New Tomato Recipes

I have some beautiful yellow heirloom tomatoes I grew and other than eat them in a salad or make a tomato tart I'm stumped with what to do with them. Anybody have some recipe ideas? I seem to have tomato block ;)

Ladies, thank you so much!!! Got some fantastic suggestions. Everyone in the family ate roasted tomatoes on grilled sourdough and I'm planning on making some sauce this weekend. Thanks again, you're all wonderful :)

I just made sauce with mine - lots of sweet onions and a little fresh basil at the end. It is the most gorgeous color.

I have a healthy one for you and it's so simple. I'm not going to give exact measurements as you can do it to taste. It's for a pasta sauce.

Sautee 2 minced cloves of garlic in some olive oil.
Dice 3 tomatoes
Slice 2 large zucchini
Dice one onion
Add toms/zucchini/onion to garlic and oil
Add salt and pepper to taste
Saute until tender

Cook pasta of your choice. When done - add about a cup of pasta water to the sauce and stir. Then drain pasta.

Toss together. Delish and healthy.

Serve with a salad.

i would go to the local pizzeria, buy a ball of dough or two and make some pizza! buy some fresh mozzarella or feta cheese, fresh herbs and other yummy toppings and go to town. slice up those babies and layer the ingredients and you're good to go! drizzle on some balsamic and oil if you want a change from tomato sauce but only do that after it comes out from the oven.

Tomato and zucchini casserole. Chop up tomatoes, slice zucchini (sauteed), add onion if you like it, mix with Italian seasoning and cover with cheese and croutons. Bake at 350 for 45 min!

I like thick cold slices of homegrown tomato with salt on them. I'd rather eat a cold, salted, slice of tomatoe over a steak!

I like to make tomato stacks. I alternate thick slices of tomato, thick slices of avacado, and thin slices of red onion. They make a beautiful presentation as a salad or side dish - drizzle with olive oil salt and pepper.

Chop tomaotes add black olives, little mozzarella balls, olive oil, a splash of vinegar, and italian herbs, maybe artichoks hearts if you have them. Let it
sit overnight and it's wonderful.

I make mommyof1s recipe below often, but i slice and cook italian sausage and cook the vegetables with that...mmmmm hungry.

how about pico de gallo or any fresh salsa

i like chopt tomatoes in my omelette

i sautee galric, oninons, mushromms until soft, throw in tomaotes at the last minute. They just soften a bit and realease a little juice. Great as is or as a meal starter.

have you ever hollowed a tomatoe out and filled it with tuna salad. it's delish.

Salsa! I'm awful at writing up recipes so it's probably best to google a recipe but when I make salsa I basically roast tomatoes, onions, garlic and jalapeno. When the outside is dark you can skin the tomatoes, then throw in the blender with salt, pepper, cilantro and a habanero pepper.

I just had 25 pounds of tomatoes a couple weeks ago that I was trying to plow through...One thing I did that we ended up loving...I chopped a bunch in half and put them on a cookie sheet with garlic and onions (one layer), sprinkled sea salt and herbs over it, drizzled olive oil over it, and roasted them in the over until the edges were turned black...then I took them out and tossed them in the blender with 1-2 tablespoons of butter (2 if it's a full packed cookie sheet), a teaspoon or so of sugar, and some fresh basil...and blended the heck out of it. I didn't take out any seeds or skins and we were all fine with it...that's what makes it so easy :) It was REALLY good :) I had other plans for the rest of the tomatoes...but ended up ditching them and using about 20 pounds to make this sauce :) Tastes especially good over tortellinis...especially the ones they sell at costco...

Broil them in the oven with lemon and butter, and a little sugar to cut the acid.

I recently discovered that when I add more sugar and let it kinda caramelize and get sweet, it is sooo good!

We throw tomatoes in/on everything, pizza (on top and/or as sauce), frittata, Oh, and jumbalaya, whenever there are a bunch of tomatoes, that is what my husband wants to do with them.

Whenever I have heirloom tomatoes, I make caprese salad - yum. Slice tomato, slice of mozzarella cheese, basil leaf, drizzle with olive oil and balsamic vinegar, sprinkle with a little sea salt and fresh ground pepper - you can even add a little roasted red pepper or crushed red pepper flakes. My husband likes to chop up the tomatoes with some onion, add some lemon juice, maybe even some cilantro and lime as a nice, fresh salad.
