I am a working mommy and don't get home until after 6. Most nights, my husband pulls together dinner. We need help! There are only a few healthy meals that we are eating, and we're getting tired of the same old thing. So please, can anyone give me ideas of quick and healthy meals? Thanks!

Wow - thanks ladies for the quick response. Not only do I have some great ideas, I'm suddenly very hungry! LOL My husband is very capable of preparing the meals, but he lacks the imagination to pull something together without me leaving the food for him. I have some great ideas now!

We actually eat things other than mac-n-cheese from a box! Recipies are easy and all of them have been delicious. You can even sign up to have the menus e-mailed to you (all free, and they don't even ask for personal information). I have no idea why someone runs this menu site for free, but I love it!

This is very good and quick. To me it's pretty healthy and my 2 year old son will eat it, which is a bonus

Easy One Dish Chicken & Rice Bake

1 can cream of mushroom soup
1 can cream of chicken soup
2 Cups of Water
1 1/2 Cups of uncook regular rice
1/2 teaspoon of paprika
1/2 teaspoon Pepper
1 frying chicken, cut up (approx 8 pieces)

In 9"x13" baking dish mix soups, water and rice, paprika and pepper. Place chicken on top; sprinkle with additional paprika and pepper. Cover and bake 375 degrees for 45 minutes or until done..

I have used low sodium soups, or 2 cans of same soups or just left out soup and started reciepe with water.

I also use the seasonings my family likes. (IE garlic,)

I usually always add vegs also (IE frozen broccli, green beans)

I also just use chicken breast or thighs, without or with skin.

Much like dream dinner. You can prepare meals once a month or just have them delivered. Awesome!! Also, if this isn't in the budget, crockpot is the next best thing. Cook a roast with carrots and potatoes, pork loin with apples, chicken noodle soup, beef stew, hungarian goulosh and much more. My kids love Taco Soup which is very quick and easy. You will need:

1lb hamburger - browned
1 can black beans
1 can pinto beans
1 can kidney beans
1 can tomato sauce
1 packet taco seasoning
1 packet ranch dip seasoning
1 can corn

mix all ingredients in large pot. Add browned hamburger with taco seasoning. Finish each serving with crunched up tortilla chips, cheese and sour cream if desired. Great leftover and makes a large meal. The kids and I eat it for days!!

I'm right there with ya as a working mother who worried about dinners before. This is what I do- first I come up with 2 weeks' worth of dinners on paper (which also helps u form a grocery list), then I spend one of my days off making meals ahead of time and put in freezer, like chicken enchiladas, lasagna, beans to refry for bean burritos, tostados, etc, but the beans can stay in the fridge, not freezer. I always get tons of canned veggies in variations, a huge sack of potatoes and instant potatoes, and huge bag of rice. Those 'fulfill' the side dishes for most meals, and you can be creative with different tastes of them like always have: butter, soy sauce, sour cream, lemons, teriyaki sauce, salad dressings, cheese, etc.

Here's a sample of my 2 week dinner menu:
1. shake n bake or grilled chicken, baked potato, corn
2. spaghetti, salad, french bread
3. chicken ceasar salad with olives and bread
4. french bread sandwiches, we love turkey and cheese best
5. chicken enchiladas with side of beans
6. chicken rice casserole from Campbell's mushroom soup recipe with side of veggies or salad
7. pork chops, mashed potatoes, green beans
8. tostadas
9. tuna helper meal
10. lasagna with salad and french bread
11. steak, baked potatoes, side of veggies
12. pizzas, make your own
13. salmon, garlic mashed potatoes (betty crocker, very yummy), salad
14. beef stew (let slow cook all day, plus smells so good when you walk in the door!)

Extra dinner ideas, use shake n bake, look up campbell's recipes, tuna cheese casserole, pastas, stir fries, ramen with steamed broccoli, hamburgers and hot dogs, fry your own french fries....

I would recommend a few things. First buy hamburger in bulk, you can cook it and season it and freeze it, then microwave it last-minute (for example... do 2 pounds of taco meat, 2 pounds of plain with onions, etc). You may want to do this with chicken as well and cook and cube it ahead of time. This may save you time last minute.

Make a plan. Ask the kids and the hubby to help -- make sure you know what you are fixing ahead of time and if you need to pull anything out of the freezer the night before (put into fridge to thaw).

Invest in a crock pot and a Indoor grill (like George Foreman type). The grill I love. You can cook frozen veggies and chicken on it and they are done within 10-15 minutes.

Here are a few recipes we like:
Chicken Salad Wraps
Grill chicken, or use pre-cooked chicken, place in warmed tortillas, top with cheese, salad, almonds, and Honey-Mustard (or other)dressing. Enjoy!

Hawaiin Haystacks
Add cooked, cubed chicken to 1 can cream of chicken soup and 1 c. milk. Bring to a simmer. Cook rice, or use minute-rice. Layer: Rice, sauce, cheese, cooked peas, mandarin oranges, pineapple tidbits and chow mein noodles.

Stir Fry: 1/2-1 pound chicken, cubed and cooked. Add 24 ounces frozen veggies and 1 can Sweet and Sour Sauce (try Leroy's). Stir fry for 10 minutes on Med-High. Add 1 c. cashews. Serve over rice.

Try breakfast things for dinner: French toast (sprinkle the scrambed egges with cinnamon before dipping the bread), pancakes, scrambled eggs and potatoes (dice up red potatoes and carrots, toss with a little oil and a onion soup mix seasoning packet - powder stuff -- and cook in indoor grill - takes about 10 min.) or Breakfast burritoes. Good Luck!

Crock pot Lasagna! It's simple preperation and layered in the crock pot and cooked for four to five hours. Freeze whats left and reheat for another dinner later in the week.

1lb ground beef
1 med. onion (chopped)
2 cloves garlic (minced) I use that jarred stuff already diced
29 oz. can tomato sauce (i add canned diced tomatoes too)
1 cup of water
6 oz tomato paste
1 tsp salt
1 tsp oregano (i double this amount we like it spicy)
8 oz pkg Lasagna noodles uncooked
4 cups shredded mozzarella cheese
1 1/2 cup small curd cottage cheese
1/2 cup gragted parmesan cheese

brown the beef onion and garlic in sauce pan until browned and drain

stir in tomato sauce, water, tomato pate, salt and oregano. Mix well.

Spread 1/4 of meat sauce in ungreased slow cooker. Arrange 1/3 of the noodles over sauce

Combine the cheeses and spoon 1/3 mixture over the noodles and repeat layers twice and top with remaining meatsauce.

Cover and Cook on Low for 4-5 hours

Good luck with this! Or you can buy those hamburger helper crock pot dinners. Those are good too.

One of the things I do on the weekends is brown hamburger 10 lbs at a time adding my seasonings, onion etc. Then, I package it in quart zip loc bags and store in the freezer. It is so simple to build a good, quick meal off this meat (quick stove top casseroles, spaghetti, etc.) I do the same thing with chicken breast tenders for chicken recipes. Additionally, I purchase frozen bags of chopped onion, peppers, etc. which still provides the flavors we love but eliminates the time spent chopping and dicing!
Also, LOVE Rachel Ray's cookbooks, she specializes in "30 minute meals"

This is called Stack-a-meal.
1 lb ground meat (I use turkey)
1 small diced onion
Fry together until browned.
Add:
1 small can of tomatoe sauce
1/2 t garlic powder
1 1/2 t parsley flakes
Simmer.
While you are cooking the meat mixture,
make 1 cup of rice per person.
Heat 2 cups peas.
Now layer the meal:
rice
meat mixture
peas
and top with grated cheese.
Serves 3-4 adults
Time about 15 minutes

Also Omaha has a Super Supper, which is a place you go and prep several weeks worth of meals in one day and all of it is frozen for later use so all you have to do is put it together and cook it.

Stir fry takes 10-15 minutes
Chicken pitas take 10-15 min's (Use canned chicken in a hurry)
Boca burgers take 10-15 minutes
Tacos take 10-15 minutes (Double the recipe and freeze extra)
Spaghetti takes 20 minutes (We add sausage to a can of sauce)
Chicken fajitas takes 10-15 minutes

yes, i think crock pot recipes would be a good idea for you... when i was younger... my mother used to work late too... she used to make casseroles or things that she could prep the night before, keep it in the fridge during the day... so when dad came home before her... he'd be able to put it in the oven and it'd be ready by the time she came home. she'd leave instructions for him to add this sauce just before popping it in the oven to prevent things from getting mushy, another thing is pre-cutting vegetables the nite before... stirfrys are quick... soak meats/chicken the nite before.

I am a working mommy with a 10 month old and a 4 years old, and oh, a husband that DOES NOT cook. I work until 5 or 6 and I usually try variations of this basic formula.
Lean protein, carb, and veggie/salad.
I got a Showtime Jr. Rotisserie for Thanksgiving last year. You can stick Fish fillets, Whole Chicken, lean pork chops, Ice glazed chicken breasts, good cut of beef, cornish game hens, etc. I usually stick to the stuff that won't take more than 20 or 30 mins to cook in it for the week and do the longer ones (whole chicken or roast) for the weekends. I stick a steamer basket on the stove for any bag of frozen veggies and I keep my rice cooker handy for brown rice concoctions. Sometimes I mix the brown rice with some beans. Sometimes I just use jasmine rice because it tastes better..:) On the weekends, I sometimes cook ahead. A box of whole grain penne pasta, a pound of lean ground beef, a jar of your favorite spaghetti sauce, onion, garlic, and some part skim mozzerella and you have yourself some penne rigata. Just freeze it and when you want to eat it, just throw it in the oven for an hour. Or, defrost the night before and it won't take as long. Sometimes in the morning, I will throw a chuck roast in the crock pot with some broth and veggies and stick it on low. Takes 10 minutes to get ready in the morning before work and you have dinner ready when you walk in the door. I do the same thing with chilli. 1 lb lean ground beef, 2 cans of beans, 2 cans of diced tomatoes, and 1 can of crushed tomoates with one packet of chili mix. Viola! Dinner ready when you walk in the door.I keep a lot of frozen and canned veggies, bagged salad and canned goods. Make sure you defrost a day or two before, because coming home with nothing defrosted is a quick way for me to order take out. Good luck and hope this helps.

I have been going to My Girlfriends Kitchen and the meals are really good. It takes a few hours and $200 for 12 meals, which you freeze. Each meal feeds our family (mom, dad, 1 and 3 year old) for 2-3 days. The prep time after thawing is really quick. Their website is www.mgfk.com. I hope that helps.

Try Dream Dinners. It only takes 2 hours to make 12 dinners and the food is great and they are very health conscience. You get to make it all yourself so you can adjust the recipes to your families tastes. It's actually alot of fun! I also love that my clean up after dinner is so much less. Hello Christie! How are you! I totally know what you mean, getting home from work and having the energy to make a meal....a healthy meal, can be tough. Sometimes I will crockpot a meal in the morning or mid afternoon. You throw all the stuff in and let it sit, by the time you get home it's ready. So easy, but that doesn't always work in the summer though, it gets too hot. But if you don't have a crockpot, it might be a good investment. I love the cookbook "Fix it and Forget it" by Ranck and Good. It's got a ton of great meals in it from roasts, chicken and soups to dips and deserts. You might be able to get it from the library and browse through it, or amazon.com or Ebay are good places to find a used one at a good price.

I have also subscribed to Kraft Foods "food and Family" Magazine. It's FREE! I got one by mistake, but loved everything in it so I subscribed. The meals are so easy, take little time to prepare and have just a few ingredients. I've started my own lil cook book of my favorite recipes from the magazine. We were in a rut where I felt like I fixed the same thing everynight. I started getting rave reviews from the husband and the kids, I felt bad for taking the credit for such easy meals. :) There is also a meal planner on the site! I find that if I just take a little bit of time to plan out my meals for the week and make sure I get everything I need when I go shopping, my week will run so much smoother. I don't have to stress about what to make, worry if I have everything to make it, etc. The weeks I don't do this I'm way more stressed out....lol. SO, visit www.kraftfoods.com and see what they have. You could do dream dinners. It seems kinda expensive, but actually it's not that bad if you figure out the cost per serving.

You put together 6-12 meals and you can half them. So, you could do 6 meals and half them giving you 12 meals. The meals are 6 servings so halving them would work well for your family. They have all the ingredients set up at different stations and you just throw it all together in ziploc bags. Then you put it in your freezer and just pull one out when you want to use it.

My kids really like wraps, such as salad with pre-cooked chicken, chesse and ranch dressing, or cheese quesadillas, using floor tortillas (they even make a whole wheat or low carb version if desired). You can melt the cheese on a griddle or even in the microwave, and serve a salad or fruit with this. Very easy and healthy!

There are recipe books you can buy with titles like "Quick and Easy" and "Quick and Light" and "Dinners for Frantic Families". Also, try the internet for recipes...they are usually pretty good. Good luck!

Dinner ideas include: stirfrys, burritos, taco salad, burgers (with lean meat, even turkey).

Also, you could always cook on the weekends and freeze it for later.

You could try Dinners Ready.. They have wonderful dinners that you or they can prepare .. Then you freeze when you get home.
We Love them.. So easy we just take one out that morning to defrost and cook it at night.

There is a place in billings that cooks for you and every week or two you go pick it up and put it in the freezer and pull it out when your ready. I have many friends who do this and they love, love it. The problem is i forgot the name.. Let me look in the phone book.................... ok its called Dinners-Served.com. A few years ago WIC or DFS (can't remember)had a sight on the net, it was titled something like Cook for a Day, Eat for Two Weeks. You'd spend one day shopping and cooking and then you could freeze these meals up and defrost/warm them. They had a shopping list to print out. I never did try it but my sister said she loved it, had nothing to do in the evenings!

I totally understand your situation. I am a widowed, single mother to a 19 month old & we eat a lot of fast food as well, but I have really found Dinner's Ready & Dream Dinners to be a saving grace for me. These companies prep all the food & then you pick out a few meals to go & put together, then bring them home & put in your freezer until you need them. The cost is about $3.00 a person, so if you are already eating out a lot, it's very affordable, and you get healthy, home-cooked meals. Typically they take about a half hour to throw together & they change their menus monthly so you don't get bored!

We have homemade tacos on nights I can't seem to figure out what to fix. My 2yr old son really enjoys them. I usually just ground the meat and warm the hard shells in the oven. And just add your favorite toppings.

How about making dinners like lasagne or casseroles on the weekend and freezing them? Some other things I make include hamburgers, tacos, spaghetti, chicken malibu (just bake chicken and then add ham and swiss cheese slices at the end), pizza (Boboli with tomato saus and canadian bacon, tomato, cheese), steak salad (saute strips of steak and add to big salad). I have a few chicken recipes I like that I use over and over again. The trick is to make a menu a week ahead, then buy all the ingredients so you're not wondering what to make that night...good luck! We all have the same problem!!

Hi C., i found that you can make different meals in a crock pot and healthy i just bought a cook book for crock pots that way you can prepare for the next night put it in the crock pot before you leave for work then when you get home it is already to searve and easy clean up. something you might want to try! good luck

I am not sure what kind of dinners you are eating, but i don't get home untill 6pm as well.my boy friend and i always have somthing ready in the fridge like chix or some kind of meat in the fridge all ready for the next night so all we have to do is put it on the grill. Cooking on the grill is a great way to cut out the unwanted fat because it drips off. We always have a veggie of some sort and a can fruit.. I work in a gym and i hate that i have to eat so late at night, but anything the grill cooks in 20 min or so. so while you are grilling you can get the other stuff ready and play with the kids while you wait.. Reamber you can always put somthing together in a crok pot and let it cook all day. I like to do that with skin less chix and put of can of cream of mushroom and cook it on low . put it toghter the night befor and pop in it the crok pot that moring befor work. Although we eat a lot of home made meals (the easiest is grilled chicken, broccoli, and roasted potatoes, all sprinkled with feta to make it special) I have recently found the best thing ever- Heidi's Family Table. Heidi makes healthy, yummy food that is ready for your freezer. The prep is usually 20 mins. in a sauce pan, or all day in a crock pot. The price is good- only slightly more than I'd pay at for making my own, with no effort. Find her at www.heidisfamilytable.com.

I have a vegeterian in the house, so we don't eat alot of meat as a family. We do stir fry and change up the vegetables and sauces depending on what we're in the mood for. It's really easy and even comes in the frozen vegetable section (some come with meat) if you don't have time for fresh veggie prep. Some rice along with the veggies fills up the tummy.
We also do veggies on the grill. There's a special tray to put them in. We chop them up and season them with meat seasoning packets. My meat eating friends always eat their veggies first when we serve them. If you make enough, it will last a few days...only cook as much as you want to eat.
Pasta with whatever sauce you like and chicken nuggets on the side or on top with cheese...like a chicken parmagsean, though a bit more kid friendly.
I am often frustrated at coming up with inexpensive food varieties, so I am enjoying these suggestions! Thanks for asking the question.

I don't know if you have anything like this where you are but I am doing something called Dream Dinners. Every month they have different meals to choose from and they do all the shopping, chopping up and prep and you go in for an hour and throw your meals together. You can freeze them, very handy! Just add a veggie and your meal won't take long at all. There is also one called Dinners Ready.

Try Dinners Ready. It's on Plumb Rd, right off the freeway in the strip mall. You have a choice of like 15 - 20 meals to choose from. For a serving of six, the cost is $18 for the whole meal. You can choose to spend two hours prepping the food in ziploc bags that you can freezer until you are ready to use them, or you can pay $35 and they will do all the prep for you. The meals come with the meat and a side dish. I have not been disappointed in anything I have gotten from them yet. They have choices from steak to chicken to seafood and fish. The side dishes are things like vegetables, potatoes and rice. They are on the internet and you can order on line. It has made my life easier and it less expensive than shopping at the store or eating out.

start using your crock pot or invest in one!!! i have a very clingy daughter and it's so nice to be able to throw everything in a pot and at the end of the day voila..dinner!! not to mention the great smell throughout the day (though if you're at work you won't smell it!!)

I used to do Weight Watchers and still make their recipes. You can find some on their website under community. Different people post them and almost all of them are great! Quick, easy and really yummy!

There is this great place that my friend uses called dream dinners I think and you go in there and create dinners for a week, or the month...she loves it, not only are they good, but there is no messy clean up at your house. I am going to go there this month.I think she created one months worth for $200 which is great. If you are not into that pampered chef has great recipe books with prep time from 10 minuets to 30 minuets, your dinner is done in an hour or less. Good luck!

I really find that crock pot meals work great! I have also tried preparing freezer meals (like lasagna or casseroles) and putting it in a freezer/cooking pan (the tin ones you find at the store). This helps with easy clean up and stacking in the freezer! Good Luck! L.

I feel your pain. I am a single mom and don't get home until after 6 and have to feed 4 kids! We eat a lot of Stroganoff and chicken and hamburger. Spaghetti and Stir Fry are good choices and having lots of fruits and veggies around for snacks would be a good option. You can microwave a can of veggies for about 1 min to 1 min 30 sec. and stroganoff really does not take too long. Instead of boiling noodles, you could serve it over minute rice. We just take lots of vitamins and I try to choose the best foods I can. I try to have a main dish that includes meat and then a veggie and some kind of pasta or rice or potatoes.

All I have to say is Kraftfoods.com. They have so many recipes on there - especially quick and easy ones. I would also sign up to receive their free recipe magazine. Tons of good ideas in there. Hope this helps - it does for me as a full time working mom!

Hi C. I have taken chicken breast and cut it in chunks and boiled it then added some medium egg noodles and frozen broccoli and let it cook till done then drained most of the water off and then add a can cream of chicken and can of cream mushroom once it is all mixed I sprinkle cheddar cheese over the top and this is a great dish.

I also do the same only use instant rice cooked compared to package instructions then add cream of Chicken, canned chicken or boil your own and add sweet peas and seaon with garlic Ms. Dash and some pepper. Have a salad on the side this a very good as well and very quick

I work the grave yard shift and have a hardtime with dinners too just because of watching my twins and trying to get rest. I love my slow cooker. I use it alot. I get ideas for it from other moms and cooking sites like food networth. The other thing my nanny just got me doing is planning 2 - 4 weeks of dinners., anything I can make a ahead of time and freeze for quick warm up later is a big help, plus it has been saving me so much money also.Cooking has always been my challenge as for I am not a great one, use to cook everything on high and you know the out come. But now with the girls I gotta cook good hardy health meals so it is a on going thing for me. good luck mommy

Hi christie.
MY name is Kehau and I am also a working mother and one of my favorite meal to make is sauteed chicken. It's healthy, fast and the children love it. You can u use one bag Tyson chicken breast. 2 cans chicken broth, salt and pepper to your taste. 2 cloves of garlic minced.Fresh rosemary.

First you sautee chicken breast in olive oil until browned
throw in garlic, onions and salt and pepper. Simmer for 2-5 minutes. add in fresh rosemary and chicken broth. simmer until chicken breast is soft.
That's it.

Recently a couple of friends and I went to "Dinners Done Right" in Vancouver. We pre-made 12 main dish meals for the freezer. When I didn't have time to start from scratch, I pulled one of the meals out of the freezer and dinner was already half made. I don't have a lot of time to put into making dinner either, but I refuse to have my family eat junk. I add salads to the main course a lot--sometimes it's only lettuce with dressing. I use a slow-cooker a lot too for beans, a roast with veggies, etc. When you do have time to cook, make a LOT of what you make, then freeze left-overs for another night.
