Hi K.-
It's a lot easier (time wise for me and for you explained better) if you just check out pinterest. People on this site are pinning teacher gift ideas so often. It took me a few days to become a member awhile back. Not sure if you are a member already. (it's free) and maybe you can still check out the link without being registered. And maybe it doesn't take days to become a member now. Have fun with this site! I sure do!!
Here are tons of ideas without breaking the bank:

Write her a card telling her how much you appreciate her, and listing the things she has done for your son this year. These notes are precious to teachers!! (I save my notes forever).
Then throw in a $5 card to a local coffeeshop, lunch spot, or bakery for her. That would be a perfect gift.
my favorite gift card I received as a teacher was for a car wash/detail. It's not something I would normally splurge on for myself so it made it a real treat. You can find them for about $20.
We had our children write their teachers "Thank You" notes with a photo of them. Additionally, our DD gave her teacher some flowers and our son gave his teacher a BBW room spray and both teachers got fitting gift cards.
I note saying exactly what you just told us. Teachers want to make a difference. We really didn't go into teaching for the money. Kind words that are sincere are better than any gift that costs money.
If you've taken any pictures of her, you could print one, frame it and give it as a gift. I always do that and the teacher always likes it.
Try to think about what she has done for him, and get a little something that fits that. LIke if he was struggling with reading, get her one of his fav books for her classroom library.
If you can't afford anything else, just a note in his handwriting to her and maybe even one from him or you to her principal.
As a teacher, I don't expect a gift and if it is too big a gift I feel very uncomfortable with it. Books for my classroom are always a great gift. Otherwise I like to receive things that are consumable (like fun office supply things--markers, post it notes, fun pencils, etc). Plants are also nice. Gift cards to coffee shops, teacher stores, book stores, etc are also nice. I personally feel that $10 is more than enough. You might want to stay away from home baked things. I appreciate them, but I have several colleagues who won't eat anything homemade for lots of different reasons. I know someone mentioned not just a thank you note, but for me, those have been some of the best thank you gifts I have gotten.
