Vegetarian Crock Pot Recipes

Forgive me if this is a re-post...I just tried to submit this and nothing happened.

I'm wanting to use my crock-pot more often this winter. I'm looking specifically for Vegetarian Dairy-Free recipes (butter is fine; milk or cream/cheeses, not fine) for vegetable stews and the like. Any favorites to share? I'd appreciate it!

I'm sure somebody else will share this, but there's a fabulous blogger who decided to use NOTHING but her crockpot to prepare dinner for her family. for a year.

Split pea soup:
Rinse Split peas
Chop:
* Rutabegas (1 -2)
* Carrots (2-4)
* Celery (1-2 ribs)
* Parsnip (1-2)
* Potato (Russet, 1-2)
* Onion (1)
* Garlic (1-4 cloves)

Add a sprig of fresh thyme if you have it, dried will do if you do not
Dried, crushed Rosemary
Touch of sage
Liberal Sprinkling of Paprika
Salt and Pepper to taste.
Cover with water

Root Stew:

Chop up the following veggies in which ever proportions you wish

*Beets (peeled first)
*Rutabega (peeled of course)
*Parsnips
*Carrots
*Yams
*Potatoes (optional)
*Turnips
*Garlic (Chopped or left as whole cloves -- lots)
*Onion (Chopped)
*Ginger (peeled and chopped, about 1 inch of root)

Season with Thyme, Sage, Rosemary, Garlic Pwder, Salt, Pepper, and anything else that sounds good. Taragon or Coriander might be quite tasty with this as well. Cover with water and let it cook.

Winter squash soup

This can be done in a crock pot or stove top. You can pre bake the squash ahead of time, or just peel and chop it instead.

Chopped onions
Garlic (chopped or whole cloves)
Chopped fresh ginger (lots)
Yams peeled and chopped
Rutabegas chopped (optional)
Butternut squash

Seasonings: Thyme, Sage, curry (optional), salt and pepper

Cook until tender. May be blended.

For a creamy option, add some canned coconut milk.

The following is really good, it's pinto beans with rice. You can do this in the crockpot or on the stove. I've used red beans a few times instead of pinto beans and may try it with black beans one of these days. There's a Split pea soup recipe, I don't have the link but I usually look it up by googling. Lentils are also good in the crockpot and there are numerous recipes also at food.com.

I asked a vegan question on here once and didnt get a single response, so I had to look to the internet for help. I'm suspecting you will have to do the same. Just type "vegetarian crockpot recipes" into search and I'm sure you'll find tons of recipes.

Cut an onion so that it is in half moons. Bottom to top. Make the pieces small. Sautee it with mushrooms and leeks in olive oil. The leeks are cut so that each piece is on the bias. After you sautee put some water in ...at most a cup and close the crock pot. Then put beets cut up small, carrots cut to one inch on the bias. Parnsip or Rutabega cut not too large. Four big slices of ginger. Add a cup of water or more. Cook all together until the root vegetables are soft. Add a package of washed spinach or Swiss Chard cut up fairly small.
Place over rice when done.

Sloppy Lennies (http://www.vegsource.com/talk/recipes/messages/70360.html)
2 cups red lentils
4 cups water
1 onion, chopped
1 green bell pepper, chopped
1/2 cup grated carrot
2 cups tomato sauce
2 tablespoons soy sauce
2 tablespoons parsley flakes
1 bay leaf
1/2 teaspoon chopped fresh garlic
1/2 teaspoon basil
Combine all ingredients in a medium pot. Bring to a boil, reduce heat, cover, and simmer for 30 minutes. Serve over toast, fat-free crumpets, fat-free English muffins, or whole wheat rolls.

I just put it all in the crock pot and let it go for the default time which I think is 4 hours. Works perfect and is really tasty!
