Traditional Easter dinner in my house was Leg Of Lamb - to Symbolize the sacrifice. I can not bring myself to do that! We always had deviled eggs because back then people hunted real eggs. :)
You could buy a rotisserie chicken and make sides and a dessert
You could do a backyard bbq
Make a roast in the crock pot
Make prime rib
Have steaks and baked potatoes
We are doing potluck and I'm bringing dessert. I'm making a chocoalate pudding pie using sugar free fat free white chocoalte pudding, whip cream, and milk, spread in a ready graham crust and topped with more cool whip. It's light but doesn't taste like diet food. You wont miss the extra calories.
