Here are few, in no particular order, that I can think of. Personally, I am more vegan-leaning in my recipes.

Also, the Moosewood Restaurant cookbooks are good too. They do have a section on fish. And some recipes use cheese and eggs. But, I wouldn't call them high fat recipes.

In response to the previous poster, about veg diet being low in fat. It is possible to be a fat vegetarian. If you ate whole dairy, whole fat cheese, drizzled all your food in olive or coconut oil, you'd be vegetarian, but eating a high fat diet.

Living with vegetarians most of my life(both friends and family), I will tell you it's easy.

If you go Vegan, however(like I used to be), it's insanely difficult to acclimatize your body to hard proteins again.

Vegetarian and Vegan are two VERY different things, as Vegetarians do not eat meat and fish, but do eat dairy and eggs, and Vegans don't eat any meats or animal by products like dairy.

Basically, you can eliminate meats, and make many of your fave dishes with a vegetable base(they make many soy replacements that are tasty and healthy). My brother makes a killer spinach lasagna that has five pounds of cooked veggies(he renders the sauces himself), and four pounds of cheeses.
You need the complex carbohydrates to fuel your body, as you will be eliminating the hard proteins, so don't eliminate breads and pastas(besides, you can make very yummy protein rich pasta and bread with a grain change) until you know how your body adapts to it.

V-8 is a very excellent base for soups. Amaranth is a perfect grain to supplement your proteins in breads(replace one cup of flour with a cup of Amaranth, and the resulting bread is as protein rich as 3 oz of beef).

Take any food you like, and look up a vegetarian recipe for it, then prepare it. voila!

For me, Garfield the Cat has it right, Diet is 'die" with a T. Sensible eating and exercise, that's simple clean living.

My aunt just lost about 60 pounds doing this, and she said she used Sparkpeople. She said it is a pain to get set up and started with, but it really works! Maybe check it out.

A vegetarian diet is already pretty low in fats. All the fats are going to be the really good fats that your body needs like olive oil, avocados, etc...

If anything you will need to watch your carbs use high protein grains and cut out refined white sugar and flour.

Fat can actually be your friend if you are eating healthy fats...

My motto is if it is close to its natural state then eat it...if it has been processed then avoid it...we are not vegetarians (although we did try a vegetarian diet for about 6 months to see if it would help our bodies/health purposes...but we now have put meats back in).

Good luck...

I have spent a good part of my life with vegetarians and I can tell you, you don"t need a diet or a plan.
Eating a veggie rich diet is VERY healthy, and low fat, low calorie by nature.
Cut out the meat, sugar, pasta and bread, replace it with veggies, fruit, rice and fish, and you WILL lose weight, AND feel better, I promise! Roast your vegetables in the oven, with a little garlic and olive oil (tastes way better than steamed.)
It really is that easy. Make your food taste good and you won't ever feel like you're missing out, on taste, or anything else.
