with plain yogurt, salsa, guacamole... the possibilities are endless. Sometimes we have an entire "dipping meal". My kids love dipping nights because they get to pick their own combinations of veggies and sauces: Carrot sticks, whole wheat bread sticks, chicken fingers, celery, chinese cabbage, cucumber, etc.
