Veggie Based Snacks

Hi - I'm hoping moms who are more creative than me can help out here. I'm having trouble fitting veggies into my daughters diet. I provide a vegetable each night at dinner, but other than that she eats mostly fruit.

I'm looking for some veggie based snacks that kids actually eat. I've given her the baby carrots and he celery with peanut butter (she just licks the pb out).

actually if she is having fruit that is great and fine and not needed to have the veggies as much. It's more important whether the item is a variety of colors then if it's classified as a fruit or veggie. So a red tomato is just as good for you as red watermelon. Both will contain very similar nutritional qualities. Eat a Rainbow should really be your motto. Fruits and Veggies are really ONE foodgroup as there is so much crossover between the two.

That said, if you are still dead set on adding it make sure her lunch is one fruit and one veggie. Tomato sauce on spaghetti counts and is a good place to hide more veggies (you can add a jar of baby food veggies to the sauce). I believe in just keeping offering the veggies and it works great. Celery is hard on little teeth and carrots may be too, try slicing them into slivers.

Email me personally, I have a list of ideas and snacks for toddlers. You can add mild salsa to an avocado so she gets a veggie and a good fat for her brain. Snap peas are great to chew with hummus. You can puree spinach in eggs and make "green eggs" with ham, fun around St. Patty's Day, puree cauliflower or parsnips with your mashed potatoes, I omit about 2 potatoes and make a root smash, these are just a few ideas and suggestions I will put out there for you.

My kids will eat sliced yellow and red peppers with some dip or plain they are sweet. You can also try a veggie juice instead of fruit juice.

I need some ideas too! Connor just seems to throw his vegetables now. We do give him the V8 fusion at least once a day and he LOVES it. I think it tastes pretty good too.

Morningstar Farms makes great vegetarian items like chik'n nugget and veggie patties that come in a variety of yummy flavors. Although they're not 'snack' type foods, you could serve them as main dishes at dinner?
