Does anyone have some good vegan dairy free recipes you want to share? My daughter cannot have dairy and has decided she won't eat meat either, so coming up with meals for her is just not fun at all. I hate to cook and don't have a lot of time.

These aren't recipes per se, but my life has been saved by Daiya non-dairy cheese. You can make just about any vegetarian recipe that calls for cheese with it. I also make baked goods with soy butter. And I try to get my son to have a "green smoothie" with mango and spinach every morning, for the calcium. Just about any Indian cookbook will have recipes so delicious you'll never want to eat meat again. The Moosewood Kitchen cookbooks are also full of wonderful, easy, kid-friendly recipes.

On most Sundays, I make a very big salad. I store it in the frig for the next couple of days ! Chickpeas or black beans (protein) on top tastes delicious.

I am not a fan of meat, either. Good for her ! Meatrix.com has assisted me w/ that !

We make smoothies using organic almond milk, cacoa powder from a vegan cafe (real choc) , a few frozen bananas, a T. of agave ice and a dash of cinnamon. It tastes like a chocolate/banana shake !

You've gotten some good suggestions already, but be careful if you're searching on 'vegan' because it will also eliminate recipes with eggs. If your daughter can't have dairy and won't eat meat, she might still be able to have protein from eggs. You can also substitute coconut milk for regular milk in recipes and coconut oil for butter.

Big salads are a staple in our house - my latest favorite is spinach or romaine, chopped veggies (carrots, red peppers, scallions, jicama), chick peas, and sunflower or pumpkin seeds with an oil and vinegar dressing.
