Seeking Marinated Antipasto Vegetables, Salad Recipe?

OMG I LOVE the marinated veggies that a local Italian restaurant in my town makes and serves with their Antipasto Salad. I tried making my own, but oh well.
So here I am looking for any GOOD recipes for the marinated vegetables used in Antipasto Salad.
I did a Google search but that is endless.
So, I figured you all here will know of a great tried and true recipe... ?

And I really don't like the one's that come in jars, in the grocery store. It just is not as good as freshly made.

Yes, the vegetables are like 'pickled.'

To marinate the veggies, blanch them (boil for 3 - 4 minutes) just until softened but not soft, in 1/4 cup water, 1/4 cup olive oil, and 1/4 cup red wine or apple cidar vinegar. Add salt, pepper, and oregano. It will smell, but taste good. That is how you do it. I always end up adding a little Wishbone Italian or Greek salad dressing. No need to cook cucumber or tomato.

Your local Italian restaurant MIGHT, maybe, be willing to share
their recipe with you. Or, just the recipe for the dressing they use.
And then you can try all different combinations of vegetables.

I would love to be in Hawaii.... Could live there doing most anything.

That said... the grocery I frequent most (Market Street) has the most delicious grilled marinated veggies that I always add to my anti pasto platter.

If you hate your grocery ones. The Everyday Italian cookbook has some great ideas on grilled veggies. You can find info on Giada at Food Network.

Are you talking about Giardenaire (I am positive that is spelled sooo wrong!)...where the veggies are almost pickled? I have never made it myself, but maybe you could find an Italian deli (not the restaurant) that sells it in bulk prices, like pints, quarts, etc. Also, I want to say that Bobby Flay was just talking about it on one of the last Food Network Star shows, maybe he has a recipe that you could find on their website??
