Silly Question About Chicken Cutlets and Butcher Counter

I feel silly asking this but would rather ask online than at the actual butcher counter :0) I have recently discovered chicken cutlets. I accidentally bought a bag of flash frozen chicken cutlets at Sam's Club. The problem is they don't always have them there. It's become hit or miss, mainly miss. I try and stock up when I do find them but tend to still run out. I also can never find them in my regular market. So I remember hearing on Rachel Ray's show that you can just ask the butcher to cut the chicken breast into cutlets. So here's where it gets silly....do I pick out and take a package of let's say foster farms chicken breast & then bring it up to the counter and say "hey butcher can you cut these into cutlets for me" or do they already have chicken breast behind the counter for this purpose? Do I have to tell them how thin to make them? I'm thinking 1/4 inch should be about standard? I'm hoping that some of you who purchase cutlets and can offer some advice.

They usually always have huge freezers full of them at Walmart on the end of one of the meat islands.
If you want the butcher to cut them fresh, go to the counter, and buy the chicken in the meat case and ask them to cut them into cutlets.
You can cut it yourslef if the prepackaged are cheaper. Just hold the breast down on the counter and slide a sharp knife down the middle.

Just tell the butcher what you want and they will make it so.

It is cheaper to do it yourself mind you.

Back in the day I worked at a grocery store. The strangest request ever made, beef tenderloin ground into hamburger. I still cry a bit when I think about it. :(

I would think that they would take them from their counter and cut them b/c the per oz weight may be different than the pre-packaged price... not to mention the need for inventory control esp. re: pre-packaged items.

I also just read that some butcher shops won't cut pre-packaged items so the only way you'll know for sure is to ask your specific butcher. Push yourself out of your comfort zone and do it!!

When I go to Dominicks, I just ask my guy for xlbs of chicken cutlets and he says Ok, keep shopping they will be ready in 10min :) and Poof! there they are! So, I would just ask b/c I am sure they are all different. I LOVE them for topping salads with buffalo wing sauce and cesar dressing!
