From Martha Stewart's show years ago...
1 ½ lb. ground top sirloin
¾ lb. ground veal
¾ lb. ground pork
Fresh parsley, chopped
2 T extra virgin olive oil
2 cloves of garlic, pressed
½ c romano cheese
3 eggs, beaten
¾ c unseasoned bread crumbs
Pinch of salt and pepper
1-2 large pieces of fresh panella bread (Italian)
¾ c olive oil
Mix meat, parsley, 2 T olive oil, garlic, cheese, eggs, bread crumbs, salt & pepper together. Wet bread with water and tear into small pieces. Add to mixture. Roll into equal sized balls. Place meatballs onto parchment or wax paper lined surface. Heat oil in large non-stick pan. Brown meatballs for 15 minutes or until golden brown. Remove from pan. Place onto paper towel lined surface to drain. Add to tomato sauce and simmer.
I find it easier to bake the meatballs. Less time and mess!
Another great meatball is Ikea's Swedish meatballs but not the best for Italian fare but great as an appetizer. So very easy and tasty. Now I want to make some meatballs too!
