Yes, your veggies will be done. IF you put them in at the same time as the meat they would be mush by evening.
So I have my pot roast ready to cook tomorrow morning to be ready by 6pm for dinner. I normally would turn it on 9 or 10am so that it'd be done and extremely tender by 6pm. My problem is, I have the meat, but don't have the potatoes and carrots yet. I normally go to the grocery store Mondays, but didn't today. -- So, if I put the meat in at 10am, but put the carrot and potato in at maybe 1 or 2pm, will the veggies be done/tender by 6?? -- Or do need to par-boil them before putting them in the crock pot? Or do I just need to make a different dinner plan tomorrow and do the pot roast the next day after I have all my ingrediets?
Thanks! I just don't know if the veg wil be done if I put it in the crockpot so late. I know you ladies will have the answer.
I normally put the meat and potatoes and carrots in all at the same time. The carrots are done and very soft by 3 or 4pm when I go to taste them, but not mushy. I don't eat the potato normally, so I just know they're cooked and husband likes them. Thanks for your help. I will give it a go. I just hope I don't forget to put them in the crockpot ASAP after arriving home from the store.
ADDED: Everything turned out great! I put carrots on top of the meat and in the juice then potatoes on top of that all around 2pm. Dinner was tasty and done by 5pm. Thanks ladies.

I would think the veggies would be fine, especially if they are chopped up. You can always put the crock pot to cook on high for an hour or 2 to help speed up the process if needed, as long as it won't ruin the meat.
I make my pot roast on my stove top and slow cook it all day. I put fresh onion, potatoes and carrots in about an hour before I serve the very tender roast.
I brown the roast first, then add water, bouillon, onion, and cook all day. I start by 9 or 10. We eat around 6 so veggies go in about 4:30
Sounds like yours will be fine! Enjoy!
Veggies will be done. In fact, I often purposely add them later, otherwise the potatoes fall apart when I take them out. Just cut the carrots into small pieces, since those take longer.
You should be just fine. Enjoy supper!
Veggies put in the crock pot for four hours should have more than enough time to be done.
When I do a crock pot roast, I add fresh sliced mushrooms and a couple of cans of cream of mushroom soup (and one can of water or milk) so the gravey will already be made when its time to serve dinner. Adding the potatoes and carrots will have no ill effects on what you are trying to accomplish. I also cut an onion and add it for flavor (sliced or diced). No need to parboil any of the veggies.
Enjoy. Good luck to you and yours.
I think they would be done by then.
When I cook a pot roast or stew in a "regular" pan I always add the veggies later anyway, giving them about an hour to cook. You can probably do just fine adding them later. If they're not tender by the time you get home, just turn it up to high for a bit and you should be fine.
I have done this before. The veggies will be fine!
I am jealous!!! my hubby hates when I put carrots and potatoes in the crockpot with the roast, he says it changes the flavor of the roast...of course it does it makes it better!!! but he does not think so. I would think the veggies would be fine going in at that time, you can always cut them smaller to make sure.
we usually do the roast with an 8oz can of coke with a package of onion soup mix then have it on low for about 8 to 10 hours...super tender flavorful meat, and you cant even tell there is soda in it.
