We are having a pool party at our house for my daughter's 2nd birthday at the end of the month. It is from 3p-5p. We are going to serve snacks, drinks, and cake, but no meal. We are pretty healthy usually. At other get togethers we have we usually include- juice and sodas, fruit salad, veggies with dip and hummus, crackers and cheese, pretzels, and potato chips. We are having about 40 people total- mainly adults and about 8 kids. I would like to have different things than we always do. Any ideas for food and/or drinks? Thanks!

What can I do next?

We've done freshly made guacamole, bruschetta (cut up tomatoes tiny pieces, basil and garlic to top a slice of bread loaf), roasted garlic (easy to make in oven), put out brie cheese warmed in the microwave for a few seconds and top with honey and almond slivers to have with crackers. Spinach dip, little chicken wings, mini sandwiches filled with tuna salad or turkey and cheese. And for drinks I've made Crystal Light Raspberry Lemonade or Raspberry Tea with a few rspberries or other fruit in it. Peopl were astounded! So easy and refreshing. :)

That's getting a little close to dinner time why not put out some chicken or tuna salad? Its filling and good. Maybe a cold cuts tray? Make fruit smoothies, like a smoothie bar with neat, colorful straws. Have fun! I love bday parties!

Sounds like the menu from my son's pool party/birthday party last summer. We also had cold Chinese sesame noodles (there are tons of recipes both with and without peanut butter), baba ganouj, sliced watermelon, water, milk, margaritas and birthday cake. We skipped the pretzels and chips. This weekend (DS is 5) we are doing the same menu with the addition of mini burgers or chicken skewers and grilled vegetables (party is from 12-2p).

pasta salad
potatoe salad
bowls of m&m's
popsicles if an outdoor party
chicken nuggets for the kids
cookies

2 medium tomatoes, finely chopped (1 1/2 cups)
2 jalapeño chilies, seeded and finely chopped
1 medium onion, chopped (1/2 cup)

How about chicken nuggets or pizza, chips are always good, veggie platter and the other stuff mentioned sounds good. I only reason i suggest pizza or nuggets cause it is around early dinner time and swimming makes everyone really hungry.

You can get a nugget platter from Chickfila or the big box of pizza from pizzahut.
