i love playing outside with my 2yr old in this great weather and do not want to cook for an hr indoors while he stares outside. so please pass along ur fav. crock pot ideas that are quick and simple but yummy. i work full time and need to use my time wisely.

The only things I really do in a crock pot are spaghetti sauce and meatballs. I want to learn more and start using them.

I'm glad my husband said something tonight because I told him I was going to do lasagna tomorrow night. He mentioned the boys have football, so we'll be gone from 530ish until 715 or so. I'll cook it before we go, and we'll just eat late. I just thought I'll need to stop for some garlc bread!!

I'll be watching the post though because I feel the same way most days and want the time with my kids versus cooking.

Personally?

Get large chunk of meat (a roast, a pork loin, a chicken). Put in crock pot.
Pile on vegetables - preferably things like carrots and onion and potatoes and peppers and not things like broccoli.
Get random spices out of the pantry - garlic, pepper, salt, McCormick Grill Mates. Apply liberally.
Turn crock pot on.
Go away.

General Tso's Slow Cooked Pork Tacos

2 cups Chicken Broth

1 (8 Oz.) Bottle Hoisin Sauce

⅓ cup White Vinegar

¼ cup Reduced-sodium Soy Sauce

¼ cup Granulated Sugar

¼ cup Cornstarch

5 Garlic Cloves, minced

3 Tbsp Minced Fresh Ginger

1 tsp Crushed Red Pepper Flakes

2½ lb Pork Tenderloin

⅔ cup Orange Juice

⅓ cup Olive Oil

½ cup Chopped Fresh Cilantro

2 (10 Oz.) Packages Broccoli Slaw, or cabbage slaw

Soft Tortillas

Directions:

Whisk together broth, hoisin sauce, vinegar, soy sauce, sugar, cornstarch, garlic, ginger, and red pepper in a slow cooker until well combined.

Add pork to slow cooker and spoon some sauce over top. Cook on low heat setting for 6-8 hours. Remove pork from slow cooker and shred with 2 forks. Place pork in serving dish and coat with desired amount of sauce from slow cooker.

Meanwhile, as pork is cooking, whisk together orange juice, olive oil, and cilantro in large bowl. Stir in broccoli slaw. Cover and refrigerate until ready to serve.

To serve, top tortillas with pulled pork and slaw.

I dont use tenderloin, it's to expensive. I just buy pork loin roast. my husband hates broccoli so I use cabbage slaw. sometimes I make my own, sometimes I buy it. this is absolutely yummy! hope you enjoy it.

Salsa Chicken
4 chicken breasts
1 can corn drained
2 cans black beans drained
1 12oz jar salsa (your temp pref)

1. Mix corn, beans & 3/4 of the salsa together and put in crock pot.
2. Place chicken on top and pour rest of salsa on top.
3. Cook on low all day.
4. Serve with tortillas, cheese and sour cream.

This is my all time favorite crock pot recipe. Enjoy!

I just tried cooking rice in mine a couple of weeks ago and it worked great! Especially a wild rice blend I bought. So my suggestion is to throw some stuff together in one like AV said and use a second smaller one for rice or a side. I bet Kelly's salsa chicken would be yummy over rice.

Also, if you add a little bit of extra liquid, you can throw in some noodles and turn it on high for about 15 minutes until the noodles are done. I've seen recipes for spaghetti and I'm guessing that's one way to do it (slow cook the sauce then add the pasta at the end). You can also make soup or chili or cook meatloaf in it.

Slow Cooker Lasagna
Prep Time: 10 Minutes
Cook Time: 4 Hours Ready In: 4 Hours 10 Minutes
Servings: 6

"Lasagna noodles are layered with sausage and mozzarella cheese in this easy slow cooker dinner."
INGREDIENTS:
1 (1 pound) package Bob Evans(R) Italian Sausage Roll
1 (9 ounce) package no-boillasagna noodles, broken into 2pieces
12 ounces ricotta cheese
3 cups shredded mozzarella cheese, divided
2 (26 ounce) jars pasta sauce
1 tablespoon dried parsley
DIRECTIONS:
1. Spray interior of slow cooker with non-stick vegetable spray.
2. In medium skillet over medium heat, crumble and cook sausage until brown. Place in slow cooker. Add noodles, ricotta, 2 cups mozzarella, pasta sauce and parsley. Stir gently to combine.
3. Cover and cook on low for 4 to 6 hours. 5 minutes before serving, top with remaining 1 cup mozzarella cheese. Cover to melt cheese.

This recipe is super easy and my family loves it. I also will put 3# of boneless skinless chicken breasts with some seasoning in the crock on low all day. Then I will chop/shred it and freeze in 2 cup servings in freezer bags. I use it for pastas, salads, sandwiches, whatever. Super fast and easy. Same thing with browned hamburger/turkeyburger. I kind of throw this together so I will guess on some of the amounts

Beef Strogonoff

1lb stew meat
2 Cans Cambells Golden Mushroom soup
1 package Lipton beefy onion soup mix
1T worshister sauce
1 large dollop cream cheese (add to taste)
1 clove garlic minced (I use one Trader Joes frozen minced cube)
1/4 cup water &
1 beef boullion cube (or just 1/4 cup beef broth)
1/2 onion chopped (optional)
1/2 8 oz pkg sliced fresh mushrooms (optional)

Put in everything (except cream cheese) in crock pot cook 5-6 hours high, 8-10 hours low

Stir in cream cheese till melted before serving.

I serve over wavy flat noodles

We just tried some good receipes a week or two ago.
Baby back ribs slow cooked all day with BBQ sauce.

And Sweet and Sour Chic. S and S sauce, bbq sauce, onions, pepper, some seasoning, boneless chic breasts , pine apple.....
was very good.

Crock Pot Pizza:

I make minor changes to this recipe with great results: whole wheat pasta, ground turkey/beef, turkey pepperoni and less cheese. I've also added onions, green peppers and zucchini with great results. I use a giant jar of sauce or 1 1/2-2 small jars.

2/3 package of mostaccoli, cooked
1 lb. of Italian sausage or ground beef, browned and drained
1 jar of spaghetti sauce
1 4 oz. can of mushroom (optional)
1 package of sliced pepperoni
2-3 cups of shredded mozzarella
2-3 cups of cheddar cheese

In the crockpot, put a little sauce at the bottom first. Put half of noodles down, then layer: sauce, mushrooms, sausage, sprinkle each kind of cheese, pepperoni. Start over with noodles and the rest of layers. On the top, I put pepperoni and cheese on top. I only put it in the crock pot for 2-3 hours on low to get cheese bubbly.

Italian Sausage

Take a package or sweet (or hot if you like hot) sausage links (the big ones, like brawt size)
1 large can of diced tomatoes
1 frozen bag of red & green peppers & onions
Turn on & cook on low for about 6 hours, high for probably about 3.

Serve on hoagies or i like to serve over rice too. Yummo!
