I am expecting people to drop by today. It could be no one or it could be up to 6 people. I'd like to crock pot something so there is food available but not too much to waste if no one drops by.

I've got a pound of chicken and a crock pot.....

Ideas??

So What Happened?

Thanks for the ideas Mamas! I ended up dicing the chicken and throwing in a large can of cream of chicken soup and one small can of mushroom soup a cup of milk and a healthy dose of Woscestershire Sauce. Put my rice cooker on and set it aside. The family enjoyed a lovely dinner and no one showed up......

For future reference, always keep a box of triscuits, a block of cream cheese, and a jar of pepper jelly on hand... just slap the pepper jelly on top of the cream cheese and serve!

For the chicken and the crock pot, why not pre cook and chop the chicken up, add a can of diced tomatoes with green chilies, some velveta, and serve with tositos for a spicy chicken cheese dip?

I was going to recommend a crock pot of queso with chips on the side too (Rachel's idea) however Jessica's idea is great and simple as well.

If you wanted to go a different route with the flavor and the chicken, why not cook the chicken in a jar of salsa and broth, add corn and a can of beans and have some taco/tortilla soup. If you have tortilla chips, nix the broth and make a dip out of the meat/salsa/beans.

Why not just some homemade chicken soup and bread? Its delicious, easy and if no one shows up then you have dinner already made. Nothing better than warm soup.
